Time 2h50m

Yield 36

Number Of Ingredients 5

3 cups warm water (110 degrees F/45 degrees C)
1 teaspoon white sugar
1 tablespoon active dry yeast
1 tablespoon salt
7 cups all-purpose flour

Steps:

  • Add the sugar and yeast to the warm water and let proof.
  • Stir in 4 cups of flour and beat until smooth. Cover and let rest for 15 minutes.
  • Beat in the salt and then add enough remaining flour to make a stiff dough. Knead until as soft and smooth as a bambino's behind. Turn in a greased bowl, cover, and let double in size. (I put it in the oven with the light on - perfect rising temperature.)
  • Once doubled, punch down and divide into three. Place back in the bowl, cover, and let rise.
  • Once doubled again, punch down and form into three fat "footballs." Grease heavy cookie sheets and sprinkle with corn meal. Place the bread on the sheets, cover with a towel, and let rise.
  • Once risen, mist with water and place in a preheated 450 degrees F (230 degrees C) oven. Mist loaves with water and turn occasionally while they bake. Bread is done when golden brown and sounds hollow when tapped on the bottom.

FLUFFY ITALIAN BREAD

Fluffy Italian Bread image

I found this recipe in Taste of Home Magazine, recipe by Elsie Palmer. I just received my first KitchenAid Mixer for Christmas and couldn't wait to try it on making bread dough and decided to try this recipe, although I only made half, one loaf. Times don't include rising and cooling times.

Time 50m

Yield 2 loaves, 12 serving(s)

Number Of Ingredients 5

1 (1/4 ounce) package active dry yeast (2 1/4 teaspoons)
2 cups warm water (110 to 115 )
1 teaspoon sugar
2 teaspoons salt
5 1/2 cups all-purpose flour

Steps:

  • In a large bowl, dissolve yeast in warm water. Add the sugar, salt and 3 cups flour. Beat on medium speed for 3 minutes. Stir in remaining flour to form a soft dough.
  • Turn onto a floured surface; knead until smooth and elastic, about 6-8 minutes. Place in a greased bowl, turning once to grease the top. Cover and let rise in a warm place until doubled, about 1 hour.
  • Punch dough down. Turn onto a floured surface; divide in half. Shape each portion into a loaf. Place each loaf seam side down on a greased baking sheet. Cover and let rise until doubled, about 30 minutes. With a sharp knife, make four shallow slashes across top of each loaf.
  • Bake at 400° for 20-25 minutes or until golden brown. Remove from pans to wire racks to cool.

SIMPLE CRUSTY BREAD

Simple Crusty Bread image

We thought we'd landed upon the simplest yeast bread recipe in 2007, when Mark Bittman wrote about the no-knead approach of Jim Lahey, owner of Sullivan Street Bakery. It quickly became (and remains) one of our most popular recipes because it made bakery-quality bread a real possibility for home cooks. But then we heard about Jeff Hertzberg, a physician from Minneapolis, who devised a streamlined technique for a crusty loaf of bread. Mix flour, salt, yeast and water. Let it sit a bit, refrigerate it, take some out and let it rise, then bake it. The crusty, full-flavored loaf that results may be the world's easiest yeast bread.

Categories     breads, side dish

Time 3h45m

Yield 4 loaves

Number Of Ingredients 4

1 1/2 tablespoons yeast
1 1/2 tablespoons kosher salt
6 1/2 cups unbleached, all-purpose flour, more for dusting dough
Cornmeal

Steps:

  • In a large bowl or plastic container, mix yeast and salt into 3 cups lukewarm water (about 100 degrees). Stir in flour, mixing until there are no dry patches. Dough will be quite loose. Cover, but not with an airtight lid. Let dough rise at room temperature 2 hours (or up to 5 hours).
  • Bake at this point or refrigerate, covered, for as long as two weeks. When ready to bake, sprinkle a little flour on dough and cut off a grapefruit-size piece with serrated knife. Turn dough in hands to lightly stretch surface, creating a rounded top and a lumpy bottom. Put dough on pizza peel sprinkled with cornmeal; let rest 40 minutes. Repeat with remaining dough or refrigerate it.
  • Place broiler pan on bottom of oven. Place baking stone on middle rack and turn oven to 450 degrees; heat stone at that temperature for 20 minutes.
  • Dust dough with flour, slash top with serrated or very sharp knife three times. Slide onto stone. Pour one cup hot water into broiler pan and shut oven quickly to trap steam. Bake until well browned, about 30 minutes. Cool completely.

  • In a large bowl or bowl of a stand mixer, combine yeast, sugar and warm water. Let stand 5 to 10 minutes or until yeast is foamy.
  • Add 2 cups flour, olive oil and salt. Stir with a wooden spoon or with a dough hook on low speed until a shaggy dough forms. Turn dough out onto a lightly floured surface and knead by hand 10 minutes, adding just enough of the remaining flour until a soft, smooth and elastic dough forms; OR, increase dough hook speed to medium and knead dough in stand mixer 5 minutes, adding just enough of the remaining flour until a soft, smooth and elastic dough forms.
  • Shape dough into a ball; place in an oiled bowl and turn to coat. Cover bowl with plastic wrap and let dough rise 1 hour until doubled.
  • Heat oven to 400°F. Line a baking sheet with parchment paper, a silicone mat or lightly grease the surface with oil or cooking spray. On a lightly floured surface, punch down dough, then carefully shape into a batard/torpedo about 12 inches long. Transfer to prepared baking sheet. Cover with a tea towel and let rise another 20 to 30 minutes until puffy.

  • Add all ingredients to a bowl or bread machine bucket, and knead until very smooth. The dough should completely clear the sides of the bowl, and not seem wet or sticky. Allow to rise in a warm place until doubled in bulk.
  • Divide risen dough into two or three equal pieces (depending on whether you are making baguettes or braids) and roll gently into 10 inch logs. Allow them to rest, covered in greased plastic wrap, about 15 minutes or so. This will make them easier to work with.
  • Pull them out a bit longer, to about 18 inches long. Then begin your braid, or simply shape your loaves.
  • Place the loaf on a baking sheet either prepared with parchment or sprayed with cooking spray. Brush the loaf with the beaten egg. Sprinkle sesame seeds on top, pressing to help them stick.
