Steamed Cod and Mixed Green Peas with Basil Vinaigrette image

Steaming fish on a bed of basil gives it a nice flavor without adding calories. If you have a large bamboo steamer or a multilayer steamer, you can multiply the recipe. (The vinaigrette makes enough for four to six servings.) Halibut also works great with this technique; just steam the fish for three minutes before adding the peas.

1/3 cup extra-virgin olive oil
3 tablespoons fresh lemon juice
1/2 teaspoon sugar
Coarse salt
3 tablespoons chopped fresh basil
6 large basil leaves
1 cod fillet (5 ounces; 1 1/4 inches thick)
Coarse salt
1/2 cup mixed sugar snap peas (halved), snow peas, and English peas (shelled)
1 radish, very thinly sliced
Garnish: small basil leaves

Steps:

  • Make the vinaigrette: Combine oil, lemon juice, sugar, and 1/2 teaspoon salt in a blender or food processor. Add chopped basil, and pulse to combine.
  • Make the fish and peas: Bring 1 inch of water to a boil in a medium saucepan. Remove the center stem from a collapsible steamer basket (or use a bamboo steamer), and line with basil leaves. Place fish on top of basil, and season generously with salt. Set basket in saucepan. Steam, covered, for 2 minutes. Add peas, and steam, covered, until fish is opaque throughout and peas are bright green and tender, about 3 minutes more.
  • Transfer fish and peas to a plate using a spatula. Top with radish, and drizzle with some vinaigrette. Season with salt. Garnish with small basil leaves.

For a quick side dish, combine steamed green beans and boiled new potatoes or kidney beans (rinsed and drained); top with this vinaigrette.

1 1/2 cups firmly packed fresh basil
1/4 cup fresh lemon juice
2 tablespoons Dijon mustard
1/3 cup extra-virgin olive oil

Steps:

  • In a blender, combine basil, lemon juice, 1/2 cup water, and mustard. Blend on high speed until completely smooth. With the motor running, add oil in a steady stream, blending until incorporated; season with salt and pepper to taste.

Sauteed Cod on Snow Peas and Cabbage with Miso Sesame Vinaigrette image

2 tablespoons seasoned rice vinegar
3 tablespoons water
2 tablespoons red or white miso (fermented soybean paste)

1 tablespoon mirin (Japanese sweet rice wine)
2 tablespoons finely grated peeled fresh ginger
4 teaspoons nerigoma (Japanese sesame paste) or well-stirred tahini
3 tablespoons vegetable oil
For cabbage
2 tablespoons vegetable oil
2 garlic cloves, finely chopped
1/2 lb Savoy cabbage, very thinly sliced crosswise
1/2 lb napa cabbage, very thinly sliced crosswise
1/4 lb snow peas, very thinly sliced lengthwise
For fish
2 tablespoons vegetable oil
4 (5-oz) pieces cod fillet (3/4 to 1 inch thick)

Steps:

  • Make vinaigrette:
  • Purée all vinaigrette ingredients in a blender until smooth.
  • Sauté cabbage:
  • Heat oil in a 12-inch nonstick skillet over moderately high heat until hot but not smoking, then sauté garlic until golden, about 30 seconds. Add cabbages and snow peas and sauté until cabbages are wilted and peas are crisp-tender, about 5 minutes. Season with salt and transfer to a bowl, then wipe skillet clean.
  • Cook fish:
  • Heat oil in skillet over high heat until hot but not smoking, then sauté cod, turning once, until golden and just cooked through, about 6 minutes total.
  • Divide cabbage among 4 plates, then top with fish and drizzle with some dressing. Serve remainder on the side.

6 even-sized medium leeks (about 1kg)
350g frozen peas
3 tbsp olive oil
1 tbsp white wine vinegar
1 tsp clear honey
1 tsp Dijon mustard
2 tbsp finely chopped parsley
1 tbsp chopped mint

Steps:

  • Trim the outer leaves from the leeks and cut off the top down to where the leaves split. Cut the leeks into 3-4 chunks, then wash really well to remove any grit. Heat a steamer, add the leeks and cook for 8 mins. Tip in the peas and cook for 2-3 mins more until both are tender.
  • Meanwhile, whisk the oil, vinegar, honey, mustard and seasoning together in a serving bowl to make the vinaigrette. Add the hot vegetables and herbs, and mix well.

This butter sauce is delicious over fresh English Peas. If you can't find fresh, frozen will do...cooked according to package directions;the ones in the steam-fresh bags work well, just eliminate the steaming step in the recipe! Prep time does not include the butter softening time.

3 tablespoons butter, softened
3 tablespoons whipped butter, softened
1 teaspoon orange rind, grated
4 cups English peas, fresh (see intro for frozen)

Steps:

  • Combine the first 4 ingredients in a small bowl, stirring until blended. Set aside.
  • Arrange the fresh peas in a vegetable steamer over boiling water. Cover and steam for 10 to 15 minutes or until the peas are tender. (If using frozen peas, follow package directions!). Remove the peas from the steamer and spread the butter over the peas. Let it melt evenly and stir. Serve immediately.

Steps:

  • Bring a large pan of water to the boil. Whisk the oil with the mustard, honey and vinegar in a large bowl and season.
  • Put the leeks in the water, bring back to the boil, then simmer gently for 1 min. Add the beans and cook for 2 mins, then add the broccoli and simmer everything for 4 mins. Finally, add the peas, bring back to the boil and simmer for 1 min more. Drain really well, then tip into the large bowl and toss through the dressing. Serve straight away.
