NUT AND FRUIT BREAD
This is another great holiday bread to make that belonged to my mother. She sometimes served this one, and it is a very old recipe. This bread is good the first day, but better the second. You may use dates instead of raisins if you wish.

Steps:
- Grease an 8 x 5 inch loaf tin thoroughly. Preheat oven to 350 degrees F (175 degrees C).
- In a small bowl, beat the egg well. Mix in milk and melted butter or shortening.
- Sift flour, baking powder, and salt together into a mixing bowl. Add sugar, nuts, raisins and orange rind; mix well. Blend egg mixture into fruit and nut mixture until flour is just moistened. Turn batter into greased loaf tin, and allow to stand for 20 minutes.
- Place pan in the center of the oven. Bake for 55 to 60 minutes. Turn bread out on wire rack, and cool for several hours before slicing.

FRUIT AND NUT BREAD WITH BUCKWHEAT
This delicious fruit bread is quick and easy to make. Simply a few delicious dried fruits, seeds, nuts and buckwheat flour.

Steps:
- Preheat the oven to 180 ° C. Grease a loaf tin and line it with baking paper.
- Mix the flour with the baking powder, baking soda, salt and cinnamon.
- Chop nuts and dried fruit and add to the flour mixture together with the seeds.
- Add water and oil and stir with a spoon. The dough is watery!
- Place the dough in the loaf tin and sprinkle with seeds or rolled oats.
- Bake for 30 minutes or a knife comes out clean.
- Remove from the oven, allow to sit 30 minutes, remove from tin. Enjoy.
BUCKWHEAT FRUIT BREAD
Deliciously healthy bread which I adapted from Bread Machine Baking. Although I used raisins and dates when I made this bread, I think other dried fruit would also be delicious or even using only nuts.

- Program for whole wheat or fruit bread.

- Spray a standard loaf pan with cooking spray. I like to line it with parchment paper so that I can lift it out after baking for easy slicing. That's optional.
- In a large mixing bowl, whisk the eggs, extract, syrup and buttermilk together until well blended.
- In another bowl, whisk together the flours, salt, baking soda, and baking powder. Toss in the fruits and nuts, and add to the wet ingredients. Mix well. The batter will be stiff, but if it seems too stiff, add in a little more buttermilk.
