My family loves these rich, sweet bars. The chocolate and raspberry jam go together so well. I make a lot of cookies and bars, but these special treats are my favorite. They're so pretty served on a platter. -Kathy Smedstad, Silverton, Oregon

1 cup all-purpose flour
1/4 cup confectioners' sugar
1/4 cup butter, cubed
FILLING:
1/2 cup seedless raspberry jam
4 ounces cream cheese, softened
2 tablespoons 2% milk
1 cup white baking chips, melted
GLAZE:
3/4 cup semisweet chocolate chips
2 tablespoons shortening

Steps:

  • In a small bowl, combine flour and confectioners' sugar; cut in butter until crumbly. Press into an ungreased 9-in. square baking pan. Bake at 375° for 15-18 minutes or until browned. Spread jam over warm crust. , In a small bowl, beat cream cheese and milk until smooth. Add white chips; beat until smooth. Spread carefully over jam layer. Cool completely. Refrigerate for 1 hour or until set. , For glaze, melt chocolate chips and shortening in a microwave; stir until smooth. Spread over filling. Refrigerate for 10 minutes. Cut into bars; chill 1 hour longer or until set. Store in refrigerator.

We really liked this recipe, especially the yummy crust. Feel free to get creative and change the flavor of the jam to suit your preferences.

1 c flour
1/4 c powdered sugar
1/2 c butter (no substitutions)
1/2 c seedless raspberry jam
3 oz cream cheese, softened
2 Tbsp milk
1 c white chocolate chips
2 oz semi-sweet baking chocolate squares
1 Tbsp shortening

Steps:

  • 1. Preheat oven to 375 degrees. In a bowl combine flour and powdered sugar. Cut in butter; mix well. Press mixture into a 9 inch square baking dish. Bake for 15-17 minutes or until lightly brown. Allow to cool completely.
  • 2. Spread jam evenly over cooled crust.
  • 3. In a separate bowl, beat cream cheese and milk together until smooth; set aside.
  • 4. In a small saucepan over low heat, melt the white chocolate chips and add to the cream cheese mixture; beat until smooth. Spread evenly over raspberry mixture. Refrigerate for at least 2 hours.
  • 5. Cut chocolate squares into small pieces and melt with shortening in a small saucepan over low heat, stirring constantly. Spread over white chocolate layer. Cool completely before cutting into small squares. Store in the fridge.

1-1/2 cups all-purpose flour
1-1/2 cups quick-cooking or old-fashioned oats
1/2 cup sugar
1/2 cup packed brown sugar
1/4 teaspoon salt
1 cup cold butter, cubed
3/4 cup seedless raspberry jam
1 package (11-1/2 ounces) semisweet chocolate chunks
1/4 cup chopped walnuts

Steps:

  • In a large bowl, combine the flour, oats, sugars and salt. Cut in butter until mixture resembles coarse crumbs. Set aside 1 cup for topping; press remaining crumb mixture into a greased 9-in. square baking pan. Spread with jam; sprinkle with chocolate chunks., Combine walnuts and reserved crumb mixture; sprinkle over the top. Bake at 375° for 30-35 minutes or until lightly browned and bubbly. Cool on a wire rack. Cut into squares.

1 cup butter, softened
3/4 cup sugar
3/4 cup packed brown sugar
2 large eggs, room temperature
3/4 cup semisweet chocolate chips, melted and cooled
1/2 cup raspberries, pureed
3 cups all-purpose flour
3/4 teaspoon baking soda
3/4 teaspoon salt
1 cup white baking chips

Steps:

  • In a large bowl, cream butter and sugars until light and fluffy. Add eggs, one at a time, beating well after each addition. Beat in melted chocolate and raspberries. Combine the flour, baking soda and salt; gradually add to creamed mixture. Stir in chips., Drop by teaspoonfuls 2 in. apart onto ungreased baking sheets. Bake at 375° for 10-12 minutes or until edges begin to brown. Remove to wire racks to cool.

