These chocolate oat bars are one of my favorite go-to snacks. I love that I usually have all the items on hand and can whip them up quickly. —John Kleckner, Muscoda, Wisconsin

Number Of Ingredients 11

1 cup plus 2 tablespoons butter, softened, divided
2 cups packed brown sugar
2 large eggs, room temperature
4 teaspoons vanilla extract, divided
3 cups old-fashioned oats
2-1/2 cups all-purpose flour
3/4 teaspoon baking soda
3/4 teaspoon salt, divided
1 can (14 ounces) sweetened condensed milk
2 cups semisweet chocolate chips
1 cup chopped pecans

Steps:

  • In a large bowl, cream 1 cup butter and brown sugar until light and fluffy, 5-7 minutes. Beat in eggs and 2 teaspoons vanilla. Combine the oats, flour, baking soda and 1/2 teaspoon salt; gradually add to creamed mixture and mix well. Set aside., In a large heavy saucepan over low heat, combine the condensed milk, chocolate chips and remaining butter and salt. Cook and stir until smooth. Add the nuts and remaining vanilla. Press 4 cups oat mixture into an ungreased 13x9-in. baking pan; spread with chocolate mixture. Sprinkle with remaining oat mixture., Bake at 350° for 30-35 minutes. Cool completely on a wire rack. Cut into bars.

Chocolate Covered Oatmeal Bars! Chewy salty-sweet oat bars topped with a fudgy layer of fruity chocolate. A favorite easy healthy snack recipe!

2 cup (200g) rolled oats
1 cup (120g) oat flour
3/4 cup (110g) coconut sugar
1/2 tsp salt
1 tsp baking soda
3 tbsp ground flax + 6 tbsp water
1 cup (240g) nut or seed butter (I used almond butter)
1 cup (240g) unsweetened applesauce
1 tsp vanilla extract
2 ripe bananas (or frozen and defrosted)
1/4 cup (20g) cacao powder

Steps:

  • Preheat the oven to 350F.
  • Stir together the flax and water to make the flax egg. Set aside to gel.
  • In a large mixing bowl, stir together the oats, oat flour, coconut sugar, salt, and baking soda.
  • Add the applesauce, almond butter, flax eggs, and vanilla.
  • Mix to combine.
  • Spread into an 8×8″ square baking pan that has bee sprayed with nonstick spray or coconut oil.
  • Blend the banana and cocoa powder.
  • Spoon on top of the oatmeal bars and spread/swirl to cover. Sprinkle with chocolate chips if desired.
  • Bake for 25-30 minutes at 350F.
  • Remove from the oven and cool completely before slicing (or they will be too crumbly).
  • Enjoy! Keep leftovers in an airtight container in the fridge for up to a week.

I baked about 100 dozen cookies for the holidays and these were everyone's favorite!! These bars can be frozen, just thaw 10 minutes before serving.

1 cup butter
½ cup packed brown sugar
1 teaspoon vanilla extract
3 cups quick cooking oats
1 cup semisweet chocolate chips
½ cup peanut butter

Steps:

  • Grease a 9x9 inch square pan.
  • Melt butter in large saucepan over medium heat. Stir in brown sugar and vanilla. Mix in the oats. Cook over low heat 2 to 3 minutes, or until ingredients are well blended. Press half of mixture into the bottom of the prepared pan. Reserve the other half for topping.
  • Meanwhile, melt chocolate chips and peanut butter in a small heavy saucepan over low heat, stirring frequently until smooth. Pour the chocolate mixture over the crust in the pan, and spread evenly with a knife or the back of a spoon.
  • Crumble the remaining oat mixture over the chocolate layer, pressing in gently. Cover, and refrigerate 2 to 3 hours or overnight. Bring to room temperature before cutting into bars.

1/2 cup old-fashioned or quick-cooking oats

1/2 teaspoon baking soda
1/4 teaspoon salt
3/4 cup packed brown sugar
1/4 cup canola or soybean oil
1 teaspoon vanilla
1/4 cup fat-free cholesterol-free egg product or 1 egg
2 tablespoons old-fashioned or quick-cooking oats
2 teaspoons butter, softened

Steps:

  • Heat chocolate chips and milk in 1-quart heavy saucepan over low heat, stirring frequently, until chocolate is melted and mixture is smooth; set aside. Heat oven to 350°. Spray square pan, 8x8x2 or 9x9x2 inches, with cooking spray.
  • Mix flour, 1/2 cup oats, the baking powder, baking soda and salt in large bowl; set aside. Stir brown sugar, oil, vanilla and egg product in medium bowl with fork until smooth; stir into flour mixture until blended. Reserve 1/2 cup dough in small bowl for topping.
  • Pat remaining dough in pan (spray fingers with cooking spray or lightly flour if dough is sticky). Spread chocolate mixture over dough. Add 2 tablespoons oats and the butter to reserved dough; mix with pastry blender or fork until crumbly. Drop small spoonfuls of oat mixture evenly over chocolate mixture.
  • Bake 20 to 25 minutes or until top is golden and firm. Cool completely, about 1 1/2 hours. For bars, cut into 4 rows by 4 rows.

⅔ cup packed brown sugar
½ cup butter
1 ¼ cups whole wheat flour
½ cup unbleached all-purpose flour
½ teaspoon salt
½ teaspoon ground cinnamon
¼ teaspoon baking soda
¼ teaspoon ground allspice
2 cups rolled oats
1 cup sliced fresh strawberries
1 cup fresh blueberries

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C). Coat a 10x14-inch baking dish with cooking spray.
  • Combine brown sugar and butter in a large bowl; beat with an electric mixer until smooth and creamy.
  • Mix together whole wheat flour, all-purpose flour, salt, cinnamon, baking soda, and allspice in a separate bowl. Gradually pour flour mixture into the butter mixture; blend well. Stir in oats and mix with a wooden spoon until incorporated. Press 1/2 of the oat batter firmly into the bottom of the prepared baking dish.
  • Bake in the preheated oven for 10 minutes. Spread strawberries and blueberries over the crust and sprinkle with remaining oat batter. Press slightly to flatten batter and fruit. Bake until edges are golden brown, 20 to 25 minutes.
  • Remove from the oven and let cool completely in the pan. Cut into 24 bars.
