In my part of the Midwest, baked oatmeal is a Mennonite specialty. My daughters are always delighted if we have leftovers for them to take home.-Fancheon Resler, Albion, Indiana

Number Of Ingredients 11

6 cups quick-cooking oats
4 teaspoons baking powder
1 teaspoon ground cinnamon
4 large eggs, room temperature
2 cups 2% milk
1-1/2 cups packed brown sugar
1 cup canola oil
1 cup shredded apple
1 cup dried cranberries
1/2 cup chopped walnuts, toasted
Additional 2% milk

Steps:

  • Preheat oven to 400°. In a bowl, mix oats, baking powder and cinnamon. In another bowl, whisk eggs, milk, brown sugar and oil until blended; stir into oat mixture. Fold in apple, cranberries and walnuts., Transfer to a greased 13x9-in. baking dish. Bake, uncovered, until set and the edges are lightly browned, 35-40 minutes. Slice and serve with milk., Freeze option: Freeze cooled individual pieces on waxed paper-lined baking sheets until firm. Transfer pieces to airtight freezer containers; return to the freezer. To use, microwave each piece on high until heated through, 1-2 minutes.

This is a fast dessert recipe that lets you use up apples, pears, berries you have on hand. It is good to use up fresh fruit in season like apples and rhubarb. You can also use frozen sliced fruit - it doesn't need to be thawed before baking. This is a tried and true recipe made many times - Canadian Comfort Food for those long cold winters!

4 cups sliced apples
3/4 cup quick-cooking oatmeal
3/4 cup brown sugar
3/4 cup flour
1/2 teaspoon salt
1 teaspoon cinnamon
1/2 cup soft margarine

Steps:

  • Preheat oven to 375°F.
  • Slice apples in large greased large casserole dish. You can leave them unpeeled or peeled as you wish.
  • Combine dry ingredients, then cut in margarine until crumbly. Put over fruit and cook for approximately 35 to 45 minutes until fruit is cooked through. Check with a knife - if the fruit is soft and the oatmeal crisp is brown, it is done.
  • You can substitue diced rhubarb, pears, berries like saskatoons or blueberries for part or all of the apples. You may want to sprinkle a bit of cornstarch over top before you put the oatmeal over top to thicken the fruit as it cooks. Apples don't need thickening, but berries and pears are juicier.
  • Serve warm with vanilla ice cream.

This recipe is so easy and only has 5 ingredients. A delicious dessert and real quick to make. You can add any canned fruit pie filling you like. I used apple this time. Warm with some vanilla ice cream or cool whip is out of this world!

1 pkg yellow cake mix
2 1/2 c quick cooking oats
3/4 c softened butter or margerine
1 egg
2 can(s) pie filling any flavor you like

Steps:

  • 1. Preheat oven to 375. Grease 13x9x2 pan with cooking spray.
  • 2. Combine dry cake mix and oats. Add butter or margerine(whatever one you chose, I used margerine)and egg. Stir until crumbly.
  • 3. Put 1/2 the mixture in bottom of pan and spread. Press down lightly to cover the bottom. Add pie filling over the mixture and spread evenly.
  • 4. Top with remaining oatmeal and cake mixture; press lightly to cover pie filling. I did this part with my hands by crumbling the mixture finer to get a better coverage.
  • 5. Bake at 375 for 20-25 minutes or until bubbly and golden brown on the top. Cool before cutting into squares.
  • 6. Serve with ice cream of choice or cool whip or eat by itself. Delicious no matter how you eat it!