When it comes to choosing which desserts I'm going to add to my arsenal of recipes, I almost always stick to the unfussy classics -- cakes, cookies, bars, and, in this case, cheesecake cookie bars! This recipe blends the dense, pan-baked goodness of a bar with layers of cheesecake and cookie dough that are dotted with white chocolate and fresh raspberries. There is no bake-off or bake sale that you can't win with these.

1 cup (2 sticks/225 g) unsalted butter, at room temperature
1/2 cup (110 g) brown sugar
1 1/2 cups (300 g) granulated sugar
2 large eggs
2 1/2 teaspoons vanilla extract
2 1/2 cups (315 g) all-purpose flour
1 teaspoon kosher salt
1 teaspoon baking soda
1 teaspoon baking powder
1 1/4 cups (205 g) white chocolate chips
1 cup (125 g) fresh raspberries
8 ounces (225 g) cream cheese, at room temperature
1/2 cup (100 g) granulated sugar
1 large egg
1 teaspoon vanilla extract

Steps:

  • To make the cookie layer: In a stand mixer, cream together the butter, brown sugar, and granulated sugar for 3 minutes, until smooth. Add the eggs and vanilla and continue to mix, scraping down the sides of the bowl. Add the flour, salt, baking soda, and baking powder and mix on low speed until the ingredients are incorporated. Fold in 1 cup (165 g) of the white chocolate chips.
  • To make the cheesecake layer: In a food processor, combine the cream cheese, granulated sugar, egg, and vanilla and mix for 2 minutes, scraping down the sides as needed, until the ingredients are evenly combined and the mixture is very smooth.
  • Preheat the oven to 350 degrees F (175 degrees C). Line a 9 by 13-inch (23 by 33-cm) baking pan with parchment paper with a little hanging over the sides. Press slightly more than half of the cookie dough mixture into the bottom of the pan to make one even layer. Spread the cheesecake mixture on top of the cookie dough. Crumble the remaining cookie dough and sprinkle it on top of the cheesecake mixture, then sprinkle with the remaining 1/4 cup (40 g) white chocolate chips and the raspberries.
  • Place in the oven and bake for 40 to 45 minutes, until the cookie dough is golden brown. Remove the bars from the oven and let cool for 30 minutes. Transfer them to the fridge for at least 2 hours, or overnight if time allows (don?t skip this part). Cut into bars and serve.

1 egg
1 tablespoon unsalted butter, softened
1 (12 ounce) jar seedless raspberry jam
1 (12 ounce) package vanilla chips (or white chocolate chips)
1 (8 ounce) package cream cheese, softened
2 tablespoons whole milk
1/2 cup semi-sweet chocolate chips
2 tablespoons unsalted butter

Steps:

  • Prehead oven to 350 degrees F, & grease a 15"x10" glass baking dish.
  • In large bowl, combine cake mix, egg & butter until crumbly, then press crumb mixture into bottom of baking dish.
  • Bake 8-10 minutes or until crust appears puffy & dry, then cool on wire rack.
  • When crust is cool, spread jam over crust.
  • In microwave or heavy saucepan, melt vanilla chips, then stir until smooth.
  • In large mixing bowl, beat cream cheese & milk until smooth.
  • Add melted vanilla chips & mix well.
  • CAREFULLY spread cream cheese mixture over jam.
  • Melt chocolate chips & butter, then stir until smooth.
  • Drizzle or pipe over cream cheese layer.
  • Refrigerate before cutting into SMALL pieces.

Sandwiched between raspberry sherbet and vanilla ice cream are crushed fudge creme cookies for a very sweet no-bake dessert.

3 cups raspberry sherbet, softened
18 fudge-covered creme-filled chocolate sandwich cookie, divided
3 cups vanilla ice cream, softened
3/4 cup thawed frozen whipped topping
12 fresh raspberries

Steps:

  • Spray 8-inch square pan with cooking spray; line with plastic wrap. Spread sherbet onto bottom of pan. Freeze 30 min.
  • Chop 12 cookies coarsely; press gently into top of dessert. Cover with ice cream. Freeze 3 hours or until firm.
  • Unmold dessert onto plate; remove plastic wrap. Cut remaining cookies in half. Use to garnish dessert with the whipped topping and raspberries.
