Turkey Milanese with Sauteed Haricots Verts and Butternut Squash image

1 pound haricots verts
3 tablespoons olive oil
2 cloves garlic, smashed
Crushed red pepper flakes
1 medium butternut squash, top-half only, peeled and cut into 1/2-inch pieces
1 cinnamon stick
1/2 cup fresh orange juice
Kosher salt
2 tablespoons unsalted butter
1 shallot, sliced into thin rings
1/2 cup dried cranberries
2 tablespoons unsalted butter
2 tablespoons all-purpose flour
2 cups chicken stock
2 links Italian sausage, casings removed
6 cremini mushrooms, thinly sliced
1/2 cup whole milk
6 large eggs
2 cups panko breadcrumbs
2 cups all-purpose flour
3 turkey breast cutlets, pounded to an even thickness
2 tablespoons poultry seasoning, such as Bell's
Kosher salt
Olive oil, for pan frying

Steps:

  • Preheat the oven to 200 degrees F.
  • For the haricots verts: Bring a medium saucepan of salted water to a boil. Add the haricots verts and cook until bright green and crisp-tender, 3 to 4 minutes. Use a slotted spoon to remove to a salted ice bath. Let sit until completely cool. Drain and pat dry. Set aside.
  • For the butternut squash and cranberry stew: Add the squash and cinnamon stick to a large, high-sided skillet. Add the orange juice and water to cover by 1 inch. Season with a large pinch of salt. Bring to a simmer and cook until the squash is just tender and the liquid has reduced some, 10 to 12 minutes.
  • Heat another large, high-sided skillet over medium heat and add the butter. When melted, add the shallots and cook, stirring frequently, until soft and translucent, about 4 minutes. Stir in the cranberries. Add the cooked butternut squash, with liquid, and stir to combine. Add salt to taste. Keep warm.
  • For the sausage veloute: Melt the butter in a medium saucepan over medium-low heat. Add the flour and cook, stirring, until completely absorbed, 1 to 2 minutes. Whisk in the chicken stock, raise the heat to medium and bring to a low simmer. Cook, stirring, until the sauce is thick enough to coat the back of a spoon. Remove from the heat.
  • Meanwhile, heat a medium skillet over medium-high heat. Add the sausage and cook, stirring and breaking it into pieces, until just browned. Stir in mushrooms and cook for 3 minutes. Add the sausage-mushroom mixture to the veloute. Keep warm.
  • For the turkey Milanese: Whisk together the milk and eggs in a medium baking dish, until thoroughly combined. Put the breadcrumbs and the flour each in a separate medium baking dish.
  • Sprinkle the turkey cutlets with the poultry seasoning and some salt. Bread the cutlets using the standard breading procedure: Coat in the flour, shaking off any excess. Then dip in the egg and milk mixture. Next, coat in breadcrumbs, shaking off any excess. Put on a large plate.
  • Heat a 1/4 inch of oil in large, high-sided skillet over medium heat. When the oil is shimmering, add a breaded cutlet and cook until golden brown on both sides and cooked through, 4 to 5 minutes per side. Remove to a rack on a baking sheet and season with salt. Keep warm in the oven. Repeat with the remaining two cutlets.
  • Finish the haricots verts: Heat a medium skillet over medium-high heat. Add the oil and garlic and cook, stirring, until the garlic is fragrant, about 2 minutes. Remove and discard the garlic. Add some crushed red pepper and the cooked haricots verts to the pan and toss to coat in the oil. Cook until heated through. Season to taste with salt.
  • Serve the turkey cutlets with the butternut squash and cranberry stew, the sausage veloute and the haricots verts.

8 ounces haricots verts, trimmed
Extra-virgin olive oil, for cooking
1 shallot, finely diced (brunoise)
4 cremini mushrooms, thinly sliced
Pinch crushed red pepper flakes
1 cup all-purpose flour
Two 6-ounce flounder (or other flatfish) fillets, skin removed
1/4 cup white wine
1 lemon, cut into supremes (segments cut free from pith) and finely chopped (see Cook's Note), plus the zest and juice of 1 lemon
1 tablespoon drained capers
1/2 stick (4 tablespoons) butter, cut into tablespoon-size pats
1/2 cup chicken stock, plus more as needed
Parsley leaves from 6 fresh stems, finely chopped, plus additional for garnish

Steps:

  • Bring a large pot of heavily salted water to a boil. Make an ice bath with salted water.
  • Blanch the haricots verts in the boiling water until tender but still crisp, 3 to 4 minutes. Immediately shock in the ice bath to stop cooking. Drain the excess water and set aside on a sheet tray.
  • Coat a small saute pan with olive oil and add 1 tablespoon of the shallots and some salt (save the remaining shallots for the sauce). Sweat over medium heat until softened and translucent, about 1 minute, then add the mushrooms. Stir and cook until the mushrooms start to soften, 2 minutes more. Add a pinch of salt and the crushed red pepper flakes and continue cooking until golden brown, 2 to 3 minutes. Add the haricots verts to the pan and toss to coat. Taste for seasoning and set aside.
  • Put the flour in a shallow dish. Coat a large skillet with olive oil and heat over medium-high until the skillet is hot. Sprinkle both sides of the fish with salt and dredge in the flour. Gently shake off the excess flour and lay the fish skin-side down in the oil. Cook until the outside edges of the first side turn white and crisp, 2 to 3 minutes, then flip and cook until the fish turns white and opaque, 1 minute more. Remove the fish from the skillet and set aside on plates or a platter.
  • Use a paper towel to carefully wipe out the skillet used to cook the fish. Lower the heat to medium and lightly coat with olive oil. Add the remaining diced shallot with a pinch of salt and sweat until the shallots soften, about 30 seconds. Add the white wine and chopped lemon supremes and cook, stirring often, until it comes to a boil. Add the capers, lemon juice and lemon zest and simmer until the liquid is reduced by half. Add the chicken stock and a pinch of salt and continue to reduce at a simmer by half.
  • Add a pat of butter and cook, swirling the pan, until melted, then add another pat. As the butter melts, swirl the pan to fully incorporate. Continue adding butter, one pat at a time, until the sauce is thickened. (You should need between 3 and 4 pats total.) If the sauce reduces too much, adjust with a small splash of chicken stock to thin it out. Season to taste with salt and stir in the parsley.
  • Arrange the haricots verts and mushrooms next to the fish on plates. Top the fish with the sauce and garnish with a sprinkle of fresh parsley.

BRAISED CHICKEN WITH MUSHROOMS, ALMONDS AND SAUTEED HARICOTS VERTS



Braised Chicken with Mushrooms, Almonds and Sauteed Haricots Verts image

1 cup dried porcini mushrooms
Extra-virgin olive oil
8 chicken thighs
Kosher salt
8 ounces pancetta, cut into 1/2-inch dice
2 large onions, julienned
Pinch crushed red pepper flakes
4 cloves garlic, smashed
2 pounds assorted mushrooms (shiitake, oyster or cremini), cleaned and sliced
2 cups dry white wine
4 to 6 cups chicken stock
1 bundle thyme
4 bay leaves
1/2 cup whole blanched almonds, toasted
Sauteed Haricots Verts, recipe follows
Chopped chives, for garnish
Kosher salt
1/2 pound haricots verts (baby string beans), stem-ends removed
Extra-virgin olive oil
2 cloves garlic, smashed
Pinch crushed red pepper flakes

Steps:

  • Cover the dried porcinis with 2 cups hot water and allow to sit for 30 minutes to reconstitute. Remove from the liquid with a slotted spoon before using.
  • Coat a large, wide, deep pan with olive oil and bring to a high heat. Pat the chicken skin dry with paper towels and season generously with salt. Add the chicken, skin side down, to the pan¿you should hear a big sizzle as the thighs hit the pan. Do not try to move the chicken; the skin will stick itself to the bottom of the pan and will unstick itself when it is ready. If the pan is smoking excessively, turn the burner down and continue cooking. When the skin is brown and crispy, turn the chicken over and brown it on the other side. Remove the chicken from the pan and reserve.
  • Lower the heat if you have not already done so and ditch most of the excess fat from the pan. Add the pancetta, and brown. When the pancetta has started to get brown and crispy, add the onions. Sprinkle with salt and crushed red pepper, and sweat over medium heat for 7 to 8 minutes. Add the garlic and cook for another 1 to 2 minutes. Add the assorted mushrooms, including the porcinis, season with salt and saute until they release their juices, 3 to 4 minutes. Add the white wine and reduce by half. Return the chicken to the pan. Add the chicken stock to almost cover the chicken. Add the thyme and bay leaves. Bring to a boil and reduce to a simmer. Simmer the chicken for 30 to 35 minutes, adding more chicken stock if needed.
  • While the chicken is cooking, puree the almonds in a food processor. With the motor running, drizzle in a little olive oil to make a loose paste. Season with salt and reserve.
  • Once the chicken has cooked for 30 to 35 minutes, remove it from the pan and reserve. Taste the sauce for seasoning and stir in the almond puree. Bring to a boil and reduce to a simmer to thicken the sauce if needed; the almond puree will help to thicken the sauce and will make it very rich.
  • Serve the chicken over sauteed haricots verts. Spoon the mushroom-almond sauce over the top and garnish with chopped chives.
  • Bring a large pot of well-salted water to a boil. Set up a bowl of well-salted ice water for shocking.
  • Add the haricots verts to the boiling water and cook until tender but still toothsome, 5 to 7 minutes. Remove from the boiling water and immediately plunge into the salted ice water. Once the beans are cool, remove them from the water and set aside until ready to use.
  • Coat a large saute pan with olive oil. Add the garlic and the crushed red pepper and bring to a medium-high heat. When the garlic has become golden and very aromatic, remove and discard it¿it has fulfilled its garlic destiny. Add the beans to the pan and saute until hot and coated with oil. Season with salt and serve right away.

