Here's one of those "looks like you fussed" desserts that is so easy it's become a standard for me. I love the mocha version, but pure chocolate lovers may prefer using chocolate chip ice cream. The cookie crust is a snap to make. -Debbie Terenzini-Wilkerson, Lusby, Maryland

Ingredients

1-1/2 cups Oreo cookie crumbs
1-1/2 teaspoons sugar, optional
1/4 cup butter, melted
4 cups chocolate chip or coffee ice cream, softened
1/4 cup chocolate syrup
Additional Oreo cookies, optional

Steps:

In a small bowl, combine cookie crumbs and sugar if desired. Stir in butter. Press onto the bottom and up the sides of an ungreased 9-in. pie plate. Refrigerate for 30 minutes. , Spoon 2 cups ice cream into crust. Drizzle with half of the chocolate syrup; swirl with a knife. Gently top with remaining ice cream. Drizzle with remaining syrup; swirl with a knife. Freeze until firm. , Remove from the freezer 10-15 minutes before serving. If desired, top with whole cookies.

1/4 cup hot fudge ice cream topping, warmed
1 chocolate crumb crust (9 inches)
3 cups coffee ice cream, softened
1 package (5.9 ounces) instant chocolate pudding mix
1/2 cup cold strong brewed coffee
1/4 cup cold 2% milk
1-3/4 cups whipped topping
1 cup marshmallow creme
1/4 cup miniature semisweet chocolate chips

Steps:

Spread ice cream topping into crust. In a large bowl, beat the ice cream, dry pudding mix, coffee and milk until blended; spoon into crust., In another bowl, combine the whipped topping and marshmallow creme; spread over top. Sprinkle with chocolate chips. Cover and freeze until firm.

I created this sweet coffee-flavored recipe as an entry for our state fair, adding the toffee topping to "dress it up". I'm glad I did- the pie won first place and is now a family holiday favorite!

2/3 cup sugar
1/2 cup all-purpose flour
1/2 teaspoon salt
2 cups milk
3 tablespoons instant coffee granules, crushed
3 egg yolks, lightly beaten
2 tablespoons butter
2 teaspoons vanilla extract
1 chocolate crumb crust (9 inches)
TOPPING:
1 teaspoon instant coffee granules
1 cup heavy whipping cream
2 tablespoons confectioners' sugar
1/2 teaspoon vanilla extract
1 Heath candy bar (1.4 ounces), crushed

Steps:

In the top of a double boiler, combine the sugar, flour and salt; gradually stir in milk until smooth. Cook and stir over boiling water until thickened, about 10 minutes. Stir in coffee granules., Gradually stir a small amount into egg yolks; return all to pan. Cook and stir for 3 minutes. Remove from the heat; add butter and vanilla. Cool for 30 minutes. Pour into crust; chill. , In a bowl, dissolve coffee granules in a small amount of cream. Add sugar, vanilla and remaining cream. Whip until stiff peaks form. Spread over filling; sprinkle with crushed candy bar. Chill.

1 cup Oreo cookie crumbs
1 tbps. butter or 1 margarine, melted
1 large egg, lightly beaten
cooking spray
2 teaspoons instant coffee granules
1 tablespoon boiling water
3/4 cup fat-free hot fudge topping, divided (such as Smucker's)
4 cups low-fat coffee ice cream
9 chocolate-covered coffee beans (optional)

Steps:

Preheat oven to 350°F.
TO PREPARE THE CRUST: Combine first 3 ingredients, and toss with a fork until moist. Press into bottom and up sides of a 9-inch pie plate coated with cooking spray. Bake at 350F for 8 minutes. Cool on a wire rack. Place crust in freezer.
TO PREPARE FILLING: Place a large bowl in freezer. Combine coffee granules and boiling water in a small bowl; stir until coffee dissolves. Add 3 tablespoons fudge toppng; stir well. Set asside.
Spoon ice cream into chilled bowl, and stir in fudge topping mixture. Spoon ice cream mixture into chilled crust; freeze 30 minutes. Cover with plastic wrap; freeze 4 hours or until set. Place pie in refrigerator 20 minutes before serving to soften. Serve pie with 9-tablespoons fudge topping, and garnish with coffee beans, if desired.

1/2 cup hot fudge ice cream topping
1 chocolate cookie crumb crust (6 oz.)
1-3/4 cups cold milk
2 pkg. (3.4 oz. each) JELL-O Vanilla Flavor Instant Pudding
2 Tbsp. MAXWELL HOUSE Instant Coffee, any variety
1 tub (8 oz.) COOL WHIP Whipped Topping, thawed

Steps:

Heat fudge topping as directed on package; pour into crust. Tilt crust to evenly cover bottom with sauce. Freeze until ready to use.
Add milk to combined pudding mixes and coffee in large bowl; beat with whisk 2 min. Stir in COOL WHIP. Pour into crust.
Freeze 4 hours or until firm. Remove from freezer about 10 min. before serving; let stand at room temperature to soften slightly before cutting into pieces.

In a large bowl, whisk together the instant pudding dry mix, the cold brew coffee, the milk and the coffee extract. Whisk until combined and slightly thickened, about 1 minute. Fold in the Cool Whip completely, making sure to get the bottom!
Pour the mixture into the prepared pie crust and smooth out the top. Freeze for at least 6 hours, or overnight.
Just before serving, pipe on whipped cream and garnish with dark chocolate-covered espresso beans. Cut into wedges and serve!
