FRENCH SILK PIE WITHOUT EGGS

French Silk Pie without Eggs image

This is a beautiful, fluffy French silk Pie. Garnishing it with extra whipped cream and chocolate curls makes it fabulous! I recently made one for a pie auction and it sold for $65.00! Yes, it really is that tasty. I've been making this pie by memory for years, so I have no idea of the recipe's origin. For a higher, more impressive pie, whip 1 extra cup of whipping cream and add it to the top of the pie, before garnishing with shaved chocolate.

Time 2h35m

Yield 10

Number Of Ingredients 9

¼ cup white sugar
3 tablespoons cornstarch
1 ½ cups milk
1 cup semisweet chocolate chips
1 teaspoon vanilla extract
2 cups whipping cream
3 tablespoons powdered sugar
2 tablespoons shaved dark chocolate, or to taste
1 (9 inch) baked pie crust

Steps:

  • Mix together sugar and cornstarch in a medium saucepan until well blended. Stir in milk gradually. Turn heat to medium and stir constantly until boiling. Remove from heat.
  • Add chocolate chips and vanilla extract to the hot milk mixture; stir until smooth and chocolate chips have melted. Transfer into a large mixing bowl, cover with plastic wrap, and place on the counter until cooled to room temperature.
  • Meanwhile, combine 2 cups whipping cream and powdered sugar in a large bowl; beat with an electric mixer until soft peaks form.
  • Uncover cooled chocolate mixture and beat with clean beater attachments until light and fluffy. Gently fold 1/2 of the whipped cream mixture into the chocolate mixture, being careful not to overmix. Spoon into pie crust and top with remaining whipped cream. Refrigerate until firm, 2 to 3 hours. Serve.

FRENCH SILK PIE

French Silk Pie image

Delicious, creamy, and decadent French silk pie! This recipe is unique since it requires the eggs to be cooked rather than a traditional French silk pie recipe that uses raw eggs. To make things easier, use a frozen store-bought deep-dish pie crust! Garnish with fresh whipped cream and chocolate curls. Cover remaining pie with plastic wrap and store in the refrigerator for up to 3 days.

Time 2h55m

Yield 8

Number Of Ingredients 9

1 egg, beaten
1 (9 inch) frozen deep-dish pie crust, thawed
⅔ cup white sugar
2 eggs
2 (1 ounce) squares unsweetened chocolate, melted and cooled
1 ½ teaspoons vanilla extract
⅓ cup unsalted butter, at room temperature
1 cup cold heavy whipping cream
3 tablespoons powdered sugar

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C).
  • Brush beaten egg over all surfaces of pie crust, including edges. Prick holes into the bottom and sides of the crust using a fork.
  • Bake in the preheated oven until golden brown, 10 to 15 minutes. Remove from the oven and let cool completely, about 30 minutes.
  • Combine sugar and 2 eggs in a medium saucepan over medium-low heat. Stir continuously, adjusting heat as needed to make sure mixture does not boil or bubble, until it coats the back of a spoon and an instant-read thermometer reads 160 degrees F (70 degrees C), about 10 minutes.
  • Remove mixture from heat and stir in melted chocolate and vanilla extract; allow to cool to lukewarm temperature, 15 to 20 minutes.
  • Beat butter in a separate large bowl using an electric mixer until light and fluffy. Add chocolate mixture and continue to beat on high speed until thick and creamy, about 5 minutes.
  • Beat cold heavy cream in a separate bowl until slightly thick. Add powdered sugar all at once and continue to beat on medium to medium-high speed until stiff peaks form. Fold into chocolate mixture, stirring very gently as to not decrease the volume by stirring too much. Pour into the prepared pie crust and chill in the refrigerator for at least 2 hours before serving.

  • Preheat oven to 350° F. Place chocolate sandwich cookies in a gallon-size zip top bag, close it, and crush with a rolling pin until cookies are ground into coarse crumbs. You can also use a food processor if you have one. P.S. No need to remove the filling!
  • In a small bowl, melt 4 oz of semi-sweet chocolate chips with 4 tbsp unsalted butter in the microwave at 30 second intervals, stirring between each interval, until fully melted and combined. Let cool.
  • With a hand mixer or stand mixer (using the wire whisk attachment) and a large bowl, whip 2.5 cups of heavy cream until frothy and beginning to thicken. Add in 1/3 cup of powdered sugar and 1/2 tsp of vanilla extract. Continue beating until soft peaks form and then beat a bit more until the whipped cream is just beginning to form stiff peaks. Don't overbeat.
  • Roughly divide the whipped cream in half and add half to the chocolate layer mixture we set aside earlier (no need to be too precise!) Fold the cream in gently, taking care to avoid removing too much air. When no streaks remain, pour the chocolate filling over the (cooled) cookie crust. Spread evenly. NOTE: if you want to pipe the whipped cream layer onto your pie, you should reserve a bit more than half the amount of cream to ensure you will have enough for piping.
