1-1/2 cups sliced fresh or frozen okra, thawed
3 tablespoons buttermilk
2 tablespoons all-purpose flour
2 tablespoons cornmeal
1/4 teaspoon salt
1/4 teaspoon garlic herb seasoning blend
1/8 teaspoon pepper
Oil for deep-fat frying
Additional salt and pepper, optional

Steps:

  • Pat okra dry with paper towels. Place buttermilk in a shallow bowl. In another shallow bowl, combine the flour, cornmeal, salt, seasoning blend and pepper. Dip okra in buttermilk, then roll in cornmeal mixture., In an electric skillet or deep-fat fryer, heat 1 in. of oil to 375°. Fry okra, a few pieces at a time, for 1-1/2 to 2-1/2 minutes on each side or until golden brown. Drain on paper towels. Season with additional salt and pepper if desired.

Southerners know that fried okra doesn't require much dressing up-when you try to get fancy, you run the risk of losing the true spirit of the dish. The process of frying okra may be simple, but the result is utter perfection-gorgeous, golden-brown nuggets of soft-on-the-inside, crunchy-on-the-outside okra. This fried favorite is also a great way to convince the kids to eat their vegetables. Don't let the summer pass by without making this dish at least once.

2 pounds fresh okra
3/4 cup salt
2 cups plain yellow or white cornmeal
Canola oil

Steps:

  • Cut off and discard tip and stem ends of okra; cut okra crosswise into 1/2-inch-thick slices. Place in a large bowl.
  • Combine 3 qt. water and salt; pour over okra. Soak 30 minutes; drain, rinse well, and drain again. Dredge okra, in batches, in cornmeal.
  • Pour oil to a depth of 2 inches into a Dutch oven; heat to 375ºF. Fry okra, in batches, 4 minutes or until golden. Drain on paper towels. Serve immediately.

1-1 1/2 c fresh cut okra
1 c milk
1/2-1 c self-rising corn meal
1 1/2 Tbsp flour
salt and pepper to taste

Steps:

  • 1. Wash, cut the tops off of the okra. Cut the okra in desired pieces. Let them soak in the cup of milk. Get your oil hot in your skillet. In another bowl mix the corn meal and flour together. You should have more meal than flour. Take your okra from the milk and dip it in the flour/cornmeal mixture. Fry on medium heat until you get them golden brown or as brown as your family likes them. Sprinkle salt and pepper on them and serve.

1 large egg
½ pound okra pods, cut into 1/2-inch slices
1 cup cornmeal
¼ cup all-purpose flour
cooking spray
salt to taste

Steps:

  • Place egg in a shallow dish and beat; gently stir in sliced okra.
  • Combine cornmeal and flour in a gallon-size resealable plastic bag. Drop 5 slices of okra in the cornmeal mixture, zip the bag, and shake. Remove breaded okra to a plate. Repeat with remaining okra slices.
  • Preheat air fryer to 400 degrees F (200 degrees C). Place 1/2 the breaded okra slices in the basket of the air fryer and spray with cooking spray. Cook 4 minutes. Shake the basket and mist okra with cooking spray again. Cook an additional 4 minutes. Shake the basket one last time and cook for 2 minutes. Remove the okra from the basket and salt to taste.
  • Repeat with remaining okra slices.

  • Wash the okras and pat dry using a paper towel. I laid down all the washed okras in a dry paper towel and then pat dry each of them using another paper towel. It is very important that there is no water content left in the okra and it is really dry when we start cutting them.
  • Cut off both the ends of each okra (which includes the thick stem) and slice the okras in round thin slices, keep aside.
  • Fry in medium heat for about 12 minutes or until the okra is lightly fried and the slices are not sticking to each other anymore. Make sure you don't stir the okra in between. As the okra slices gets fried the bright green color would fade, and the slime would evaporate by itself. If you stir in between it will make the dish mushy, so make sure you don't stir the okra until they are fried enough and not sticking anymore.
