Ultimate Veggie Pizza image

Make the BEST veggie pizza at home! This mouthwatering vegetarian pizza recipe features fresh cherry tomatoes, bell peppers, artichoke, spinach and more. Recipe yields two 11-inch pizzas or 1 large (about 6 to 8 servings).

1 batch easy whole wheat pizza dough or 1 pound store-bought pizza dough
1 cup pizza sauce or marinara
2 cups baby spinach
2 to 3 cups (8 to 12 ounces) shredded low-moisture part-skim mozzarella cheese
1/2 cup jarred or canned artichoke, cut into 1" pieces
1/2 cup fresh red or orange bell pepper, cut into narrow 2″ strips
1/2 cup red onion, cut into thin wedges
1/2 cup halved cherry tomatoes
1/2 cup pitted Kalamata olives, halved lengthwise
1/2 cup sliced almonds (optional)
Optional garnishes: Fresh basil (small leaves or torn), red pepper flakes and/or finely grated Parmesan cheese

Steps:

  • Preheat the oven to 500 degrees Fahrenheit with a rack in the upper third of the oven. If you're using a baking stone or baking steel, place it on the upper rack. Prepare dough through step 5.
  • Spread pizza sauce evenly over the two pizzas, leaving about 1 inch bare around the edges. Evenly distribute the spinach on top of the sauce, followed by the cheese (use all three cups if you want a cheesy pizza as shown here).
  • Top the pizzas with artichoke, bell pepper, red onion, tomatoes, olives and almonds (if using).
  • Bake pizzas individually on the top rack until the crust is golden and the cheese is golden and bubbly, about 10 to 12 minutes (or significantly less, if you're using a baking stone/steel-keep an eye on it).
  • Transfer pizzas to a cutting board and sprinkle with with fresh basil, red pepper flakes and Parmesan, if using. Slice and serve! Leftover pizza keeps well in the refrigerator for 4 days, or for several months in the freezer.

This is a good Friday night or any night pizza. I made this half-n-half, putting the mushrooms and sliced tomato on my half. His half had only the peppers and black olives. You can also substitute any vegetables you like.

1 (13 7/8 ounce) can pillsbury refrigerated pizza dough
1/2 cup pizza sauce or 1/2 cup spaghetti sauce
1 (2 1/2 ounce) can black olives
1/2 cup red bell pepper, in strips
1/2 cup green pepper, in strips
1 cup mushroom, sliced
8 ounces mozzarella cheese, shredded
1/2 cup tomatoes, sliced (I used the Roma variety) (optional)

Steps:

  • Preheat oven to 400°F.
  • Spread sheet pan with pizza dough.
  • Prebake for 8 minutes.
  • Take crust out, and let cool a little.
  • Cover with sauce. Spread half of the cheese evenly over the sauce and add vegetables. Sprinkle on remaining cheese and bake for 8 to 10 minutes, or until cheese melts.

1/2 cup Hidden Valley® Original Ranch® dressing
1/4 cup jarred marinara or spaghetti sauce
1 cup mozzarella cheese, shredded
4 medium whole wheat flour tortillas (or 4 whole wheat English muffins, split)

Steps:

  • Preheat oven to 400 degrees. Cover two large baking sheets with foil (for easy cleanup) and spray with vegetable oil spray. Bake the tortillas blind (empty) for 4-5 minutes, turning halfway through. Remove from oven and set aside to cool enough for kids to handle. (If using English muffins, simple toast on lowest setting until just barely toasted.) Meanwhile, in a small bowl, mix Hidden Valley® Original Ranch® dressing with marinara sauce. Spread a few tablespoons of sauce on each tortilla, followed by the cheese and veggies. Bake until cheese is bubbly throughout, about 6-8 minutes.;
  • Veggies laid out in bowls or on a cutting board: finely sliced red and yellow peppers, grated zucchini, finely chopped sweet onion. Sliced tomato, sliced black olives .

  • Roast Hard Veggies: Preheat oven to 450°F (232°C). Place your pizza pan in the oven to heat up as well. Halve eggplant and zucchini lengthwise then slice into ¼ inch pieces. Spread onto a baking sheet and drizzle with 1 Tbsp of oil. Roast for about 15 minutes, or until slightly tender. Do no turn off oven when veggies have finished.
  • Saute Soft Veggie: Meanwhile, slice onion and peppers. Add to a saute pan with 1 Tbsp of oil and cook over medium/high until slightly soft, about 5 minutes. Remove from pan and add spinach. Cook until completely wilted down, about 3 minutes.
  • Assemble: Roll out pizza dough onto parchment paper, lightly brushing the top with remaining oil. Spread on tomato sauce, sprinkle with cheese, then top with all your veggies. Slide the parchment paper and pizza onto your preheated pizza pan, then bake for 15 minutes, or until crust is golden brown. Serve warm with salt and/or pepper flakes as needed.
