This recipe from the Missouri Ozarks represents our area well because so many farms have peach trees. Cobbler is a delicious dessert for picnics and potluck dinners. It can be served cold or warm, and is especially good topped with a generous scoop of vanilla ice cream.

Number Of Ingredients 11

1-1/2 cups plus 2 teaspoons sugar, divided
2 tablespoons cornstarch
1 teaspoon ground cinnamon
1 cup water
8 cups sliced peeled fresh peaches
2 cups self-rising flour
1/2 cup shortening
1/2 cup buttermilk
3 tablespoons butter, melted
1/4 cup packed brown sugar
1 cup chopped pecans

Steps:

  • In a large saucepan, mix 1-1/2 cups sugar, cornstarch and cinnamon. Stir in water until smooth. Add peaches. Bring to a boil over medium heat; cook and stir for 2 minutes or until thickened. Pour into a lightly greased 13x9-in. baking dish; set aside. , In a bowl, combine flour and remaining sugar; cut in shortening until mixture resembles coarse crumbs. Add buttermilk and stir just until moistened. If needed, add additional buttermilk, 1 tablespoon at a time, until dough clings together. Turn onto a floured surface; knead gently 6-8 times. Roll into a 12x8-in. rectangle. , Combine butter, brown sugar and pecans; spread over the dough to within 1/2 in. of edges. Starting with long side, roll up jelly-roll style. Cut into twelve 1-in. pieces. Place on top of the peach mixture. Bake, uncovered, at 400° for 25-30 minutes or until golden brown.

1 cup finely chopped pecans
1/2 cup packed brown sugar
1/2 cup butter or margarine, melted
2 cans (29 oz each) sliced peaches, drained
2 teaspoons prepared cinnamon-sugar
1 cup Original Bisquick™ mix
1 cup granulated sugar
1 cup milk

Steps:

  • Heat oven to 350°F. Spray 13x9-inch pan with cooking spray. In medium bowl, mix cracker crumbs, pecans, brown sugar and butter. Press evenly in bottom of pan.
  • Arrange peaches on crust. Sprinkle with cinnamon-sugar. In medium bowl, mix Bisquick mix, granulated sugar and milk; pour over peaches.
  • Bake 45 to 50 minutes or until golden. Serve warm.

1 1/2 cups sugar
2 tablespoons cornstarch
1 teaspoon ground cinnamon
1 cup water
8 cups sliced fresh peaches (about 5 1/2 pounds)
3 tablespoons butter or 3 tablespoons margarine, melted
1/4 cup firmly packed dark brown sugar
1 cup chopped pecans
2 cups self-rising flour
2 teaspoons sugar
1/2 cup shortening
3/4 cup buttermilk

Steps:

  • Combine first 4 ingredients in a Dutch oven; add peaches.
  • Bring to a boil, and cook 1 minute, stirring often.
  • Remove from heat.
  • Pour into a lightly greased 13x9x2-inch baking dish; set aside.
  • Combine butter, brown sugar, and pecans; set aside.
  • Combine flour and 2 teaspoons.
  • sugar; cut in shortening with a pastry blender until mixture is crumbly.
  • Add buttermilk, stirring just until dry ingredients are moistened.
  • Turn dough out onto a floured surface, and knead 3 or 4 times.
  • Roll dough to a 12x8-inch rectangle; spread with pecan mixture, leaving a 1/2-inch border.
  • Starting with long side, roll up jellyroll fashion.
  • Cut roll into 1/2-inch slices; arrange slices over peach mixture.
  • Bake at 400* for 25 to 30 minutes or until lightly browned.
  • Yield: 12 servings.

Ahhh the wonders of Bisquick!! I got this recipe from my mom, who got it from who knows where cuz she won't tell. We LOVE pralines in the south and these hit our table quite often growing up.

1/3 cup butter, melted
1/3 cup brown sugar, packed
1/3 cup pecans, chopped
2 1/4 cups Bisquick
2/3 cup milk
2 tablespoons sugar

Steps:

  • Heat oven to 425 degrees. Spray sides and bottoms of a muffin pan.
  • Stir together butter, brown sugar and pecans in a small bowl and divide mixture evenly among the muffin cups.
  • Stir Bisquick, milk and sugar in a medium bowl until soft dough forms.
  • Place a spoonful of dough in each muffin cup. Bake for 11-13 minute or until golden brown.
  • Turn pan upside down onto a cookie sheet, and leave the pan upside down so the "praline" can drizzle over the biscuits.
  • Take the pan off and what didn't come out naturally scoop out and put on biscuits. Cool slightly, but serve warm.

1/2 cup butter
2 cups sugar (less if fruit is sweet)
2 cups water
1 1/2 cups pre-sifted self-rising flour
1/2 cup shortening
1/3 cup milk
1 teaspoon cinnamon
2 cups fresh peaches, finely chopped

Steps:

  • Melt butter in a 13 X 9 inch baking dish.
  • Heat sugar and water in medium saucepan until sugar is disolved.
  • Cut shortening into flour until mixture resembles cornmeal.
  • Add milk and stir with fork until dough leaves side of bowl.
  • Turn dough onto lightly floured surface or pastry cloth and knead only until smooth.
  • Roll dough out to form a large rectangle about 1/4 inch thick.
  • Sprinkle cinnamon over the peaches and spread the mixture evenly over the dough.
  • Roll dough up like a jelly roll.
  • Dampen the edge of the dough to seal.
  • Cut the roll into about 16 slices.
  • Place the slices on edge in the pan of melted butter.
  • Carefully pour sugar syrup around the rolls.
  • This will look like too much liquid, but the crust will absorb it.
  • Bake at 325 degrees for 35-40 minutes or until most of the juice has been absorbed.

32 ounces frozen peaches, thawed in refridgerator (sliced)

Steps:

  • Make the topping in a small bowl.
  • cut margarine very small and get soft to room temperature using a serving size spoon like a pastry blender, mix in other ingredients until crumbly (Do it for a few minutes.
  • put aside and come back and do it again several Times.
  • In a bowl place the thawed peaches and sugar and sprinkle with cinnamon.
  • Set aside for a FEW MINUTES.
  • Strain off the excess juice.
  • make the batter ingredients well and pour onto bottom of well greased 9" x 13" metal pan.
  • Arrange the peaches on top of the batter evenly.
  • Sprinkle topping evenly OVER THE TOP.
  • Bake 350 degrees for 70 minutes.
