- Trim fat from pork chops. Place chops in a 3-1/2- or 4-quart slow cooker. Sprinkle with thyme. Add dried fruit and sweet pepper to slow cooker. Pour barbecue sauce over mixture in cooker.
- Cover and cook on low-heat setting for 4 to 4-1/2 hours or on high-heat setting for 2 to 2-1/2 hours.
- Transfer chops to a serving platter. Skim fat from sauce. Spoon some of the sauce over chops; pass remaining sauce. If desired, garnish with fresh thyme sprigs.

- In a small bowl, combine the barbecue sauce, preserves, corn syrup, mustard and cloves; set aside., Sprinkle pork chops with salt and pepper. - In a 3-qt. slow cooker, combine the first 5 ingredients. Add pork, arranging chops to sit snugly in fruit mixture. Cook, covered, on low until meat is tender (a thermometer inserted in pork should read at least 145°), 3-4 hours., In a small bowl, mix remaining ingredients. To serve, remove pork chops from slow cooker. Using a slotted spoon, serve fruit over pork. Sprinkle with herb mixture.

PORK CHOPS WITH JAMMY-MUSTARD GLAZE
Fruit and mustard are two classic accompaniments to pork, and really, a juicy chop doesn't need much more than that for a sweet and tangy sauce. Mix together water, grainy mustard and any fruit preserve that's good with pork like cherry, fig, peach or apricot. Sear bone-in pork chops mostly on one side to prevent overcooking, then pour the fruit-mustard mixture into the skillet while they rest. The pork will stay moist, and its juices will have time to mingle with the sauce. Then just slice the pork and drape it in the velvety two-ingredient glaze. Eat with mashed or roasted potatoes and a green salad.

- In a small bowl, stir together 1/4 cup water, the preserves and the mustard. Set near the stove. Pat the pork chops dry, and season all over with salt and pepper.
- In a large (12-inch) cast-iron skillet, heat the oil over medium-high. Add the pork chops and cook, occasionally pressing down to make good contact with the skillet, until browned, 4 to 5 minutes. Reduce the heat to low, flip the chops and cook until opaque on the other side, 1 to 2 minutes. Pour in the jam-mustard mixture, turn off the heat, and let rest for 5 minutes.
- Transfer the chops to plates, then return the skillet to medium-low heat and simmer, scraping up browned bits, until the sauce has thickened slightly, 1 to 3 minutes. Taste and adjust seasonings. Every jam is different, so if it's too sweet, add more mustard, salt or black pepper; if it's too salty, add a little more jam; if it's too intense or thick, add a little more water; if it's flat, add salt. Spoon sauce over the pork chops.

- Sprinkle pork chops with pepper. In a large skillet, cook chops in 2 tablespoons oil over medium-high heat for 4-5 minutes on each side or until a thermometer reads 145 °. Remove and keep warm., In the same skillet, saute shallots in remaining oil for 1 minute. Add fruit and broth. Bring to a boil. FRUITED PORK CHOPS
If you like "sweet with your meat" this is for you. This recipe came from one of my local supermarkets long ago and is something to be made for a special occasion. It is colorful and oh, so tasty. I prefer well-trimmed bone-in chops, but I am sure thick butterfly chops would work as well. This is nice served with a small Caesar salad and boiled, parslied potatoes (preferably red). Enjoy.

Steps:
- In frypan, brown chops in oil.
- Drain pineapple slices, reserving syrup.
- Combine 1/2 cup pineapple syrup, 1/2 cup cranberry sauce, chicken stock, brown sugar and vinegar.
- Add to chops, cover and simmer 30 minutes or until chops are tender.
- Add pineapple and sweet peppers, cover and simmer about 10 minutes longer.
- Remove chops, pineapple and pepper to a warm platter, lifting them out with a slotted spoon (keep warm in a slow oven).
- Combine cornstarch and cold water; stir into pan juices, cooking until thickened and bubbly.
- Add remaining cranberry sauce; stir to mix and heat through; pour sauce over chops and enjoy.
