This cake is also called "Pig Pickin' Cake or Pig Lickin' Cake" in the South. An easy summertime dessert to serve family and guests.

1 (15.25 ounce) Duncan Hines Classic Butter Golden Cake Mix
3/4 cup cooking oil (I use Canola oil)
4 eggs
1 (15 ounce) can mandarin oranges, undrained (Save several of the orange sections to decorate the top of your cake)
Frosting Ingredients
1 (3.4 ounce) box instant vanilla pudding
2 (8 ounce) cans crushed pineapple, undrained
1 (8 ounce) container Cool Whip, thawed

Steps:

  • You DO NOT make the cake according to the directions on the cake mix. You use the directions here.
  • In a large mixing bowl mix all the cake ingredients listed above until well blended. Spray 3 (9 inch) round cake pans with cooking spray. Fill each cake pan with about 2 cups of cake mix. Bake in preheated 350 degree oven for 20 to 25 minutes checking for doneness as ovens vary. Your layers will be thin. Remove from oven and let cool.

1 (18.25 ounce) package yellow cake mix
4 eggs
1 cup vegetable oil
1 (11 ounce) can mandarin orange segments
1 (8 ounce) container frozen whipped topping, thawed
1 (20 ounce) can crushed pineapple with juice
1 (3.5 ounce) package instant vanilla pudding mix

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 9x13 inch pan.
  • In a large bowl, combine cake mix, eggs, oil and mandarin oranges with juice. Beat until smooth. Pour batter into prepared pan.
  • Bake in the preheated oven for 35 to 40 minutes, or until a toothpick inserted into the center of the cake comes out clean. Allow to cool.
  • To make the topping: In a large bowl, beat together whipped topping, pineapple with juice and dry pudding mix until blended. Spread on cake.

Frosting:
1 box Butter Recipe yellow cake mix (Duncan Hines recommended)
1/3 cup vegetable or canola oil
3 large eggs
1 (11 or 15 oz) can mandarin oranges, undrained
1/2 teaspoon orange extract, optional
1 large box vanilla instant pudding mix
1 (20 oz) can crushed pineapple (in juice), undrained
1 (12 oz) container Cool Whip
2-3 mandarin oranges for garnish, if desired

Steps:

  • Preheat oven to 350 F. Butter and flour three 8 or 9-inch round cake pans, or line with parchment paper. Set aside. In a large bowl, using a hand mixer beat the cake mix, oil, eggs, and orange extract just until blended. Reserve 2-3 of the oranges for garnish if desired. Add the remaining oranges along with the liquid to the cake batter, beating on Low speed for a few seconds then beating on Medium speed for 2 minutes. Divide the batter evenly into the three prepared cake pans. Bake for 20-25 minutes, or until a toothpick inserted in the center comes out clean. Cool in the pans for 10 minutes, then turn out onto a wire rack to cool completely. Make the Frosting: Blend together the dry pudding mix and the pineapple with the juice; let stand for 5 minutes to thicken. With a spatula, gently fold in the Cool Whip. Refrigerate the mixture until the cake layers are completely cool. Spread the frosting in between the layers, then frost the sides and top of the cake. Garnish the center of the cake with the reserved orange segments, if desired. Cover and refrigerate for several hours or overnight before serving.

I have seen this recipe out there so many times and I have to admit it is the best cake I have ever eaten. It is wonderful the next day. I always make mine the day before serving.

1 box duncan hines butter recipe cake mix (no pudding)
1, 11 oz. can(s) mandarin orange (juice and all)
3 eggs
3/4 c oil
1, 3oz. box small box vanilla pudding
1 large box cool whip
1 medium can crushed pineapple

Steps:

  • 1. Preheat oven 350 and grease two cake pans. Add all ingredients for cake and blend. Pour into pans and bake. Bake at 350 degrees according to the box directions for the cake. For icing, combine the cool whip, pineapple and pudding powder. Note: I put as much juice from pineapple to give it a good consistency. Not runney. Stir gently. After your cakes cool, ice between each later and then the whole cake. There's a lot of icing, so be generous. Cool cake in fridge before serving. If desired use decorating tool to decorate top with designs. Then sprinkle on coconut.(optional)

  • Pour into prepared pans and bake until toothpick inserted in center comes out clean, 25-30 minutes, slightly less if you use three pans. If using round pans, allow to cool for ten minutes before turning out to cool completely. If using 9x13, allow to cool completely in pan.
  • For frosting, place pineapple (with juice) and pudding mix in a mixing bowl. Beat until just mixed. Add in whipped topping and beat on low speed for about one minute, until blended in. Frost cake.

  • Preheat oven to 350°F. Spray 9x5-inch loaf pan with baking spray. Cake will not fit in a smaller pan so if your loaf pan is not 9x5-inch, bake in a Bundt pan instead.
  • Beat cake mix, water, oil and eggs in large bowl with a handheld electric mixer on low speed 30 seconds. Beat on medium speed for a full 4 minutes.
  • Pour into pan. Tap pan on counter a few times to release air bubbles. Bake in center of oven 45 to 50 minutes for loaf pan or 35 to 40 minutes for Bundt pan, until toothpick inserted in center comes out clean. Do not open oven door while baking, it may cause the cake to sink in the center. Cool on wire rack 20 minutes, remove from pan and cool completely.
  • ICING: Whisk together confectioners’ sugar, orange juice and butter in small bowl. Pour over cooled cake. Let stand 10 minutes, until glaze is hardened. Slice and serve.
