CHICKEN FRICASSéE WITH SHOESTRING POTATOES



Chicken Fricassée with Shoestring Potatoes image

Shredded chicken, quickly heated in a blended, creamy mixture of heavy cream, cream cheese, and corn, topped with cheese and shoestring potatoes, and then baked.

Number Of Ingredients 8

2.2 lbs chicken thighs (or 1 kg)
1 cup heavy whipping cream
1 can whole corn kernel (drained, 15.25 oz or 432 g)
1 package cream cheese (softened, 8 oz)
1/2 to 3/4 sliced green olives
Salt and ground black pepper to taste
2 cups shredded mozzarella or other melting cheese of your choice
Store-bought shoestring potatoes (enough to form a single layer)

Steps:

  • Preheat to 350 degrees F.
  • Boil chicken in either chicken stock or water with salt and ground black pepper until fully cooked. Remove from the liquid, let cool enough to handle, and roughly shred. Place into a medium pot and reserve.
  • Blend heavy cream, corn, and cream cheese in a blender until obtaining a thick, creamy, homogeneous mixture. You may need to stop blender more than once and stir. Pour over the chicken, add the sliced olives, salt and pepper to taste, and cook mixture on medium heat, stirring, for 2-4 minutes.
  • Place mixture into a medium baking dish, top evenly with the shredded cheese, and bake for about 20 minutes. Remove from the oven and top with the shoestring potatoes. Serve by itself, with white rice, or a fresh salad. Enjoy!

Chicken fricassee is a delicious recipe in itself. But make it into a pizza--Brazilian pizza to boot!--and it is absolutely scrumptious. Give this easy Brazilian pizza a try in your own kitchen, and your tastebuds will thank you!

PIZZA CRUST
1 1/2 cups all-purpose flour
2 tsp quick yeast
1/2 cup warm water
1/8 cup olive oil
1/2 tsp salt
1 tsp white sugar
CHICKEN
2 medium chicken breasts
salt
3-4 cups water
butter
milk
GARLIC CREAM SAUCE
2 Tbsp salted butter
1 cup heavy cream
1 cube chicken bouillon
1/4 cup minced onion
2 tsp garlic powder
1/2 cup milk
OTHER TOPPINGS
1/2 cup sliced green olives
1 cup corn kernels (frozen or canned), drained
1/2 cup crushed potato chips
mayonnaise (optional)
2 Tbsp oregano

Steps:

  • 1. Mix together the warm water and yeast and allow to sit for 5 minutes, or until it begins to bubble. 2. Add the oil, water, and salt. Stir. Then add all the flour and mix well. Knead for 2 or 3 minutes. Let sit until doubled in size, about 1 hour. 3. Fry the chicken breast in milk and butter until the outer part begins to cook. Add water and salt. Boil until the chicken breast is cooked through. 4. Remove the chicken breast from the water and allow to cool. Shred the chicken thoroughly. 5. Fry the onion in butter. Add cream, milk, chicken bouillon, and garlic powder. 6. Roll out the pizza crust to about 1/2 inch thick. (It should be on the thinner side.) 7. Spread the shredded chicken evenly over the pizza crust. 8. Spread the cream sauce over the chicken, making sure to cover all the chicken. (Any pieces of chicken left uncovered by sauce will become dry during baking, so make sure that you coat them well with the sauce!) 9. Top the pizza with sliced green olives and drained corn kernels. Then sprinkle with crushed potato chips (or batata). 10. Top with shredded mozzarella cheese. Sprinkle with oregano. 11. Bake at 400F (220C) for 15-20 minutes, or until the crust is cooked through.

2 tablespoons olive oil
1 small onion, chopped
2 cloves garlic, crushed
2 pounds shredded cooked chicken breast
salt and ground black pepper to taste
2 tablespoons all-purpose flour
3 cups chicken broth
1 (7.6 ounce) can table cream
¼ cup chopped fresh parsley, or to taste
1 (15 ounce) can corn, drained
1 ½ cups chopped olives
1 cup cream cheese
¾ (7 ounce) can potato sticks

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a baking dish with butter.
  • Heat olive oil in large skillet over medium heat. Add onion and garlic; cook and stir until softened, about 5 minutes. Add chicken; cook and stir until heated through, 3 to 5 minutes. Season with salt and pepper. Remove from heat.
  • Dissolve flour in chicken broth in a saucepan over medium heat. Bring to a boil; cook, stirring often, until broth thickens, about 5 minutes. Pour in cream and parsley; mix well until smooth.
  • Layer chicken, cream mixture, corn, and olives in the greased baking dish. Cover with cream cheese and potato sticks.
  • Bake in the preheated oven until top is golden, about 20 minutes.
