CRAB MELTS



Crab Melts image

These cheesy Crab Melts are an old-fashioned favorite with a creamy crab mixture and melted cheese on top of an English muffin.

1/3 cup mayonnaise
1/4 cup very finely chopped celery
2 tablespoons finely chopped onion
1/2 teaspoon garlic powder
1/2 teaspoon TABASCO sauce
1 (6-ounce) can lump crab
2/3 cup shredded cheddar cheese
chopped fresh parsley
4 English muffins, (split)

Steps:

  • Preheat broiler.
  • In a medium bowl, stir together mayonnaise, celery, onion, garlic powder, and TABASCO sauce.
  • Fold in crab meat and cheddar cheese.
  • Spread mixture evenly on English muffin halves. Sprinkle with fresh parsley.
  • Broil until cheese is melted and mixture is bubbly.

12 ounces crabmeat, fresh or canned
1/3 cup fine soft bread crumbs
2 tablespoons dry sherry
1 teaspoon chopped chives
1 teaspoon dried mustard
1/4 teaspoon salt
10 slices bacon, cut into thirds

Steps:

  • Remove any shell or cartilage from crab meat and chop into small pieces.
  • Combine all ingredients except bacon, mix thoroughly.
  • Chill 30 minutes.
  • Portion crab mixture with a tablespoon, shape into small rolls.
  • Wrap bacon around crab rolls.
  • Secure with toothpicks.
  • Broil about 4 inches from heating element 6-7 minutes or until bacon is crisp Turn carefully, broil 4-5 minutes longer until bacon is crisp.

Pan-fried sand dabs. White meat fish--sweet!

¼ cup milk
1 large egg, beaten
½ cup all-purpose flour
1 pinch salt and ground black pepper to taste
1 pound sand dab fillets
½ cup dry bread crumbs
¼ cup vegetable oil for frying
1 lemon, cut into wedges

Steps:

  • Beat milk and egg together in a bowl. Season flour with salt and pepper; dredge each fish fillet in flour mixture, then dip into the egg-milk mixture. Roll in bread crumbs until thoroughly coated.
  • Heat oil in a skillet over medium-high heat. Cook fillets in the hot oil until nicely golden brown, 3 to 4 minutes per side. Serve immediately, accompanied with lemon wedges.

DEVILED CRABS

Deviled crabs are a quintessential Gullah dish similar to crab cakes. I like to serve them in cleaned crab shells for a pretty presentation. Ask your local fishmonger for the crab shells-they may sell them. Or, you can bake the deviled crab in small ovenproof dishes, too.

1 large yellow onion, cut into large pieces
1 stalk celery, cut into large pieces
1/2 medium red bell pepper, cut into large pieces
2 tablespoons unsalted butter, plus more, melted, for brushing
1/4 cup mayonnaise
1/4 cup Dijon mustard
2 teaspoons dry sherry
1 teaspoon seafood seasoning
1/4 teaspoon ground mace
2 large eggs, lightly beaten
2 pounds blue crabmeat (lump or claw), picked over to remove any shells
3 cups crushed round buttery crackers, such as Ritz (from 2 sleeves or 64 crackers)
12 cleaned crab shells

Steps:

  • Preheat the oven to 375 degrees F.
  • Pulse the onion, celery and red bell pepper in a food processor until minced. Melt the butter in a large skillet over medium-high heat. Add the minced vegetables and cook until softened, about 5 minutes. Set aside and let cool.
  • Combine the mayonnaise, mustard, sherry, seafood seasoning, mace and eggs in a large bowl. Stir in the cooled vegetables. Fold in the crabmeat and cracker crumbs. Spoon about 1/2 to 3/4 cup of the crab mixture into each crab shell and brush with melted butter. Place the crab shells on a large rimmed baking sheet. Bake until golden brown, 20 to 25 minutes.

1 lb jumbo lump crab meat
1/3 cup fine soft bread crumbs
2 tablespoons dry sherry
1 teaspoon chives, chopped
1 teaspoon dry mustard
1/4 teaspoon salt
10 slices bacon, cut in thirds
4 tablespoons mayonnaise

Steps:

  • Remove cartilage from crab meat. Combine all ingredients except bacon.
  • Mix thoroughly.
  • Chill for 30 minutes.
  • Portion crab mixture with a tablespoon.
  • Shape into small rolls.
  • Wrap bacon around crab rolls and secure with a toothpick.
  • Place crab rolls on a broiler pan.
  • Broil about 4 inches from source of heat for 8 to 10 minutes or until bacon is crisp.
  • Turn carefully.
  • Broil 4 to 5 minutes longer.
  • Makes 30 hors d'oeuvres.
