HERBED ROAST DUCK

Herbed Roast Duck is impressive enough for a holiday dinner party, but is also perfect for a romantic dinner à deux for Valentine's Day. I should know: I've done both! The bird is perfumed with herbs from the inside and garnished with an aromatics-infused, tangy sauce.

6 lb. duck
1 small onion, peeled
2 fresh sage leaves
1 bay leaf, (dried or fresh)
1 sprig of fresh rosemary
1 sprig of fresh marjoram
2 sprigs of fresh thyme
1/4 cup butter, cubed and divided
2 cups chicken broth, hot
1 sprig of fresh chervil, (or use 1/2 tsp. dried)
1 sprig of fresh tarragon, (or use 1/2 tsp. dried)
5 tbsp. balsamic vinegar
3 black peppercorns, crushed
3 egg yolks
2 tbsp. tomato paste
2 tbsp. heavy cream
Salt & pepper, to taste

Steps:

  • Remove neck, giblets, and any glaze/sauce packets from the cavity of the duck, reserving giblets and neck for another use-like making duck stock. If the duck has a pop-up timer, remove it and discard. Carefully rinse duck (avoid splashing!), inside and out, and pat dry with paper towels. Remove any excess fat or fat pads that you can easily get to without damaging the skin. Cover with plastic wrap and keep at room temperature for 30 minutes.
  • Position your oven rack in the lower third of your oven; preheat oven to 500°F. While the oven preheats, sprinkle 1 tsp. each of salt and pepper around the cavity of the duck. Place the onion and the fresh herbs through the thyme sprigs into the cavity. Truss the legs to the tail with kitchen twine. Pin the neck flap to the back with toothpicks and tuck the wing tips under the back (I sometimes break the joint in the wings so that they tuck under more easily). Salt and pepper the outside of the duck liberally.
  • Place the duck, breast side down, onto a rack set in a shallow roasting pan. Add the hot broth to the pan; place the roasting pan in the oven. Lower the oven temperature to 350°F and roast for 45 minutes.
  • Carefully take the roasting pan out of the oven. Turn the duck breast-side up and replace onto rack. Dot the breast with half of the butter cubes and return to the oven. Roast for an additional 45 minutes to an hour (basting with the pan juices once and turning the roasting pan), or until you can until you can easily wiggle the legs in their sockets and the internal temperature of the thickest part of the drumstick reads 165°F. Remove the duck from the oven and place onto a cutting board; allow to rest for at least 15 minutes.
  • While the duck rests, prepare the sauce. Pour the vinegar into a saucepan over low heat with the peppercorns, chervil, and tarragon. Simmer until the vinegar has reduced by half. Strain into a bowl and allow to cool. Mix together the egg yolks, tomato paste, and cream to a heatproof bowl or double boiler. Season with 1/8 tsp. each salt and pepper. Set over barely simmering water; gradually whisk in the remaining butter. Remove sauce from heat and mix in the reduced vinegar. Check for seasoning.
  • Carve the duck and set onto a serving platter: make it pretty, garnishing with any remaining herb sprigs. Serve with sauce spooned over the slices of duck. Enjoy!

This is a massive Oliver family favourite - everyone loves building their own pancakes and roast duck is such a treat. I get my pancakes from a Chinese supermarket or online, but if you can't find them, use iceberg lettuce leaves instead.

1x 2 kg whole duck, giblets reserved
1 red onion
olive oil
Chinese five-spice powder
1 clementine
GARNISHES
4 spring onions
4 small carrots
½ a cucumber
1 fresh red chilli
1 mixed bunch of fresh mint and coriander (30g)
1 lime
18 Chinese pancakes
HOISIN
2 cloves of garlic
5 cm piece of ginger
200 g frozen cranberries
2 tablespoons low-salt soy sauce
2 tablespoons rice wine vinegar
2 tablespoons runny honey
2 clementines

Steps:

