EASY FRUIT-JUICE GELATIN



Easy Fruit-Juice Gelatin image

Skip artificially flavored gelatin in favor of this super-simple homemade version using any fruit juice you like.

Number Of Ingredients 2

4 cups fresh or premade fruit juice (aside from mango, papaya, and pineapple, any kind -- pulpy or not -- will work)
2 envelopes (1/4 ounce each) unflavored gelatin

Steps:

  • Place 1 cup juice in a glass bowl. Sprinkle with gelatin. Meanwhile, bring remaining 3 cups juice to a boil. Pour boiling juice over gelatin-juice mixture, and stir until gelatin dissolves completely. Pour into 5-ounce juice glasses, which make great single servings. Refrigerate until firm, about 4 hours.

1 pkg. (0.3 oz.) JELL-O Strawberry Flavor Sugar Free Gelatin
1 cup cold orange juice

Steps:

  • Add boiling water to gelatin mix in medium bowl; stir 2 min. until completely dissolved. Stir in orange juice.
  • Pour into 4 dessert dishes.
  • Refrigerate 2 hours or until firm.

1 1/2 cups boiling water
1 (6 ounce) package strawberry gelatin
ice cube
1 cup cold orange juice
1 (8 3/4 ounce) can fruit cocktail, drained
1 (8 ounce) container Cool Whip Topping, thawed,divided

Steps:

  • In large bowl, add boiling water to gelatin and stir least 2 minutes until gelatin is completely dissolved.
  • Add enough ice to juice to measure 1-1/2 cups.
  • Add juice and ice to gelatin.
  • Refrigerate until slightly thickened (about 30 minutes).
  • Remove 1-1/2 cups of gelatin to a small bowl; stir in fruit cocktail.
  • Whisk 1/2 (4 oz.) of the COOL Whip into remaining gelatin until well blended.
  • Pour into 8-inch square dish.
  • Refrigerate until set but not firm (about 10 minutes).
  • Carefully spoon fruit cocktail mixture over bottom layer.
  • Refrigerate until firm (approximately 3 hours) Cut into squares.
  • Use remaining whipped topping for garnish.

1 cup cold white grape juice
1 can (8.25 oz.) cherry mixed fruit, drained
1 tub (8 oz.) COOL WHIP Whipped Topping, thawed, divided

Steps:

  • Add boiling water to gelatin mix in large bowl; stir 2 min. until completely dissolved. Add enough ice to juice to measure 1-1/2 cups. Stir into gelatin. Refrigerate 30 min. or until slightly thickened. Remove 1-1/2 cups gelatin; place in medium bowl. Stir in fruit; set aside.
  • Stir half the COOL WHIP into remaining gelatin with whisk until blended. Pour into 8-inch square dish. Refrigerate 10 min. or until set but not firm. Carefully top with fruited gelatin.
  • Refrigerate 3 hours or until firm. Serve topped with remaining COOL WHIP.

1 cup cold fruit juice
3 cups fruit juice, heated to boiling
2 tablespoons sugar (optional) or 2 tablespoons honey (optional)

Steps:

  • Sprinkle gelatin over cold juice in large bowl. Let stand one minute.
  • Add hot juice and stir until gelatin completely dissolves, about 5 minutes.
  • Stir in sugar or honey if desired.
  • Pour into 13x9x2 inch pan.
  • Refrigerate until firm, about 3 hours.
  • Cut into 1 inch squares and serve.

3 (1/4 ounce) packets unflavored gelatin
1 (3 ounce) package Jello gelatin (4 serving size, cherry or raspberry)
1 cup water, heated to boiling
1 cup cold 100% juice fruit punch
3 cups fruit punch, heated to boiling

Steps:

  • Stir flavored gelatin into 1 cup boiling water until sugar is dissolved.
  • In large bowl, sprinkle gelatin over cold juice and let stand 1 minute.
  • Add hot juice and flavored gelatin mix into cold juice mixture and stir until gelatin is completely dissolved.
  • Pour into 13x9x2-inch pan and refrigerate until firm (3-4 hours).
  • Cut into squares to serve.

1-1/2 cups lite coconut milk
1 pkg. (6 oz.) JELL-O Cherry Flavor Gelatin
ice cubes
1 tub (8 oz.) COOL WHIP Whipped Topping, thawed, divided

Steps:

  • Drain pineapple, reserving juice. Meanwhile, heat coconut milk to boil in small saucepan. Stir boiling milk into dry gelatin mix in large bowl at least 2 min. until completely dissolved. Add enough ice to juice to measure 1-1/2 cups. Stir into gelatin; stir until slightly thickened. Remove any unmelted ice. Remove 1-1/2 cups of the gelatin; place in medium bowl. Stir in pineapple.
  • Refrigerate remaining gelatin 15 min. or until slightly thickened. Stir in COOL WHIP with whisk until blended. Pour into 8-inch square pan. Refrigerate 10 min. or until set but not firm. Carefully spoon reserved gelatin over creamy layer in pan.
