EASY FRUIT-JUICE GELATIN
Skip artificially flavored gelatin in favor of this super-simple homemade version using any fruit juice you like.

- Place 1 cup juice in a glass bowl. Sprinkle with gelatin. Meanwhile, bring remaining 3 cups juice to a boil. Pour boiling juice over gelatin-juice mixture, and stir until gelatin dissolves completely. Pour into 5-ounce juice glasses, which make great single servings. Refrigerate until firm, about 4 hours.

Steps:
- In large bowl, add boiling water to gelatin and stir least 2 minutes until gelatin is completely dissolved.
- Add enough ice to juice to measure 1-1/2 cups.
- Add juice and ice to gelatin.
- Refrigerate until slightly thickened (about 30 minutes).
- Remove 1-1/2 cups of gelatin to a small bowl; stir in fruit cocktail.
- Whisk 1/2 (4 oz.) of the COOL Whip into remaining gelatin until well blended.
- Pour into 8-inch square dish.
- Refrigerate until set but not firm (about 10 minutes).
- Carefully spoon fruit cocktail mixture over bottom layer.
- Refrigerate until firm (approximately 3 hours) Cut into squares.
- Use remaining whipped topping for garnish.

- Drain pineapple, reserving juice. Meanwhile, heat coconut milk to boil in small saucepan. Stir boiling milk into dry gelatin mix in large bowl at least 2 min. until completely dissolved. Add enough ice to juice to measure 1-1/2 cups. Stir into gelatin; stir until slightly thickened. Remove any unmelted ice. Remove 1-1/2 cups of the gelatin; place in medium bowl. Stir in pineapple.
- Refrigerate remaining gelatin 15 min. or until slightly thickened. Stir in COOL WHIP with whisk until blended. Pour into 8-inch square pan. Refrigerate 10 min. or until set but not firm. Carefully spoon reserved gelatin over creamy layer in pan.
