Fresh Mint Dressing image

This mint salad dressing recipe is refreshing, delicious and easy to make! You'll need fresh mint, lemon juice, olive oil, Dijon mustard, and honey or maple syrup. Recipe yields a little over 1 cup.

1/2 cup extra-virgin olive oil
1/2 cup lemon juice (about 2 lemons)
1/4 cup packed fresh mint (spearmint) leaves (about half of a 2/3 or 3/4-ounce package)
3 tablespoons honey or maple syrup
1 tablespoon Dijon mustard
2 cloves garlic, roughly chopped
1/4 teaspoon fine sea salt
10 twists of freshly ground black pepper

Steps:

  • In a food processor, combine all of the ingredients and blend until smooth. Taste, and add more salt and/or pepper if necessary. Use as desired!
  • This dressing will keep well, covered and refrigerated, for up to 1 week.

1/3 cup fresh lemon juice
1 tablespoon Dijon mustard
1 teaspoon sugar
1 garlic clove, minced
1/3 cup extra virgin olive oil
1/3 cup chopped of fresh mint
1/8 teaspoon salt, to taste
fresh ground pepper

Steps:

  • Whisk lemon juice, mustard, sugar and garlic in a small bowl until blended.
  • Drizzle in oil, whisking until blended.
  • Stir in mint, salt and pepper.
  • Note: Can be kept in refridgerator for up to 2 days.

2 tablespoons chopped shallots
2 teaspoons red wine vinegar
1/2 cup fruity-tasting olive oil
1 small clove garlic, minced
1/2 teaspoon kosher salt, more to taste
Freshly ground black pepper to taste

Steps:

  • In a food processor, combine mint, shallots, vinegar, olive oil, garlic and salt until smooth. Season to taste with salt and black pepper.

1/2 cup sugar
1/4 cup water
1 tablespoon minced fresh mint leaves
1/2 cup olive oil
4 teaspoons lemon juice
1 teaspoon salt
1/2 teaspoon paprika
Mixed salad greens

Steps:

  • In a saucepan, combine the sugar, water and mint. Simmer for 1-2 minutes or until sugar is dissolved. Remove from the heat; cover and let stand for 1 hour. Strain and discard mint., Place olive oil in a small bowl; whisk in mint syrup. Whisk in lemon juice, salt and paprika. Drizzle over salad greens.
