2 cups almond flour
2 cups confectioners' sugar
1/2 cup all-purpose flour
2 1/2 cups eggs
1 3/4 cups egg whites
6 tablespoons sugar
3 sticks butter, room temperature
1 1/2 cups confectioners' sugar, sifted
1/8 cup cocoa powder, sifted
12 egg yolks
5 eggs
2 cups, (64 percent) bitter chocolate, melted
3 cups egg whites (21 egg whites)
1 1/2 cups sugar
1 3/4 cups mango, diced
1 lime, juiced
6 tablespoons light brown sugar
2 tablespoons butter
1/2 vanilla bean, scraped
2 egg whites
5 tablespoons sugar
2 tablespoons corn syrup
1-ounce water
1 1/8 cups passion fruit puree
1/2 cup apricot puree
4 egg yolks
1/4 cup sugar
1 1/2 teaspoons gelatin
1 1/8 cups heavy cream, whipped
3/4-cup egg whites (5 egg whites)
1 1/2 cups sugar
3/4 cup corn syrup
1/2 cup water
1 tablespoon cocoa powder, sifted
7 tablespoons cocoa butter, melted and cooled
1 1/4 cups cocoa butter, melted
Pinch red coloring, powdered
1 1/4 cups milk chocolate, melted
3/4 cup bitter chocolate, melted

Steps:

  • Assembly: Line 2 (6-inch) ring molds with acetate band. Line rings with strips of biscuit joconde. Place a circle of chocolate biscuit on bottom of rings. Divide mango filling between rings. Top each ring with 7 tablespoons of mousse and top with a chocolate meringue disc. Fill rings with mousse and freeze for 15 minutes. Top with additional mousse and freeze. Unmold and spray with chocolate and refrigerate.
  • Combine almond flour, confectioners sugar and flour. Add eggs and whip on high speed for 10 minutes. In a separate bowl, whip egg whites to soft peaks. Gradually add sugar and whip to medium peaks. Fold in egg whites. Spread onto 2 parchment lined baking sheets. Bake in a preheated 400-degree oven for 7 minutes, cool and cut into 1-inch strips.
  • Using a paddle attachment on medium speed, cream butter, confectioners sugar and cocoa powder until fluffy about 5 minutes. Gradually add yolks and eggs, continue to mix until combined. Add warm chocolate. Whip egg whites to soft peaks, add sugar gradually and whip into stiff peaks. Fold egg whites into chocolate mixture. Spread onto 2 sheet pans lined with parchment paper. Bake in a preheated 375-degree oven for 9 minutes. Cool and cut into 5 1/2-inch circles.
  • Combine mango and lime juice, set aside. Caramelize sugar, add butter, mango and vanilla. Saute for 2 minutes, cool completely.
  • Whip egg whites into soft peaks. Cook sugar, corn syrup and water until 240 degrees Fahrenheit. Slowly add sugar and continue to whip on high speed into stiff peaks, set aside. Combine purees and bring to a boil. Ribbon yolks and sugar, temper with purees and cook until 185 degrees F. Add gelatin, strain, cool and fold in half of the whipped cream. Fold remaining cream into egg whites. Fold mixtures together and use immediately.
  • Whip egg whites to soft peaks. Cook sugar, corn syrup and water to 240 degrees F. Slowly add sugar to egg whites and continue to whip into stiff peaks. Fold in cocoa powder. Pipe 8 spiral 6-inch circles onto parchment lined baking sheet. Bake in a preheated 212-degree oven for 1 hour. Cool and spread both sides with cocoa butter.
  • Combine warm cocoa butter and coloring. Pour over chocolate and stir. Strain and place in spray gun, use immediately.

TROPICAL-SORBET-AND-MERINGUE STACK CAKE

This colorful frosty dessert calls for layers of homemade meringue and store-bought tropical fruit sorbet. On top is frozen whipped cream-a cool cloud that instantly melts in your mouth.

1 1/4 cups sugar
4 teaspoons cornstarch
5 large egg whites, room temperature
1 1/4 teaspoons fresh lemon juice
1/4 teaspoon kosher salt (we use Diamond Crystal)
3 pints fruit-flavored sorbets, such as mango, blood orange, and blueberry-passion fruit
1 cup heavy cream
Fresh raspberries and blackberries, for serving
Toasted unsweetened flaked coconut, and chia or hemp seeds, for serving (optional)

Steps:

