Steps:
- Heat oil or broth in large, deep skillet. Fry ground beef and onions until cooked through.
- In the meantime, blend tomatoes and garlic in food processor or blender until liquefied. Pour into skillet, over fried ground beef and onions.
- Mix in the rest of the ingredients and bring to a boil.
- Reduce heat, cover and simmer at least 30 minutes. Add water to prevent burning and to thin out the sauce. The longer it simmers, the more flavorful it gets.
- *NOTE: I follow the HCG protocol that allows limited use (up to 1TB) of extra virgin olive oil or extra virgin coconut oil per day. If this is not your case, replace oil with homemade beef bone broth.
TRADITIONAL SHRIMP COCKTAIL - HCG PHASE 2
Use cooked, raw or frozen shrimp. The sauce is perfectly spicy. This recipe counts for 1 protein and 1 vegetable, so the serving is a little small. BROCCOLI CHICKEN SOUP (HCG - PHASE 2)
I had broccoli the other night and didn't want to cook (or throw out) the stem, so I cut it up and decided to use it in a soup. This was my result. =) It kind of reminds me of some kind of soup you could get in a Chinese restaurant for some reason. =) Also, this recipe is for two servings, so only eat half of it if you're on the HCG diet. If you want to add or remove certain spices, feel free to do so!! =)

Steps:
- Meatballs: In a small bowl, combine first 9 ingredients (ground chicken, minced onion, garlic, sage, marjoram, thyme, onion powder, garlic powder and Melba toast crumbs). Form into small meatballs (about 6).
- Broth: In a pot, combine broth, garlic and remaining spices (bay leaf, cayenne, salt, pepper). Bring to a boil.
- Add meatballs to the broth, reduce heat, cover and cook for 30 minutes, until meatballs are cooked through. Add celery the last 5-10 minutes of cooking.
- Add apple cider vinegar just before serving.

- In a large saucepan, combine asparagus, chopped onion, and 1/2 cup chicken broth. Cover, and bring to a boil over high heat. Reduce heat, and simmer uncovered until asparagus is tender, about 12 minutes. Process the mixture in a blender to puree the vegetables. Set aside.
- In the same saucepan, melt the butter over medium-low heat. Stir in the flour, salt, and pepper. Cook, stirring constantly for 2 minutes. Whisk in the remaining chicken broth, and increase the heat to medium. Cook, stirring constantly until the mixture boils. Stir in the asparagus puree and the milk.
- Put the sour cream in a small bowl, and stir in a ladleful of the hot soup. Add the sour cream mixture and the lemon juice to the soup. Stir while heating the soup to serving temperature, but don't allow it to boil. Serve immediately.

QUICK SAUTEED ASPARAGUS - HCG FRIENDLY
A quick, flavorful recipe I came up with that fits into the Dr. Simeons Hcg Protocol during VLCD phase. Add spices to taste. **Trimming the Asparagus: Just hold each end and snapping it -- it will naturally break off the tough part. You keep the flower end for cooking (and should have nice longer spears). If you like, the "tough" ends can be kept to be used in vegetable stock or for other used later. - Add asparagus in a saute pan along with water over medium heat.
- Stir frequently, for approximately 2 -3 minutes.
- Add remaining spices, squeezed juice of half lemon and more water if needed; cover and cook for 3 minutes or until crisp-tender.

ASPARAGUS SOUP
Steps:
- 1. Melt the butter in the oil in a pot over medium-low heat. Add the onions and garlic; cook until tender, stirring occasionally, about 15 minutes. Add the broth; heat to boiling.
- 2. Trim woody ends off the asparagus. Reserve the tips, then cut the stalks into 1-inch pieces; add to broth. Add the carrots, parsley, tarragon, salt, pepper and cayenne to broth. Simmer, partially covered, until the vegetables are tender, about 45 to 50 minutes.
- 3. Puree in batches in a blender or a food processor, then strain soup back into the pot.
- 4. Before serving, add the asparagus tips and simmer over medium-low heat until the tips are tender and soup is hot, about 10 minutes.
- 5. Serve with a dollop of sour cream, if desired, and a sprinkling of diced tomato.
