1/2 cup dry bread crumbs
2 teaspoons pepper
1-1/2 teaspoons dried oregano
1-1/2 teaspoons dried parsley flakes
1 teaspoon salt
1 teaspoon crushed red pepper flakes
1/3 cup all-purpose flour
2 large eggs, lightly beaten
1 package (9 ounces) refrigerated cheese ravioli
Oil for frying
Grated Parmesan cheese, optional
42 lollipop sticks
Warm marinara sauce and prepared pesto

Steps:

  • In a shallow bowl, mix bread crumbs and seasonings. Place flour and eggs in separate shallow bowls. Dip ravioli in flour to coat both sides; shake off excess. Dip in egg, then in crumb mixture, patting to help coating adhere., In a large electric or cast-iron skillet, heat 1/2 in. of oil to 375°. Fry ravioli, a few at a time, until golden brown, 1-2 minutes on each side. Drain on paper towels. Immediately sprinkle with cheese if desired. Carefully insert a lollipop stick into the back of each ravioli. Serve warm with marinara sauce and pesto.

1 1/2 tablespoons pine nuts
2 cups fresh basil leaves, rinsed and dried
1 tablespoon grated Parmesan
2 cloves garlic, peeled and roughly chopped
1/4 cup extra-virgin olive oil
3/4 cup plain Greek yogurt
Kosher salt and freshly ground black pepper
1/3 cup all-purpose flour
2 large eggs
2/3 cup Italian-style seasoned dried breadcrumbs
16 refrigerated cheese ravioli
Vegetable oil, for frying
Grated Parmesan, for serving

Steps:

  • For the pesto dip: Toast the pine nuts in a small skillet over low heat, stirring occasionally, until golden brown, about 5 minutes.
  • Combine the toasted pine nuts, basil, Parmesan and garlic in a food processor. Pulse until roughly chopped. With the motor running, pour the olive oil through the feed tube and process until smooth. If needed, scrape down the sides of the bowl with a rubber spatula and continue processing.
  • Transfer the pesto to a small bowl and stir in the yogurt, 1/2 teaspoon salt and 1/4 teaspoon pepper. Cover and refrigerate if not serving immediately.
  • For the ravioli: Place the flour in a shallow bowl. Whisk together the eggs in a second shallow bowl. Place the breadcrumbs in a third shallow bowl.
  • Dredge a ravioli in the flour, shake off any excess, then dip it in the eggs. Let any excess egg drip back into the bowl, then immediately coat the ravioli in the breadcrumbs, pressing to adhere them to all sides. Repeat with the remaining ravioli.
  • Pour 2 inches of vegetable oil into a large heavy-bottomed pot and set over medium-low heat. Attach a deep-fry thermometer to the side of the pot and heat until the oil reaches 360 degrees F. Line a plate with paper towels.
  • Fry the ravioli in batches, turning them as needed, until golden brown and crispy, 1 to 2 minutes total. Transfer to the paper towel-lined plate with a slotted spoon. Return the oil to 360 degrees F between each batch.
  • Once the ravioli have cooled slightly, insert a lollipop stick into each ravioli. Sprinkle them with Parmesan. Serve the ravioli pops with the pesto dip.

1 teaspoon garlic powder
1/4 teaspoon salt
1 package (25 oz) frozen cheese-filled ravioli, thawed
1 1/2 cups marinara sauce, heated

Steps:

  • In 6-quart Dutch oven, heat 1 inch oil to 360°F.
  • In shallow bowl, slightly beat eggs. In another shallow bowl, mix bread crumbs, cheese, garlic powder and salt. Dip thawed, uncooked ravioli in eggs, then coat with crumb mixture, shaking off excess.
  • Fry ravioli, 10 at a time, in hot oil 20 to 30 seconds or until golden. Drain on paper towels. Serve with marinara sauce.

