CAKEY STRAWBERRY COBBLER
This strawberry-studded cobbler comes together with just 10 minutes of prep

Steps:
- Preheat oven to 350°F. Gently stir sliced strawberries, lemon zest, lemon juice, and ¼ cup of the sugar in a large bowl until totally combined. Let strawberry mixture stand, stirring occasionally, until juicy, about 15 minutes.
- Place butter in a 13- x 9-inch baking dish, and put dish in pre-heated oven until butter is melted, 8 to 10 minutes. Remove dish from oven.
- Whisk together flour, baking powder, salt, baking soda, and remaining ¾ cup sugar in a medium bowl until combined. Whisk together buttermilk and vanilla in a glass measuring cup. Whisk buttermilk mixture into flour mixture, and continue to whisk until batter is smooth. Pour mixture evenly over melted butter in hot baking dish. (Do not stir.) Using a slotted spoon, scatter strawberry mixture evenly over batter. Drizzle 3 tablespoons of accumulated juice from bottom of bowl over strawberries. Discard any remaining juice, or reserve for another use.
- Bake in preheated oven until batter is puffed and slightly golden in the center and dark golden brown around edges, 40 to 45 minutes. Cool on a wire rack at least 15 minutes. Serve warm with whipped cream or ice cream.
FRESH STRAWBERRY COBBLER
Steps:
- Preheat oven to 375. F
- Grease a 1.8 liter casserole dish. (my oval corning ware dish was 11 x 8½ x2)
- In a medium bowl, add strawberries and sugar.
- Stir to coat strawberries in sugar and set aside.
- In a large bowl whisk together flour, baking powder, salt and sugar.
- Add in milk, vanilla extract and melted butter.
- Stir just until combined. A few lumps are ok so don't overdo it.
- Pour batter evenly into dish.
- Spoon strawberries evenly on top of batter. Do NOT stir.
- Baked for 35-40 minutes or until golden. (may need to adjust time if using a different size dish)
- Serve as is or with vanilla ice cream or frozen whipped cream.

- Beat 1/4 cup softened butter at medium speed with an electric mixer; gradually add 3/4 cup sugar, beating well.
- Add egg and vanilla, beating well.
- Combine 1 1/4 cup flour, baking powder, and salt; add to butter mixture alternately with milk, beginning and ending with flour mixture.
- Spoon mixture into a greased 8-inch square baking dish.
- Arrange strawberries on top, cut side down.
- Combine 1/4 cup flour and 1/4 cup sugar; cut in 1/4 cup chilled butter with pastry blender until crumbly.
- Sprinkle over strawberries.
- Bake at 350 degrees for 1 hour or until a wooden pick inserted in center comes out clean.
- Serve warm with ice cream or whipped cream.

Delicious way to use up all those strawberries you need to buy for this!! As a note: I've not made this yet. Several reviewers mentioned that the sauce was too thin, so you might want to read their suggestions prior to making the recipe.

Steps:
- Preheat oven to 375°F.
- Rinse and hull berries.
- Place berries in a 9" square pan and set aside.
- Combine flour, 1/2 Cup sugar, baking powder and salt in a large bowl.
- Use a pastry blender or two knives to cut in margarine until coarse crumbs form.
- Stir in milk.
- Spoon the mixture over the berries.
- Combine the remaining 3/4 Cup sugar and cornstarch in a large bowl.
- Stir in water until sugar mixture dissolves.
- Pour over berry mixture.
- Bake 35-40 minutes or until lightly browned.
- Serve warm or cool, garnished with additional berries.
