FRENCH FARMHOUSE BREAKFAST CAKE
Inspired by the rustic morning treat served in French farmhouses, this simple breakfast cake is the perfect companion for a hot cup of coffee, tea or cocoa!

- Preheat oven to 350 degrees F. Butter and flour a 9-inch round cake pan, then line with parchment paper and butter and flour the paper.
- Sift flour, baking powder, nutmeg and salt in a large bowl.
- Using an electric mixer, cream the butter until it is pale yellow. Add vanilla and sugar; mix until fluffy. Beat in eggs, one at a time. Gradually add the flour, being careful not to over-mix the batter.
- Transfer batter to prepared pan. Tap it on the counter once or twice to shake out any air bubbles.
- Bake until golden and a toothpick inserted in the center comes out clean, about 25-30 minutes.
- Allow the cake to cool in the pan on a wire rack for about 10 minutes, then remove from the pan to continue cooling.
- Once the cake is completely cool, dust with powdered sugar, slice and serve.

SUPER-CRUMB COFFEE CAKE
A soft, tender, easy-to-make coffee cake, heavy on the crumbs!

- Preheat oven to 350°F (177°C). Generously spray a 9-inch springform pan* with cooking spray or grease with butter. Sprinkle the bottom of the pan with 1 Tablespoon of flour and tap out the excess.
- Whisk the flour, sugar, and salt together in a large mixing bowl until combined. Cut in the butter in very small pieces using a pastry blender or mix with a fork until the mixture resembles coarse crumbs. Place 1 cup of the butter/flour mixture in the refrigerator until ready to use in step 4.
- Using a handheld or stand mixer with a paddle attachment, mix the baking powder and baking soda into the remaining flour mixture. Add the room temperature buttermilk, egg, and vanilla and beat on medium speed until smooth. The batter is very thick. Spoon the batter into the prepared springform pan, smoothing the top.
- Add the brown sugar and cinnamon to the reserved flour mixture. Toss with a fork until well blended. Sprinkle the crumbs over the batter, pressingly lightly so they stick.
- Bake the cake until the center is firm and a toothpick inserted in the center comes out clean, about 45-55 minutes. Baking time varies, so begin checking at 45 minutes and don't be alarmed if your cake takes longer. Mine usually takes the full 55 minutes.
- Cool cake for 10 minutes before removing the sides of the springform pan. For neat slices and best flavor, cool cake completely at room temperature before serving.
FRENCH COFFEE CAKE
I got this from an Episcopal Church cookbook on a visit to St. John's/Divine in NYC. The cake is very good and not real sweet.

- Sift flour, soda and baking powder together.
- Cream sugar and margarine together.
- and beat in eggs.
- Add 1/4 of flour mixture and 1/3 of sour cream; continue to alternate.
- and cream until blended.
- Add vanilla.
- Grease and flour loaf pan.
- Combine ingredients, pour 1/3 batter into pan.
- Sprinkle 1/2 filling over batter.
- Add another 1/3 batter and remaining filling.
- Cover with remaining batter.
- Marble with knife.
- Bake at 350F for 45-50 minute Dust with powdered sugar when cool.
- 12 servings.
EASY OVERNIGHT FRENCH TOAST COFFEE CAKE
A simple, overnight coffee cake with flavors of French toast!

- Combine softened butter, pecans, brown sugar, cinnamon, and nutmeg for topping in a bowl. Put into a generously greased fluted tube pan (such as Bundt®).
- Mix milk, pecans, protein powder, eggs, melted butter, sugar, vanilla, cinnamon, and nutmeg in a bowl until combined.
- Arrange bread slices standing up in the pan. Pour wet ingredients over top. Cover and refrigerate, 8 hours to overnight.
- Preheat the oven to 350 degrees F (175 degrees C). Remove coffee cake from the refrigerator and uncover.
- Bake coffee cake in the preheated oven for 1 hour. Remove from the oven and let cool for 10 minutes. Invert cake over a wire rack or serving platter and shake gently to release.

- Grease & Flour a 20' jelly roll pan. Preheat oven to 350 degrees.
- Mix crumb mixture (butter, flour, sugar, vanilla, and cinnamon). Set aside.
- Follow pkg. directions on box for cake mix and pour in jelly roll pan. Bake 20 Minutes, then remove from oven and spread crumbs over warm cake. Bake again for another 20 Minutes. When completely cool, sprinkle with powdered sugar.
