1 can (14 ounces) sweetened condensed milk
1/2 cup lime juice
1 carton (8 ounces) frozen whipped topping, thawed
Red food coloring, optional
1 cup fresh raspberries
1 graham cracker crust (9 inches)
Additional fresh raspberries and fresh mint, optional

Steps:

  • In a large bowl, stir together milk and lime juice. Mixture will begin to thicken. Beat in whipped topping and food coloring if desired. Gently fold in raspberries. Spoon into pie crust. Chill. Garnish with additional raspberries and mint if desired.

1-3/4 cups finely crushed gingersnap cookies (about 30 cookies)
1/4 cup sugar
2 tablespoons all-purpose flour
1/3 cup butter, melted
FILLING:
1 package (8 ounces) cream cheese, softened
4 teaspoons grated lime zest
2 tablespoons lime juice
1 cup confectioners' sugar
1 teaspoon vanilla extract
1/2 cup coarsely chopped fresh cilantro
TOPPING:
2 cups fresh strawberries, sliced
2 cups fresh blueberries
2 tablespoons apricot preserves

Steps:

  • Preheat oven to 375°. In a small bowl, mix crushed cookies, sugar and flour; stir in butter. Press onto bottom and up sides of a greased 9-in. pie plate. Bake until set, 8-10 minutes. Cool completely on a wire rack., In a small bowl, beat cream cheese, lime zest and lime juice until blended. Beat in confectioners' sugar and vanilla. Stir in cilantro. Transfer to crust. Refrigerate, covered, until filling is firm, at least 4 hours., Just before serving, arrange berries over pie. In a microwave, warm preserves just until melted. Brush over berries.

4 cups fresh raspberries
1 reduced-fat graham cracker crust (9 inches)

Steps:

  • In a small saucepan, combine the sugar, cornstarch and water until smooth. Bring to a boil, stirring constantly. Cook and stir for 2 minutes or until thickened. During my family trips to Florida, I've had Key lime pie from many restaurants, and each one is different. I wanted to create my own spin on the pie to make it my signature dessert. Whipped egg whites in the filling make it light and mousselike, sweet raspberries balance the tartness, and coconut and cashews amp up the tropical flavor. 3 large egg whites
18 whole graham crackers, crushed (about 2-1/2 cups)
1/2 cup packed brown sugar
1/2 cup unsalted cashews, finely chopped
3/4 cup butter, melted
2 cans (14 ounces each) sweetened condensed milk
3/4 cup Key lime juice
6 large egg yolks
1/4 cup sugar
TOPPINGS:
1 can (13.66 ounces) coconut milk
1 cup heavy whipping cream
1/2 cup confectioners' sugar
1/2 cup seedless raspberry jam
Optional: Fresh raspberries and toasted flaked coconut

  • Place egg whites in a small bowl; let stand at room temperature 30 minutes. Preheat oven to 350°., In a large bowl, mix crushed crackers, brown sugar and cashews; stir in melted butter. 1 ½ cups graham cracker crumbs
6 tablespoons unsalted butter
⅓ cup brown sugar
¼ teaspoon ground cinnamon
4 large egg yolks
8 fluid ounces sweetened condensed milk
2 cups fresh lemon juice
½ cup fresh red raspberries, crushed
2 tablespoons white sugar

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C).
  • Pulse graham cracker crumbs, butter, brown sugar, and cinnamon together in a food processor until well mixed. Press mixture firmly into a 9-inch pie pan.
  • Bake in the preheated oven until golden, about 8 minutes. Remove from the oven and let cool, 15 to 20 minutes. Leave the oven on.
  • Whisk egg yolks and sweetened condensed milk together. Slowly add lemon juice. Continue to rapidly mix until the mixture thickens.
  • Bake in the preheated oven until set, about 12 minutes. Allow the pie to cool to the touch on the counter, 15 to 20 minutes. Refrigerate until very cold, 2 to 3 hours.
  • Meanwhile, mix crushed raspberries and white sugar together in a bowl and allow to sit until pie is ready to serve. Drizzle or spread the raspberry mixture over the pie.

  • Make the pie dough first. The dough can also be made days ahead of time and kept in the freezer.
  • To make the dough, mix together the flour, salt and sugar in a large bowl. Add the cold shortening (I keep my shortening in the freezer for this purpose) and work mixture together with your fingertips until all the shortening has been worked into the dry ingredients.
  • Add the water and mix until a dough forms then wrap up and keep in freezer until ready to use.
  • For the filling, mix together raspberries, lemon juice, cornstarch, sugar and vanilla in bowl. Let sit while you roll out the pie dough.
  • To assemble the pie, preheat the oven to 400 degrees. Take dough out of freezer and slice in half. Place other half back in the freezer. Divide that half into half again and roll out half on a lightly floured surface.
  • Place dough gently in pie dish and prick all over with a fork. Place raspberry filling inside but be sure not to overfill. You may not use all of the filling!
  • Now, take the rest of the dough and roll out thin again. Cut long one-inch wide strips of dough and weave onto the pie.
  • Bake for 40 minutes or until golden brown. Let cool for 30 minutes before slicing.