ROASTED KABOCHA SQUASH, HARICOTS VERTS, MUSHROOMS AND PEPITAS

4 cups 1/2-inch-diced kabocha squash
Extra-virgin olive oil
1/2 teaspoon ground cinnamon
Crushed red pepper
Kosher salt
1 pound haricots verts, stem end removed
1 pound oyster mushrooms, pulled into bite-size pieces
1/2 cup pepitas (green pumpkin seeds), for garnish
1 bunch fresh chives, finely diced, for garnish

Steps:

  • Preheat the oven to 375 degrees F.
  • In a large bowl, toss the squash with olive oil, cinnamon, crushed red pepper and salt. Put the squash on a sheet tray and put in the oven. Roast the squash until very soft, about 30 minutes.
  • Toss the haricots verts with olive oil, crushed red pepper and salt. Put on a sheet tray and roast in the oven for 15 to 17 minutes. Repeat this process with the mushrooms and roast for 12 to 14 minutes.
  • Place the pepitas on a sheet tray and roast for 7 to 8 minutes.
  • When all the veggies are roasted, combine all them. Garnish with the toasted pepitas and chives.

STUFFED MUSHROOMS

4 ounces pancetta, cut into 1/4-inch dice
2 onions, finely diced
Kosher salt
1 pound cremini mushrooms, cleaned and stems removed, finely chopped and reserved
1 pound cremini mushrooms, cleaned and stems removed, finely chopped and reserved
2 tablespoon finely chopped fresh rosemary
2 cloves garlic, smashed
4 sweet Italian sausage links, casings removed
1/2 cup breadcrumbs
1 to 2 large eggs, lightly whisked

Steps:

  • Preheat the oven to 400 degrees F.
  • Coat a large saute pan with olive oil, add the pancetta, and bring to medium-high heat. Cook the pancetta until it starts to brown and crisp on the edges, 6 to 8 minutes. Add the onions and season with salt. Continue cooking until the onions are soft and aromatic, about 5 minutes. Add the chopped mushroom stems, rosemary and garlic, and cook for another 2 to 3 minutes, stirring frequently. Remove from the heat and place in a mixing bowl to cool.
  • Once cooled, add the sausage and breadcrumbs. Pour in 1 whisked egg and combine. Add another egg if the mixture is still dry.
  • Make a 1- to 2-inch tester patty out of the stuffing mixture. In a small saute pan, heat a bit of oil and cook the patty until it's done. When cool enough, taste your tester patty to make sure it's delicious, if it's not, re-season.
  • When your tester tastes fabulous, generously fill each mushroom cap with the stuffing mixture and arrange them on a rimmed baking sheet. Pour 1/4 to 1/3 cup water into the pan to keep the mushrooms moist. Bake until the filling is cooked through and brown and crispy on the top, 8 to 10 minutes. Transfer to serving platters.

4 cups fresh baby spinach - I used 9oz pkg

Steps:

  • 1.. Dredge fish in flour. Sprinkle with salt and pepper 2. Heat oil in a large nonstick skillet over medium-high heat. Add fish to pan**; cook 1 1/2 minutes on each side or until fish flakes easily when tested with a fork or until desired degree of doneness. 3. Add wine, juice, and capers to pan; cook 1 minute.
