Meet the Cook: Try these as an accompaniment to hamburgers or fried fish, or with steaks on the grill. The recipe's from my mom, and it's one of her most popular. 2 large sweet onions
1 egg, lightly beaten
2/3 cup water
1 tablespoon canola oil
1 teaspoon lemon juice
1 cup all-purpose flour
1-1/2 teaspoons baking powder
1 to 1-1/4 teaspoons salt
1/8 to 1/4 teaspoon cayenne pepper
Additional oil for deep-fat frying

Steps:

  • Cut onions into 1/2-in. slices; separate into rings. Place in a bowl; cover with ice water and soak for 30 minutes. , Meanwhile, combine the egg, water, oil and lemon juice in a bowl. Combine the flour, baking powder, salt and cayenne; stir into egg mixture until smooth. , Drain onion rings; dip into batter. In an electric skillet or deep-fat fryer, heat 1 in. of oil to 375°. Fry onion rings, a few at a time, for 1 to 1-1/2 minutes one each side or until golden brown. Drain on paper towels.

Number Of Ingredients 10

3/4 cup milk or water
5 tablespoons unsalted butter, cut into small pieces
1/2 teaspoon salt
Finely grated zest of 1/2 lemon
1 cup Italian "00" flour* or 1 cup all-purpose flour
3 large eggs
6 cups vegetable oil for deep-frying
1/2 cup sugar
1 tablespoon cinnamon
Special equipment: a deep-fat thermometer

Steps:

  • Bring milk, butter, salt, and zest to a boil in a 2-quart heavy saucepan over high heat, stirring just until butter is melted, then reduce heat to moderate. Add flour all at once, stirring vigorously with a wooden spoon until mixture is smooth and pulls away from side of pan, 1 to 2 minutes. Remove from heat and cool slightly, 1 to 2 minutes. Add eggs 1 at a time, stirring vigorously after each addition until smooth.
  • Heat 2 inches of oil in a 4-quart deep heavy pot (preferably a cast-iron Dutch oven) over moderately high heat until thermometer registers 360°F.
  • Sift together sugar and cinnamon into a bowl.
  • While oil is heating, roll rounded tablespoons of dough into balls with dampened hands and put them on an oiled sheet of plastic wrap. Pick up a ball and make a hole in the middle with your thumb, then insert the handle of a wooden spoon in the hole. When oil reaches 360°F, carefully lower dough on handle into oil, then gently widen hole with a circular motion of spoon until dough rises to surface, about 30 seconds (don't worry if some break open). Remove spoon, leaving buñuelo cooking in oil, and repeat with 4 more balls. Fry, turning occasionally, until deep golden and cooked through, 6 to 7 minutes. Drain briefly on paper towels. Turn warm buñuelos in sugar mixture to coat.
  • Form and fry more buñuelos, in batches of 5, in same manner.

These are very delicate and the best I have had. My ex was a fanatic when it came to onion rings, and thought this recipe to be the best he ever had. Have also made other veggies in this batter. Can be refrigerated or frozen, then reheated in oven or microwave. Carbonated water can be substituted for beer in this recipe.

1 quart vegetable oil for frying
1 cup all-purpose flour
1 cup beer
1 pinch salt
1 pinch ground black pepper
4 onions, peeled and sliced into rings

  • In a large, deep skillet, heat oil to 365 degrees F (180 degrees C).
  • In a medium bowl, combine flour, beer, salt, and pepper. Mix until smooth. Dredge onion slices in the batter, until evenly coated. Deep fry in the hot oil until golden brown. Drain on paper towels.

Rosettes are delicate fried pastries common throughout the world. This easy, traditional recipe is simply made with eggs, sugar, milk, flour, and oil.