These finger-friendly treats are the triple threat: They take just minutes to make, don't require an oven and, perhaps best of all, can be made up to a day in advance. The setup couldn't be simpler: Combine your cookie flavor of choice with tangy cream cheese in a food processor, then roll the mixture into balls, skewer them with lollipop sticks, dunk them in candy melts and finish 'em off with a shower of sprinkles.

18 vanilla sandwich cookies with cream filling, such as Golden Oreo Cookies
4 ounces cream cheese
1 cup red candy melts
1 cup white candy melts
1 cup blue candy melts
2 tablespoons vegetable oil (optional)
Red, white and blue sprinkles, for topping

Steps:

  • Add the sandwich cookies to the bowl of a food processor and pulse just until roughly chopped. Add the cream cheese and continue pulsing until the mixture is smooth and there are no large visible pieces of cookie.
  • Line a baking sheet with parchment. Using your hands, pinch off about 14 pieces of the mixture and roll them into 1-inch balls. Arrange the balls on the baking sheet then insert a lollipop stick into each and freeze them until hardened, about 20 minutes.
  • Once the cookie pops have hardened, place the red candy melts in a small microwave-safe bowl with 2 teaspoons oil if desired (see Cook's Note). Microwave in 30-second intervals, stirring in between, until melted and smooth, about 1 minute. Dip one-third of the chilled cookie pops into the melted red candy melts, shaking off any excess, and then immediately top them with the corresponding red sprinkles.
  • Return the cookie pops to the baking sheet (see Cook's Note) and repeat with the blue and white candy melts and the remaining chilled cookie pops.
  • Refrigerate all of the cookie pops until their candy melt coating has fully hardened, an additional 5 minutes, then serve.

1 1/3 cups mayonnaise
2 cups finely diced yellow onions (about 2 medium onions)
1 cup freshly grated Parmesan cheese
1 jalapeno, seeded and diced (optional)
1 teaspoon freshly ground black pepper
2 tablespoons chopped fresh chives, plus more for garnish
Baguette toasts or veggies (such as cherry tomatoes, mini sweet peppers, carrot sticks and celery sticks), for serving

Steps:

  • Preheat the oven to 400°F.
  • In a stand mixer fitted with the paddle attachment, combine the cream cheese, mayonnaise, onions, Parmesan, jalapeno, pepper and the 2 tablespoons chives. Beat on medium speed until combined. (Alternatively, combine the ingredients in a medium bowl and stir until combined.)
  • Transfer the dip to a 9- or 10-inch pie plate or square baking dish, smoothing it into an even layer.
  • Bake the dip until it is dark golden brown on top and bubbly, about 25 minutes.
  • Remove the dip from the oven, let cool slightly, then garnish with the remaining chives and serve with toasts or veggies for dipping.

One 20-ounce package refrigerated cheese or meat tortellini (see Cook's Note)
1/3 cup unsalted pistachios, toasted (see Cook's Note)
4 cups lightly packed basil leaves
1/3 cup grated Parmesan, plus more for serving
3 cloves garlic, roughly chopped
Kosher salt and freshly ground black pepper
1/2 cup olive oil

Steps:

  • Bring a large pot of salted water to a boil. Add the tortellini and cook according to package directions. Drain the tortellini and transfer them to a large bowl.
  • Meanwhile, add the nuts to a small skillet over low heat. Cook, shaking often, until the nuts are toasted and fragrant, 3 to 5 minutes.
  • Combine the toasted pistachios, basil leaves, Parmesan, garlic, 1/4 teaspoon salt and 1/8 teaspoon pepper in a blender. Blend for 15 seconds, and then with the blender running, slowly stream in the olive oil. Continue blending the pesto, scraping down the sides as needed, until it is pureed. Taste and season the pesto with additional salt and pepper as desired. Set the pesto aside.
  • While the tortellini are still hot, add the prepared pesto and toss to combine. Serve warm or chilled, garnished with Parmesan.
