Frosted Gelatin Salad image

A sweet, creamy topping frosts tis extra-fruity gelatin that is chock-full of canned apricots and crushed pineapple. "It's a colorful salad to serve at potluck dinners," reports Bertha Johnson of Indianapolis, Indiana. "Everyone loves the combination of flavors."

2 packages (3 ounces each) orange gelatin
2 cups boiling water
3/4 cup miniature marshmallows
2 cans (15-1/4 ounces each) apricot halves
1 can (20 ounces) crushed pineapple, drained
1/2 cup sugar
3 tablespoons all-purpose flour
1 egg, lightly beaten
1 teaspoon vanilla extract
2 envelopes whipped topping mix (Dream Whip)
1/4 cup finely shredded cheddar cheese

Steps:

  • In a large bowl, dissolve gelatin in boiling water. Add marshmallows; stir until melted. Drain apricots, reserving 1 cup juice; set juice aside. Chop apricots; add to gelatin with pineapple. Pour into an 11x7-in. dish. Chill until firm. , Meanwhile, in a small saucepan, combine the sugar and flour. Whisk in the egg, vanilla and reserved apricot juice until smooth. Bring to a boil; boil and stir for 2 minutes. Cool completely. , Prepare whipped topping according to package directions; fold in cooled juice mixture. Spread over gelatin. Sprinkle with cheese. Chill for 1 hour.

1 can (20 ounces) crushed pineapple
1 envelope unflavored gelatin
1 package (3 ounces) cherry gelatin
1 cup chilled ginger ale
1 can (14 ounces) jellied cranberry sauce
1 package (8 ounces) cream cheese, softened
1 envelope whipped topping mix (Dream Whip)
1/2 cup milk
1 teaspoon vanilla extract
8 pecan halves, toasted
8 fresh cranberries

Steps:

  • Drain pineapple, reserving juice in a 1 cup measure; set pineapple aside. To the juice, add enough water to measure 1 cup. Transfer to a small saucepan; add the unflavored gelatin and let stand for 1 minute. Bring to a boil. Add cherry gelatin; stir until dissolved. Stir in ginger ale. Pour into a bowl. Refrigerate for 30 minutes or until partially set., Whisk in the pineapple and cranberry sauce. Transfer to an 11x7-in. dish coated with cooking spray. Refrigerate until set., In a large bowl, beat cream cheese until smooth. In a small bowl, beat whipped topping mix, milk and vanilla on low speed until blended. Beat on high for 4 minutes or until thickened. Add to cream cheese; beat until blended. Spread over gelatin. Refrigerate overnight. Cut into squares; garnish each with a pecan half and cranberry.

4 medium firm bananas, sliced
2-1/2 cups miniature marshmallows
1/2 cup sugar
1 tablespoon all-purpose flour
1 egg, lightly beaten
1 package (8 ounces) cream cheese, softened
1 cup heavy whipping cream, whipped
3/4 cup chopped pecans, toasted
1/2 cup sweetened shredded coconut, toasted

Steps:

  • In a large bowl, dissolve gelatin in boiling water. Drain pineapple, reserving juice. Stir the cold water, bananas, marshmallows and pineapple into gelatin. , Pour into a 13-in. x 9-in. dish coated with cooking spray; refrigerate until firm., Meanwhile, in a large saucepan, combine sugar and flour. Stir in reserved pineapple juice until smooth. Bring to a boil over medium heat; cook and stir for 2 minutes or until thickened and bubbly. Reduce heat; cook and stir 2 minutes longer., Remove from the heat. Stir a small amount of hot filling into the egg; return all to the pan, stirring constantly. Bring to a gentle boil; cook and stir 2 minutes longer. Cool., In a large bowl, beat cream cheese until smooth. Beat in, cooled filling. Fold in whipped cream. Spread over gelatin (dish will be full). Sprinkle with nuts and coconut.

It's almost Thanksgiving again, I love congealed salads so I thought I would post one of my recipes. Cheers !!

Number Of Ingredients 8

1 can(s) (8.5) oz can of crushed pineapple
2 box (3 oz) raspberry flavored jello
1 pkg (8oz) cream cheese at room temperature
2 Tbsp salad dressing
1 can(s) 16 ounce of whole cranberry sauce
1 c heavy cream, whipped, not cool whip
1/2 c coarslely chopped walnuts
1 medium golden delicious ( peeled and chopped fine) apple

Steps:

  • 1. Drain pineapple and cranberry sauce ,SAVE THE LIQUID, and add enough water to make 2 cups. Pour into small saucepan and bring to a boil
  • 2. Pour the jello into a medium bowl then pour the boiling liquid over the jello, stirring to combine. Chill until partially set.
  • 3. Beat together room temperature cream cheese and salad dressing in a large bowl until light and fluffy. Gradually beat in partically set jello into cream cheese mixture. Gently fold whipped cream into jello mixture. Fold in pineapple and whole cranberry sauce, breaking the cranberry sauce apart. Fold apples and walnuts into mixture.
  • 4. Pour mixture into a 13x9x2 glass container. CHILL SEVERAL HOURS BEFORE SERVING.

