Time 50m

Number Of Ingredients 9

2 x 410g cans sliced peaches , drained
120g golden caster sugar , plus extra for sprinkling
1 tsp ground ginger
150g plain flour
1 tsp baking powder
½ tsp ground cinnamon
150g butter , chilled and cubed, plus extra for greasing
1 small egg
vanilla ice cream , to serve

  • Spoon the dough in dollops on top of the peaches, creating a good covering, but leave some gaps for the dough to spread into. Sprinkle with a little caster sugar then bake for 40 mins, until golden. Serve with scoops of vanilla ice cream.

  • New Old-Fashioned. The old-fashioned is a favorite bourbon cocktail and the simple formula lends itself to new creations. By switching out the fruits, you can create an entirely new old-fashioned.
  • White Peach Julep. Peaches are a nice addition to the most popular drinks and the famous mint julep inspired this recipe. You'll still use bourbon and fresh mint but, from there, things get very peachy in the white peach julep.
  • Peach Cobbler. You will not find too many peach-flavored vodkas, but a few vodka brands do offer the flavor. Ciroc Peach Vodka is one and it's the star of this delicious peach cobbler.
  • Peach Punch. New Amsterdam Vodka also includes peach in its portfolio and it's the featured ingredient in this peach punch recipe. You'll love the blend of peach, lime, and orange flavors that are accented with elderflower liqueur.
  • White Peach and Mango Sangria. Sangrias always make a splash at parties. When you want one that's a little lighter and brighter, turn to the white peach and mango sangria recipe.
  • Bliss on the Beach. One of the most popular peach schnapps cocktails you'll mix up is the bliss on the beach. The recipe for this refreshing vodka highball is quite simple: choose your vodka, then add peach schnapps and crème de cassis.
  • Peach Margarita. This recipe creates the peachiest of margaritas. Building on the basic margarita, it adds both peach schnapps and a fresh peach to the mix.
  • Norina. You will want to skip the schnapps and splurge on a really good peach liqueur for this martini. The Norina could not get any easier, either. Simply shake dry vermouth and peach liqueur and you have a fabulous cocktail ready for all your summer dinner parties.
  • Frisco 49. A Champagne cocktail like the French 75 is an excellent candidate for a fruity twist. Things get very interesting when you bring a little peach and pear into the mix for a Frisco 49.
  • Sparkling Peach Sunrise. The sparkling peach sunrise is a twist on the tequila sunrise. It uses fresh peach juice, citrus soda, and grenadine for the signature effect and a little sweetness.
