FUDGE BROWNIES (KITCHENAID MIXER)
From KitchenAid Stand Mixer Cookbook. Recipe says it makes 36 brownies, but I must cut big brownies -- made about 25 or so.

Steps:
- Melt 1/2 cup margarine/butter and chocolate in small saucepan over low heat; set aside to cool.
- Place remaining 1/2 cup margarine/butter, sugar and vanilla in mixer bowl.
- Attach bowl and flat beater to mixer.
- Turn to Speed 2 and mix about 30 seconds.
- Turn to Speed 6 and beat about 2 minutes.
- Turn to Speed 4.
- Add eggs, one at a time, beating about 15 seconds after each addition.
- Stop and scrape bowl.
- Add cooled chocolate mixture.
- Turn to Speed 2 and mix about 30 seconds.
- Stop and scrape bowl.
- Add all remaining ingredients (flour, salt, nuts).
- Turn to Stir Speed and mix until well blended, about 30 seconds.
- Pour into greased and floured 13x9x2-inch baking pan.
- Bake at 350 degrees for 45 minutes.
- Cool in pan on wire rack and cut.
DIVINITY FUDGE (KITCHENAID)
This is a divinity fudge recipe that I use with my Kitchenaid mixer. It makes a nice divinity fudge recipe that mimics my friend's grandmother's very closely. I use a candy thermometer when making it. I don't put the nuts in it. My friend's grandmother used to colour it pink or green with food colouring.

Steps:
- Place sugar, corn syrup and water in heavy sauce pan. Cook and stir over medium heat until hard ball stage (248oF). Remove from heat and let stand until temperature drops to 220oF. Do not stir.
- Place egg whites in bowl of electric mixer. Turn to high and whip until soft peaks form, about 1 minute. Gradually add syrup mixture in fine stream and white about 2 ½ minutes longer.
- Reduce speed to medium-low. Add almond extract and whip until mixture starts to become dry (20-25 minutes). Turn to low and add walnuts (if desired), mixing just until blended.

- Melt 1 stick (4 oz) of the butter and chocolate in small saucepan over low heat or in the top of a double boiler; set aside to cool.
- Using the the flat blade, beat on mixer speed 2 for about 30 seconds. Scrape side of bowl and increase speed to 6 and beat for 2 minutes. If the butter was still pretty cold, you might want to mix for another 2 minutes.