  • Preheat oven to 250°F, with racks in upper and lower thirds. Stir together sugar and cornstarch. In the bowl of a mixer fitted with the whisk attachment, beat egg whites with lemon juice and salt on low speed until frothy. Increase speed to medium-high and gradually add sugar mixture, beating until stiff, glossy peaks form, 8 to 10 minutes.
  • Draw two 5-by-10-inch rectangles on a sheet of parchment, spaced at least 2 inches apart. Turn parchment upside-down on a baking sheet and adhere corners with masking tape or tiny dollops of meringue. Repeat with another sheet of parchment and baking sheet, so you have 4 rectangles total. Divide meringue evenly among rectangles; spread to edges with an offset spatula.
  • Bake until meringues are crisp and dry on outsides, but not developing any color, about 1 hour. Turn oven off (do not open door); let cool and continue drying in oven at least 2 hours and up to 1 day.
  • Temper sorbets in refrigerator until softened but not melting, about 15 minutes. Transfer one meringue layer to a freezer-safe plate or tray. Gently spread one pint of sorbet evenly to edges of meringue. Repeat with remaining meringue and sorbet layers, topping with last meringue layer. Freeze until firm, at least 3 hours or, wrapped in plastic, up to 2 days.
  • Beat cream to soft peaks on medium-high speed. Spread over top of cake; sprinkle with berries, coconut, and seeds. Slice and serve immediately, or cover with plastic wrap and return to freezer until ready to serve, up to 4 hours.

4 large egg whites
1 cup sugar
For cream
2 cups heavy cream
1 tablespoon sifted confectioners' sugar
1/2 teaspoon pure vanilla extract or seeds from 1 vanilla pod
To serve
1 pint seasonal berries such as strawberries, raspberries, or blueberries
Additional whipped cream for garnish

Steps:

  • Make meringues
  • Preheat oven to 200°F. Line 2 large baking sheets with aluminum foil; butter and flour foil.
  • In large bowl using electric mixer, beat egg whites until soft peaks form. Gradually add sugar, beating until stiff and glossy. Drop 8 (approximately 1/3-cup) mounds of meringue about 1 inch apart onto baking sheets and use spoon to make indentations in centers of mounds.
  • Bake in upper and lower thirds of oven until crisp but still white, about 45 minutes. Turn oven off and cool meringues in oven 1 hour. Using metal spatula, transfer meringues to rack to cool completely. (Meringue shells can be made up to 5 days ahead and kept in airtight container at room temperature.)
  • Make cream and assemble dessert
  • Lightly oil 7-inch diameter soufflé dish or ramekin (6 cup capacity).
  • In large bowl using electric mixer, beat cream until soft peaks form. Fold in confectioners' sugar and vanilla. Chop meringue shells into 1-inch pieces and fold into cream. Transfer mixture to soufflé dish and cover with plastic wrap. Freeze until firm, approximately 8 hours. (Can be made 3 days ahead. Cover; keep frozen.)
  • To un-mold dessert, fill large bowl 1/3 full of hot water. Run small knife around inside edge of soufflé dish to loosen. Dip dish into bowl of hot water for 2 seconds, being careful not to splash water onto cream. Carefully invert onto serving plate. Arrange berries on top of and around frozen cream and garnish with additional whipped cream.

2 large egg whites
1/8 teaspoon cream of tartar
1/2 cup sugar
For filling and garnish:
4 passion fruits
1/3 cup well-chilled heavy cream
1 1/2 teaspoons sugar
1 small pomegranate (optional)

Steps:

  • Make meringue layers:
  • Preheat oven to 200°F. and oil a baking sheet. On a sheet of parchment paper, using a 3- or 4-inch heart-shaped cutter as a guide, draw 6 hearts. Turn parchment over and put on baking sheet.
  • In a large bowl with an electric mixer beat whites with cream of tartar and a pinch salt until they just hold soft peaks. Gradually beat in sugar and beat until meringue just holds stiff, glossy peaks.
  • Transfer meringue to a pastry bag fitted with a 1/2-inch plain tip and pipe evenly onto parchment hearts, filling them in. (Alternatively, divide meringue among parchment hearts, spreading with a small spatula to fill in.)
  • Bake meringue layers in middle of oven 45 minutes, or until crisp and firm. (If weather is humid, cooking time may be longer.) Cool meringue layers completely on baking sheet in turned-off oven and carefully peel off parchment. Meringue layers may be kept, layered between sheets of parchment paper, in an airtight container in a cool, dry place 1 week.
  • Make filling:
  • Halve 3 passion fruits and scoop out pulp (including seeds and juice) into a sieve set over a bowl. Force pulp through sieve, pressing hard on seeds, and discard seeds. In a bowl beat cream until it holds soft peaks and fold in passion-fruit juice and sugar until just combined.
  • Make garnish:
  • Halve remaining passion fruit and scoop out seeds, reserving them. Halve pomegranate. Bending back rinds, dislodge some seeds from membranes, reserving them, and reserve some juice.
  • Arrange a meringue heart on each of 2 plates. Top hearts with whipped cream and garnish with some reserved passion-fruit and pomegranate seeds. Top each dessert with 1 more meringue heart. Desserts may be made 2 hours ahead and chilled, loosely covered. Bring desserts to room temperature before serving.
  • Garnish desserts with more passion-fruit and pomegranate seeds and some reserved juice.
