Time 1h

Yield 4

Number Of Ingredients 12

1 cup brown rice
2 cups water
1 tablespoon olive oil
4 skinless, boneless chicken breast halves, pounded 1/2-inch thick
coarse salt to taste
2 tablespoons olive oil
2 cloves garlic, chopped
1 pinch red pepper flakes, or to taste
1 bunch fresh spinach leaves, trimmed and rinsed
2 tablespoons pine nuts
2 tablespoons crumbled goat cheese
½ lemon, juiced

Steps:

  • Bring the brown rice and water to a boil in a saucepan. Reduce heat to medium-low, cover, and simmer until the rice is tender and the liquid has been absorbed, 45 to 50 minutes.
  • While rice is cooking, heat 1 tablespoon olive oil in a large skillet over medium heat. Sprinkle chicken breasts with salt and pan-fry in the hot oil until golden brown on both sides and no longer pink in the center, 5 to 8 minutes per side. Set chicken aside.
  • Heat 2 tablespoons olive oil in the skillet; cook and stir garlic and pepper flakes in hot oil just until fragrant, about 1 minute; stir in spinach and cook, stirring often, until wilted, about 2 more minutes. Sprinkle with salt if desired.
  • Spread cooked brown rice onto a serving platter and arrange chicken breasts over the rice. Spread spinach over chicken, sprinkle with pine nuts and goat cheese, and squeeze lemon juice over the dish to serve.

Spinach, Pear and Chicken Salad image

Provided by Food Network Kitchen

Time 25m

Yield 4 servings

Number Of Ingredients 12

1 large skinless, boneless chicken breast (about 12 ounces)
Kosher salt and freshly ground pepper
3 1/2 tablespoons extra-virgin olive oil
1/3 cup dried cranberries
1 tablespoon apple cider vinegar
1 tablespoon fresh lemon juice
2 teaspoons whole-grain mustard
8 cups baby spinach (about 5 ounces)
4 endives, cut lengthwise into thin wedges
1/3 cup almonds, toasted and roughly chopped
1 pear, thinly sliced
1/4 cup shredded gruyere cheese

Steps:

  • Slice the chicken breast in half horizontally to make 2 thin cutlets; season with salt and pepper. Heat 1/2 tablespoon olive oil in a large nonstick skillet over medium-high heat. Add the chicken and cook until lightly golden and cooked through, 4 to 5 minutes per side. Transfer to a plate to cool, then thinly slice.
  • Meanwhile, combine the cranberries, vinegar and 1 tablespoon water in a small microwave-safe bowl. Cover with plastic wrap and microwave 45 seconds to plump the cranberries. Let cool.
  • Whisk the cranberry-vinegar mixture, lemon juice, mustard, 1/2 teaspoon salt, and pepper to taste in a large bowl. Whisk in the remaining 3 tablespoons olive oil in a slow stream until blended. Add the chicken, spinach, endives, almonds, pear, about half of the cheese, and salt and pepper to taste; toss to combine. Divide among bowls and top with the remaining cheese.

  • In a large pan, heat olive oil over medium-high heat. Cook chicken breasts, about 5-6 minutes on both sides, or until chicken is cooked through completely. Alternative method: you can grill or bake chicken in the oven (bake at 350°F for at least 1 hour). Then set chicken aside.
  • To make honey dijon dressing: combine the mustard, apple cider vinegar, olive oil, garlic, salt/pepper into a mason jar. Add in a tablespoon of water at a time, to thin out, until desired dressing consistency is reached; about 2-3 tablespoons should do the trick.
  • Evenly divide spinach among two large salad bowls. Next, top with red onions, tomatoes, almonds, and avocados. Slice chicken breasts and top directly onto salads. Lastly, drizzle honey dijon dressing all over salads and enjoy!