  • Get your meat out of the fridge and up to room temperature before you cook it. Preheat the oven to 180oC/350oF/gas 4.
  • Peel the onion, cut into wedges and place in a roasting tray with the giblets and a splash of water.
  • Rub the duck all over with 1 tablespoon of oil, 1 tablespoon of Chinese five-spice and a really good pinch of sea salt.
  • Halve the clementine and place in the cavity, then sit the duck directly on the bars of the oven, with the tray of onions and giblets underneath to catch the tasty fat.
  • Roast for 2 hours, or until the duck is crispy and cooked through, turning the onions occasionally to prevent them from catching.
  • While the duck cooks, prep the garnishes. Trim and halve the spring onions and carrots, then finely slice lengthways, scratch a fork down the cucumber, and finely slice it with the chilli. Pick the herb leaves. Cut the lime into wedges.
  • Remove the cooked duck to a platter, cover, and rest for 30 minutes. Pour all the fat from the tray into a jar, cool, and place in the fridge for tasty cooking another day.
  • Now you've got a choice: you can make a dark hoisin utilizing the bonus flavour from the tray, or you can do it separately in a pan to achieve the vibrant colour you see in the picture - both ways are super-tasty, it's purely personal preference.
  • Using the tray, remove and discard the giblets, leaving the onions behind. Place over a medium heat on the hob, peel, roughly chop and add the garlic and ginger, add 1 teaspoon of five-spice, then stir in the cranberries, picking up all the sticky goodness from the base of the tray.
  • Cook for 2 minutes, then add the soy, rice wine vinegar, honey, clementine juice and a splash of water. Simmer for 5 minutes, or until thick and glossy.
  • Pour into a blender and blitz until smooth, then taste and season to perfection.
  • If you're doing it in a pan, just follow the instructions above, adding a splash of oil to the pan before the garlic, ginger and five-spice.
  • In batches, warm the pancakes in a bamboo steamer over a pan of simmering water for just 1 to 2 minutes.
  • Slice the duck meat, or get two forks and ravage it all off the bone. Serve everything in the middle of the table so everyone builds their own. The crispy duck skin will be an absolute treat dotted on top!

2 (5 to 5 1/2 pounds each) ducks, innards and wing tips removed
6 quarts chicken broth
Kosher salt
1 teaspoon freshly ground black pepper

Steps:

  • Unwrap the ducks and allow them to sit at room temperature for 20 minutes. With a fork, prick the skin without piercing the meat. This will allow the fat to drain off while the ducks cook.
  • Meanwhile, in a very large stock pot which can hold the 2 ducks, heat the chicken broth with 1 tablespoon of kosher salt until it boils. Add the ducks very carefully and bring the stock back to a boil. If there isn't enough stock to cover the ducks, add the hottest tap water to cover. If the ducks float to the top, place a plate on top to keep them immersed. When the stock comes back to a boil, lower the heat and simmer the ducks in the stock for 45 minutes.
  • When the ducks are finished simmering, skim off enough duck fat from the top of the stock to pour a film on the bottom of a 14 by 18 by 3-inch roasting pan. This will keep the ducks from sticking when they roast. Carefully take the ducks out of the stock, holding them over the pot to drain. Place them in the roasting pan, pat the skin dry with paper towels, and sprinkle with 1 teaspoon of salt and the pepper. If you have time, allow the ducks to sit at room temperature for 30 minutes to allow the skin to dry.
  • Meanwhile, preheat the oven to 500 degrees F. (Be sure your oven is very clean or it will smoke!) Roast the ducks for 30 minutes. Remove from the oven and allow them to rest, covered with aluminum foil, for 20 minutes. Serve warm.

A golden-skinned roasted duck is a festive main course for any special meal. In this recipe, the bird is doused with boiling water before being scored all over. The boiling water helps pull the skin taut, making it easier to score in a crosshatch pattern. That, in turn, allows the fat to render out as everything roasts. The result is a perfectly cooked duck with pink, juicy meat and burnished, crunchy skin. Serve the bird as is, or with some kind of sauce - either sweet or pungent - such as cranberry sauce, salsa verde or a spicy soy dipping sauce. And save the duck fat at the bottom of the pan. It will keep for at least three months in the refrigerator and is excellent on roasted vegetables, especially potatoes.

1 (5- to 6-pound) whole duck
1 tablespoon plus 1 teaspoon kosher salt (Diamond Crystal)
2 teaspoons freshly ground black pepper
2 large garlic cloves, finely grated, passed through a garlic press or finely minced
1 tablespoon chopped thyme or rosemary leaves, or a combination, plus more sprigs for the cavity
1 tablespoon finely grated lemon or orange zest, or a combination
1 1/2 teaspoons ground coriander or a spice mix, such as garam masala or baharat(optional)

Steps:

  • Bring a full kettle or medium pot of water to a boil (at least 2 quarts).
  • Meanwhile, remove giblets and neck from the duck cavity and reserve for another use. Trim any excess fat from around the duck cavity and the neck. Place duck, breast side up, on a rack in the sink. Pour half of the boiling water all over the top of the duck to tighten the skin. Flip the bird and pour remaining boiling water over the back.
  • Once the duck is cool enough to handle, using the tip of a very sharp paring knife, prick duck skin all over to help release the fat, especially where the skin is thickest, and be careful not to pierce the meat. It can be helpful to hold the knife nearly parallel to the bird. After piercing the skin, use the knife blade to score the duck breast in a crosshatch pattern (making deep cuts into the skin only, and not into the breast meat). Flip the bird and score the back as well (you don't need to prick the back). You may need to sharpen your knife along the way, as it's much easier to make clean cuts into the skin with a sharp knife. Using a clean kitchen towel or paper towels, thoroughly pat duck dry, including inside the cavity.
  • Season the duck all over, including cavity, with salt and pepper. In a small bowl, combine garlic, chopped herbs, citrus zest and coriander, if using, and make a paste. Rub garlic paste all over duck, inside and out. Place duck, breast side up, on rack in a roasting pan, stuff cavity with herb sprigs, and refrigerate, uncovered, for at least 4 hours and up to 24 hours.
  • When it's time to cook the bird, heat the oven to 450 degrees. Roast for 30 minutes. Remove the pan from the oven and carefully prick duck skin all over the top of the bird using a sharp paring knife. (You don't need to prick the back of the duck.) Reduce the oven temperature to 350 degrees and continue roasting until skin is golden brown and crispy, and the internal temperature at thickest part of the thigh reads 165 degrees on an instant-read thermometer, about 1 hour to 1 hour 45 minutes longer. Using tongs, gently tip duck to drain any liquid from the cavity. Transfer bird to cutting board to rest for at least 10 minutes. Carve and serve.

1 tablespoon dried rosemary
1 tablespoon dried sage
1 tablespoon crushed juniper berries
1 teaspoon nutmeg
5 bay leaves
1 5- to 7-pound duck, rinsed and dried
Salt and freshly ground black pepper
1 cup dry white wine
Sweet watermelon-rind pickles

Steps:

  • In a small bowl, combine rosemary, sage, juniper berries, nutmeg and bay leaves. Crush herbs together until mixed and broken into small pieces.
  • Sprinkle duck with salt and pepper to taste. Place on a platter and rub well, inside and out, with herb mixture. Cover and refrigerate for 48 hours.
  • Heat oven to 350 degrees. Roast duck for 20 minutes a pound (2 hours for a 6-pound duck). Transfer duck to a platter, cover and keep warm. Remove any burned pieces from roasting pan, and place pan over a medium flame. Add wine, and stir to deglaze pan. Pour wine sauce into a heat-proof measuring cup and allow it to settle, then pour off and discard most of the fat.
  • To serve, cut duck into serving pieces. Arrange on a warm platter, and pour wine sauce on top. Serve hot, with watermelon-rind pickles passed separately.

Steps:

  • Line bottom of oven with foil to catch any spatters. Preheat oven to 425 degrees with rack in second-lowest position. Rinse duck in cold water; pat dry with paper towels. Trim excess fat and skin from neck and body cavity. Clip wing tips. Place wing tips and neck in a large roasting pan fitted with a rack.
  • Prick surface of skin all over with a paring knife. Score skin of breast in a crosshatch pattern. Season inside and outside of duck with pepper and 1 tablespoon plus 1 teaspoon salt.
  • Place duck, breast side up, on rack in pan. Roast for 50 minutes.
  • Remove pan from oven. Set duck on rack in a sink or over a towel to catch drips. Spoon off excess fat from pan; strain, and reserve 1/4 cup if making roasted vegetables. Tilt duck to drain, pouring juices from cavity into roasting pan. Return duck, breast side down, on rack to pan. Roast for 50 minutes.
  • Flip duck, breast side up, and roast until duck registers 165 degrees on an instant-read thermometer, about 50 minutes more. Let stand for 15 minutes before carving. Spoon off fat from roasting pan (reserve if desired). Carefully tilt duck, and pour accumulated juices from cavity into pan. Reserve neck and wing tips in pan with juices if making pan sauce. Serve duck with roasted vegetables, and drizzle with pan sauce.

EASY ROAST DUCK

Duck is so difficult to roast badly that all experienced cooks seem to claim their procedure is the best. Having tried many methods, I can say that the results are all about the same. So I chose the one presented here, which is the easiest way to guarantee a succulent but beautifully browned bird.

1 4- to 5-pound duck
Freshly ground black pepper
1/4 cup soy sauce, more or less

Steps:

  • Preheat oven to 450 degrees. Remove giblets and neck from duck cavity and discard or reserve for another use. Cut off excess fat from duck cavity.
  • Place duck, breast side down (wings up), on a rack in a roasting pan; add water to come just below the rack. Sprinkle duck with pepper and brush with a little soy sauce.
  • Roast 30 minutes, undisturbed. Prick the back all over with point of a sharp knife, then flip bird onto its back. Sprinkle with pepper and brush with soy sauce again. Add a little more water to the pan if the juices are spattering (carefully--you don't want to get water on the duck).
  • Roast 20 minutes, then prick the breast all over , and brush with soy sauce. Roast 10 minutes; brush with soy sauce. Roast 5 or 10 minutes more if necessary, or until duck is a glorious brown all over and an instant-read thermometer inserted into the thigh measures at least 155 degrees. Let rest 5 minutes before carving and serving.
