MINI PIZZAS RECIPE
Mini pizzas make for a fun and easy pizza night. Make a big batch for freezing and cold-pizza breakfast, too.

- Place the warm water in a large mixing bowl. Stir in the sugar and sprinkle the yeast over the top. Allow this to set for five minutes. The mixture will start to foam and bubble.
- Add the oil, flour, salt, and herbs. Stir with a wooden spoon until a shaggy dough forms.
- Transfer the dough to a lightly floured surface and knead for about five minutes until a smooth dough ball is formed.
- Transfer the dough ball to a greased bowl, cover, and allow to rise until doubled in bulk, about an hour.
- Combine the dough ingredients in the bread machine pan, according to the order recommended by the manufacturer.
- Set on dough and start the machine, checking after ten minutes to make sure all the ingredients have been incorporated and not stuck to the side of the pan. Scrape down any stray ingredients to insure they are mixed in.
- Place the warm water in the mixing bowl. Stir in the sugar and sprinkle the yeast over the top. Allow this to set for five minutes. The mixture will start to foam and bubble.
- Add the oil, flour, salt, and herbs. Attach the dough hook and run the machine until all the ingredients are incorporated, stopping the machine to scrape the sides as necessary. Knead with the dough hook until a smooth dough ball is formed.
- Transfer the dough ball to a greased bowl, cover, and allow to rise until doubled in bulk, about an hour.
- Preheat the oven to 500 °. Spray baking sheets with nonstick cooking spray and sprinkle with corn meal to prevent sticking or line the pans with parchment paper for easier cleanup.
- Divide the dough into 16 portions. Flatten each portion into a thin round and place on the cooking sheet.
- Spread sauce and sprinkle toppings as desired.
- Bake for 8 to 10 minutes or until the crust is crisp and the cheese melted and lightly browned.
- Wrap cooled pizzas in foil or plastic wrap and stash in a larger ziptop freezer bag. Thaw and reheat in a 350 oven for about 5 minutes.
- Assemble the pizzas as directed, but instead of baking, place the trays in the freezer. Once the pizzas are frozen solid (this will take several hours), stack them between layers of patty papers or waxed paper and store in a freezer bag or box in the freezer. To serve: bake from frozen at 450 degrees, for 10 to 12 minutes.

BAKE-FROM-THE-FREEZER PIZZAS

- Make up the bread dough following pack instructions, and transfer to an oiled bowl to rise for about 1 hr.
- Knock back in the bowl by squashing all the air out of the dough with your fist. Divide the dough into 6 and roll each one on a lightly floured surface to a circle about 18cm in diameter. Put dough you're not using under a damp tea towel or oiled cling film to stop it drying out.
- Put the pizza bases on large oiled baking sheets - you may need 2 or 3. Spread 1 tbsp sauce or passata on each base, then scatter on the basil, tomatoes, mozzarella and Parmesan (or whatever you fancy). You can freeze the pizzas now, if you like, on the baking sheet, wrapped in cling film. Or if eating straight away, heat oven to 240C/220C fan/gas 9. Cook for 8-12 mins, until crisp and golden. To cook from frozen, remove the cling film and heat oven to 220C/200C fan/gas 7. Bake for 10-14 mins until crisp and golden.

FROZEN PERSONAL PIZZA PREP RECIPE BY TASTY

- Preheat oven to 450°F (230°C).
- Place a parchment paper-lined baking sheet in the oven.
- To make four personal-sized pizzas, divide pizza dough into fourths.
- Roll out each piece of dough to desired thickness.
- To par-bake the pizza rounds, arrange the pizza dough rounds on the hot baking sheet.
- Bake for 3-4 minutes or until dough looks puffy and dry. Dough should not be golden brown.
- Cool pizza rounds on a wire rack.
- When cool, top your rounds with desired toppings.
- Place prepared pizzas on a baking sheet and freeze, uncovered, for 3 hours so the toppings adhere to one another.
- Wrap the now-frozen pizzas in plastic wrap and aluminum foil to prevent freezer burn. Label each pizza as desired and freeze for 1-2 months.
- To bake frozen pizzas, preheat the oven to 450°F (230°C).
- Unwrap pizza and place directly on rack or parchment-lined baking sheet.
- Bake for 15-18 minutes, or until crust is brown and cheese is melted.
- Cool for 5 minutes. Cut into slices before serving.

FROZEN POCKETLESS PIZZA
I started making these yummy little pizzas so I could have a quick hot lunch in just minutes in the toaster oven but not the gazillion saturated fat-grams in most pizzas. We often serve them as an impromptu appetizer. I especially like these, because their crust gets very crispy - the way I love it! Take this basic idea and add your favorite toppings. I always add onion, and red peppers.

Steps:
- On paper plate, place layer of paper towels.
- Place single layer of pepperoni, repeat with paper towel, until all pepperoni are on paper towels, ending with paper towel on top.
- Microwave on Defrost setting just until pepperoni is warm and has released it's fat.
- Do not overcook.
- Press top paper towel to remove as much fat as possible.
- Pick up paper towels and gently shake over a clean paper towel to release pepperoni into a pile.
- Set aside.
- Place poctketless pita on several large cookie sheets so that they do not overlap.
- Using equal ingredients on each pita, place in this order: Spread sauce over pita.
- Sprinkle seasonings over sauce.
- Sprinkle with cheese.
- Top with 4 slices of pepperoni.
- (Optional: Sprinkle any or all optional veggie ingredients over pepperoni.) Place cookie sheets in the freezer and freeze about 2 hours or until pizza is completely frozen.
- To store: I use pocketless pita bag sitting upright and stack pizzas, separating them with square of waxed paper.
- Keep frozen until ready to cook.
- Bake in preheated toaster oven about 14-15 minutes, or until crust is golden and cheese is melted.
- Toaster ovens vary, so check it after about 12-13 minutes.
- Let them cool for 2-3 minutes and cut into eight mini-slices.

- On a very lightly floured surface, roll out the dough to the desired shape (make sure to keep it within the constraints of your baking sheet). If the dough begins to shrink at any time, lift and allow it to fall, turning it like a wheel so the weight helps stretch and form the larger shape.
