BUTTERMILK PEACH ICE CREAM

Steps:
- Place peaches in a food processor; process until smooth. Add sugars, lemon juice, vanilla and salt; process until blended., In a large bowl, mix buttermilk and cream. Stir in peach mixture. Refrigerate, covered, 1 hour or until cold., Fill cylinder of ice cream maker no more than two-thirds full. Freeze according to manufacturer's directions, refrigerating any remaining mixture to process later. Transfer ice cream to freezer containers, allowing headspace for expansion. Freeze 2-4 hours or until firm. Let ice cream stand at room temperature 10 minutes before serving.

PEACH BUCKLE
My classic Peach Buckle is made with buttermilk, brown sugar, and a boatload of juicy peaches. This quick one bowl recipe is just what you want in summer when ripe fruit is rolling in faster than you can gobble it down.

- Preheat the oven to 350F
- Melt the butter in a 10 inch cast iron skillet.
- Put the peaches in a bowl and sprinkle them with the granulated sugar. Let sit.
- In your main mixing bowl, whisk together the flour, baking powder, salt and brown sugar. Try to get out any large lumps in the sugar.
- Whisk the egg and buttermilk together and add it to the bowl, along with the melted butter and extract. Whisk to combine, but don't over beat.
- Pour the batter into the skillet, and then top with the peach slices (along with any juices.) You can sprinkle the top with raw or sanding sugar if you like.
- Bake in the center of the oven for about 50 minutes until golden and set. Cover loosely with foil toward the end of cooking if the top seems to be browning too quickly. You can do a toothpick test if you like, but keep in mind that a buckle, like a brownie, is best when moist inside and not over baked.
- Serve warm with topping of your choice.
- To make the whipped sour cream topping, whip the sour cream, heavy cream, and sugar until it holds soft peaks.
PEACH COBBLER WITH BUTTERMILK BISCUITS
Celebrate stone fruit season with a quick-fix recipe for Peach Cobbler with Buttermilk Biscuits studded with fresh thyme.

- Preheat the oven to 400°F. Grease a 13x9" baking dish or 10" skillet with butter.
- In a large bowl, stir together the peaches, cornstarch and vanilla. Pour the peaches, including any juices, into the prepared baking dish.
- In a separate large bowl, whisk together the flour, sugar, baking powder, baking soda and salt. Add the cubed butter, and using your fingers, work it into the flour mixture until the texture resembles wet sand.
- Stir in the buttermilk and thyme, mixing just until combined.
- Using two spoons, drop eight mounds of the cobbler dough atop the peaches, spacing them roughly 1 inch apart. Brush the tops of the biscuits with additional buttermilk and sprinkle with sanding sugar (optional).
- Bake the cobbler until the filling is bubbling and the biscuits are golden brown and puffed, 30 to 35 minutes.
- Remove the cobbler from the oven and let it cool slightly before serving.
PEACH COBBLER
Steps:
- Preheat the oven to 425 degrees F.
- Generously butter a 1 1/2-quart shallow baking dish. Place the sliced peaches in the dish and sprinkle with brown sugar, cinnamon, vanilla, and flour. Mix gently and spread evenly again. Bake for 10 minutes.
- Meanwhile combine all dry ingredients for cobbler crust in a bowl. Cut in the butter with a pastry cutter or your fingers, to make the texture like coarse crumbs. Add buttermilk and stir to form a soft dough.
- Remove fruit from oven and drop rounded spoonfuls of dough on top. Sprinkle with last tablespoon of brown sugar and return to oven. Bake until fruit is bubbly and crust topping is golden brown, about 20 minutes. Serve warm with whipped cream.
PEACH BREAKFAST SLUSH

- In a blender, combine the peaches, orange juice concentrate and nectar; cover and process until smooth. , Pour into a freezer container; cover and freeze until firm. To serve, scoop 2/3 cup frozen mixture into a glass; add 1/3 cup soda.

FAVORITE PEACH SLUSH
A friend gave me this recipe many years ago. It just wouldn't be summer without making a batch of this when the peaches are ripe. This makes a 5 quart (ice cream pail) full of summer goodness and will keep indefinitely. I have made this in the summer and still had some at Christmas, although most of the time it doesn't last that long! Note: Cooking time is freezing time.

Steps:
- Wash and coarsely chop peaches, set aside.
- Stir together remaining ingredients in 5 quart pail until mixed.
- Stir in chopped peaches.
- Put lid on pail and freeze at least 24 hours.
- Check about half way through freezing time and stir to distribute peaches in the mixture.
- To serve.
- Remove from freezer and let set about 30 minutes to an hour.
- Scoop out of pail with ice cream scoop and fill glass about 2/3 full with slush mixture.
- Top with 7-up or Squirt -- do not use Sprite as it gives it an "off" taste.
- Enjoy!
