SPINACH PASTA SALAD

Steps:
- Cook macaroni according to package directions; drain and cool. In a large bowl, combine macaroni, spinach, mushrooms and onion; set aside. In a medium skillet, cook bacon until crisp. Remove with a slotted spoon to paper towels; discard all but 2 tablespoons of drippings. In a small bowl, combine cornstarch, sugar, salt and pepper; whisk into drippings. stir in mayonnaise; gradually mix in water and vinegar. Bring to a boil over medium heat, stirring constantly; boil for 1 minute. Pour over salad and toss well. Sprinkle with bacon. Serve immediately or refrigerate.

Steps:
- Bring a large pot of lightly salted water to a boil. Add the penne pasta, and cook until tender, 8 to 10 minutes.
- Meanwhile, heat 1 tablespoon of olive oil in a skillet over medium heat. Place bacon in the skillet, and cook until browned and crisp. Add garlic, and cook for about 1 minute. Stir in the tomatoes, and cook until heated through.
- Place the spinach into a colander, and drain the hot pasta over it so it is wilted. Transfer to a large serving bowl, and toss with the remaining olive oil, and the bacon and tomato mixture.

- Coat a large fry pan with cooking spray.
- Heat and add the bacon, garlic and shallots.
- Cook, stirring for 2-3 minutes.
- To the pan, add the pasta spinach and cook until the spinach is just wilted.
- Remove from the heat.
- Stir in the cheese and dressing.
- Serve garnished with the lemon wedges if desired.
- This is good for lunch cold as well if you have leftovers.

- Drain, reserving 1/2 cup cooking water.
- In a large skillet over medium heat, cook bacon until crisp.
- Remove and drain on paper towels.
- Drain drippings but do not clean pan.
- In same pan over medium heat, heat olive oil 1 minute.
- Increase heat to medium-high and add spinach, wine and reserved cooking water.
- Cook and stir until heated through.
