Easy and economical and sure to please all the hillbillies in your family as much as it pleases the hillbillies in our family. Give it a try. If your favorite roadkill is not available you can substitute a nice pork roast.

Yield 1 possum stew, 8-10 serving(s)

Number Of Ingredients 11

Ingredients

5 lbs possum, removed from your high beams, skinned and dressed or 5 lbs pork roast, browned on all sides
1 onion, sliced
1 fennel bulb, sliced
2 garlic cloves, quartered and stuffed into possum
5 lbs potatoes, fingerlings
4 carrots, chunked
4 celery ribs, chunked
salt and pepper
1 bouquet garni
1 1/4 ounces onion soup mix
3 cups water

Steps:

Place all ingredients into the crockpot and set on high for 5 hours and then on low for 5 more hours.
Serve with biscuits or corn bread. Mmmmmm.