My daughter, Katherine Beth, has requested that her grandmother, Thelma Bell, make this sweet rick gelatin salad with its fluffy topping for every family get-together. So when she and Patrick Althouse planned their nuptials, this delightful salad was part of the bountiful potluck buffet.

2 packages (6 ounces each) strawberry gelatin
3 cups boiling water
2 packages (10 ounces each) frozen sweetened sliced strawberries, thawed
1 can (20 ounces) crushed pineapple, undrained
1 cup chopped pecans
1/2 cup chopped maraschino cherries
TOPPING:
1 package (8 ounces) cream cheese, softened
1 jar (7 ounces) marshmallow creme
1 carton (8 ounces) frozen whipped topping, thawed
Fresh strawberries and mint

Steps:

  • In a large bowl, dissolve gelatin in boiling water. Stir in strawberries and pineapple. Refrigerate until partially set. , Stir in pecans and cherries. Transfer to a 13-in. x 9-in. dish. Chill for 2 hours or until firm. , For topping, in a small bowl, beat cream cheese and marshmallow creme just until combined; fold in whipped topping. Spread over salad. Chill for several hours or overnight. Cut into squares. Garnish with strawberries and mint.

I got this in my e-mail this morning. An absolutely delicious salad just in time for Easter. Chilling time is several hours so make this the day before or very early in the morning.

Number Of Ingredients 13

1 (8 ounce) can crushed pineapple
2 cups apple juice
3 cups sliced fresh strawberries
1 banana, sliced
3/4 cup pecan pieces
2 (3 ounce) packages strawberry gelatin
1 (8 ounce) package cream cheese
2 tablespoons mayonnaise
2 cups whipped topping
reserved pineapple juice (plus water to make 1 cup)
1 (1 ounce) packet unflavored gelatin (Knox)
1 cup miniature marshmallow
1 cup whipped topping

Steps:

  • Drain the pineapple and reserve the juice. Set the drained pineapple aside.
  • In a saucepan, bring the apple juice to a boil.Pour the hot juice into a bowl and add the gelatin. Stir to dissolve. Refrigerate until partially set.
  • Beat the cream cheese and mayonnaise together until light and fluffy. Fold in the gelatin mixture. Fold in the whipped topping.
  • Fold the pineapple, strawberries, sliced banana, and pecans into the remaining cream cheese mixture.
  • Pour into an 8x13" pan. Chill until the top sets, about 20 minutes.
  • For the top layer:.
  • Bring the pineapple juice and water mixture to a boil. Dissolve the unflavored gelatin in the boiling water. Turn the heat down, add the marshmallows and stir until the marshmallows are melted. Set aside to cool until tepid but not set.
  • Fold in the whipped topping. Spread the topping mixture over the fruit mixture. Chill for several hours before serving.

2 cups 7-Up soda
1 cup miniature marshmallow

1 cup pineapple juice
1 egg, slightly beaten
1 cup Cool Whip

Steps:

  • Dissolve jello in water and cool.
  • Add 7-up.
  • Add marshmallows, crushed pineapple, and bananas.
  • Pour into a 9 x 13 pan or glass dish.
  • Put in refrigerator to set.
  • To make frosting, mix sugar, flour, juice and egg in saucepan and heat until thickened.
  • Wait for mixture to cool.

3 tablespoons sweet pickle relish

2 cups ground bologna

½ cup creamy salad dressing (e.g. Miracle Whip)
1 (8 ounce) package cream cheese, softened
⅓ cup finely chopped walnuts
3 tablespoons pimento-stuffed green olives, chopped
2 tablespoons milk
2 cups shredded Cheddar cheese
1 (8 ounce) package cream cheese, softened
3 tablespoons creamy salad dressing (e.g. Miracle Whip)
⅛ teaspoon onion salt
⅛ teaspoon garlic salt
⅛ teaspoon celery salt
2 (8 ounce) packages cream cheese, softened
3 tablespoons milk, or as needed
1 (1 pound) loaf white bread, sliced horizontally
4 medium sweet pickles, chopped
1 (2 ounce) bottle diced pimento, drained

Steps:

  • In a small bowl, mix together the ground ham, 1/2 cup of salad dressing, 3 tablespoons of relish, and onion. Set aside in the refrigerator.
  • In another bowl, mix together the ground bologna, 3 tablespoons of relish, and 1/2 cup of salad dressing. Set aside in the refrigerator.
  • In a third bowl, stir together 1 package of cream cheese, walnuts, green olives, and 2 tablespoons of milk. Set aside in the refrigerator.
  • In a fourth bowl, mix together the Cheddar cheese, 1 package of cream cheese, 3 tablespoons of salad dressing, onion salt, garlic salt, and celery salt. Set aside in the refrigerator.
  • Spread the ham spread onto the bottom slice of bread, then top with another slice. Cover the next slice with bologna spread, and top with another slice. Spread the next slice with the nut spread, and then top with another slice of bread. Top this slice with the Cheddar cheese spread. Top with one more slice of the bread. Smooth the sides with a large spatula or knife, and refrigerate for about 30 minutes before 'frosting' to make it easier.
  • Mix together the 2 remaining packages of cream cheese, and enough milk to make it spreadable. Frost the sides of the loaf first, then the top. Decorate with sweet pickles and pimentos to your liking.