2 large eggs (slightly beaten)
2 teaspoons sugar
1 cup milk
1/4 teaspoon salt
1 cup flour (all-purpose)
1 tablespoon vanilla extract
4 cups canola (for frying)

Steps:

  • Gather the ingredients.
  • Place 3 inches of canola oil in a deep fryer or deep, heavy-bottomed saucepan, and heat to 375 F, using a candy/frying thermometer clipped to the pot. Attach the desired rosette shapes to your handle (some handles can accommodate 2 rosette shapes).
  • While oil is heating, prepare the batter. In a medium bowl, add sugar to eggs and whisk to combine.
  • Add milk and whisk to combine.
  • Measure the flour correctly and whisk together with the salt.
  • Transfer to the bowl with eggs and milk and beat until smooth. Add the vanilla and mix again. (The consistency should be that of heavy cream. If it is too thick, add a little milk. If the batter is too thick, the rosettes will not be crisp.)
  • When ready to fry, immerse the rosette iron with attached shape(s) into the hot oil until thoroughly heated (1 minute or so). Lift iron out, shaking off excess fat and blotting onto a paper towel. Dip into prepared batter only to the depth of the form, not over the top as the excess batter will have to be scraped off after frying in order to take the rosette off the form.
  • Dip forms into the hot oil. When foamy bubbling stops and/or rosettes are a golden brown, lift iron out of oil, allowing excess oil to drain off back into the fryer or saucepan.
  • Remove the rosettes using a skewer to push them off or tap the back side of the rosette forms with a wooden spoon. Drain rosettes open side down on paper towels so excess oil will run out.
  • Dip the rosette iron into the hot fat, blot lightly on paper towels and then dip into the batter. Continue in this manner until all the batter is used up. Dust the rosettes with confectioners sugar while still warm or when cool, or just before serving.
  • Serve and enjoy.

¾ cup shortening
1 egg, beaten
¼ cup water
1 teaspoon distilled white vinegar

Steps:

  • Combine flour and salt. Cut in shortening with pastry blender until mixture resembles coarse meal. Combine egg and water, and sprinkle lightly over flour mixture. Add vinegar, and lightly stir with a fork until dry ingredients are moistened. Shape into a ball.
  • Wrap dough in wax paper. Chill for at least one hour. Use as directed in any fried pie recipe.

1 large onion, cut into 1/4-inch slices
1 ¼ cups all-purpose flour
1 teaspoon baking powder
1 teaspoon salt
1 egg
1 cup milk, or as needed
¾ cup dry bread crumbs
seasoned salt to taste
1 quart oil for frying, or as needed

Steps:

  • Heat the oil in a deep-fryer to 365 degrees F (185 degrees C).
  • Separate the onion slices into rings, and set aside. In a small bowl, stir together the flour, baking powder and salt.
  • Dip the onion slices into the flour mixture until they are all coated; set aside. Whisk the egg and milk into the flour mixture using a fork. Dip the floured rings into the batter to coat, then place on a wire rack to drain until the batter stops dripping. The wire rack may be placed over a sheet of aluminum foil for easier clean up. Spread the bread crumbs out on a plate or shallow dish. Place rings one at a time into the crumbs, and scoop the crumbs up over the ring to coat. Give it a hard tap as you remove it from the crumbs. The coating should cling very well. Repeat with remaining rings.
  • Deep fry the rings a few at a time for 2 to 3 minutes, or until golden brown. Remove to paper towels to drain. Season with seasoning salt, and serve.

3 large Vidalia onions, cut into 1/4-inch slices, and separated into rings
1 ½ cups all-purpose flour
2 cups milk
1 ½ cups yellow cornmeal
2 cups all-purpose flour
1 tablespoon white sugar
1 tablespoon salt
2 teaspoons paprika
1 teaspoon cayenne pepper, or more to taste
½ teaspoon dried thyme
¼ teaspoon fresh-ground black pepper
1 quart oil for deep frying

Steps:

  • Line 2 baking sheets with waxed paper; set aside. Line 2 additional baking sheets or 1 tray with paper towels; set aside.
  • Place 1 1/2 cups of flour in a shallow bowl. Pour the milk into a second shallow bowl. In a third bowl, stir together the cornmeal, 2 cups flour, sugar, salt, paprika, cayenne pepper, thyme, and black pepper.
  • Dip the onion rings first into the plain flour, then into the milk, and last into the cornmeal mixture. Place the breaded rings on the wax paper-lined baking sheets.
  • Heat the oil in a large heavy skillet over medium-high heat, or deep-fryer to 365 degrees F (185 degrees C).
  • Fry the onion rings a few at a time in the hot oil so they are not crowded, until golden brown. Drain on paper towel-lined baking sheets, and serve immediately.
