Steps:
- In a 15 x 10-inch jelly-role pan melt the butter in a 425 deg F oven.
- Sprinkle the pan with mixture of sugar and cinnamon,.
- In a shallow bowl mix the eggs and orange juice, and dip the bread slices in the mixture until well soaked but not falling apart.
- Arrange close together in the prepared pan.
- Bake at 425 deg F for 20 minutes, or until set.
- With a pancake turner, invert the toast onto serving plates.
- Serve with maple syrup.
- Variations: For Sesame toast, sprinkle melted butter with 2 tablespoons sesame seeds.

- Whisk together eggs, cream, vanilla, cinnamon, nutmeg, and salt in a medium bowl; set aside.
- Place bread in a shallow baking dish large enough to hold bread slices in a single layer. Pour egg mixture over bread; soak 10 minutes. Turn slices over; soak until soaked through, about 10 minutes more.
- Preheat oven to 250 degrees. Place a wire rack on a baking sheet, and set aside. Heat 2 tablespoons butter and 2 tablespoons vegetable oil in a skillet over medium heat. Fry half the bread slices until golden brown, 2 to 3 minutes per side. Transfer to wire rack; place in oven while cooking remaining bread. Wipe skillet, and repeat with remaining butter, oil, and bread. Keep in oven until ready to serve. Serve warm with pure maple syrup, if desired.

This recipe is from Executive Chef Joshua Schwartz of The French Laundry in Yountville, California; one of the best restaurants in the United States (voted #3 in the world). I could not find tomato jam the first time I made the recipe and used seedless raspberry jam, it was outstanding. When I happened upon a jar of tomato jam at a specialty store, I remembered this recipe and purchased it....again outstanding! I guess there is a reason he is one of the top chefs in the world. Note: Adjust milk as needed as different types of bread absorb more or less. I start out with half the mixture and add as needed.

- Make cream cheese and jam sandwiches.
- For batter, beat together eggs, milk, vanilla, cinnamon, brown sugar, salt and nutmeg; Fold in lemon juice, sugar and ginger.
- On griddle or non-stick pan melt butter.
- Dip the top and bottom of the sandwiches in batter and pan fry until golden brown on each side, just like you would when making french toast.
