ROASTED RED PEPPER AND GARLIC BEAN DIP

Number Of Ingredients 14

1 head garlic
1 tablespoon olive oil
Kosher salt and freshly ground pepper
One 16-ounce can cannellini beans, rinsed and drained
One 16-ounce can garbanzo beans (chickpeas), rinsed and drained
2 roasted red bell peppers from a jar or grilled, peeled and seeded
2 tablespoons ground cumin
1 tablespoons tahini
Juice of 1/2 lemon
2 teaspoons granulated garlic
2 teaspoons granulated onion
Pinch cayenne pepper (or more as desired)
1/4 cup chicken or vegetable stock
Fresh tortilla chips, for serving

Steps:

  • Preheat the oven to 375 degrees F.
  • Slice off the top 1/3 of the garlic head with a serrated knife, exposing the cloves. Drizzle the oil over the cloves and with some salt. Tightly wrap the head in aluminum foil and transfer it to the oven. Roast until the garlic is very soft and deep golden brown, about 45 minutes. When cool enough to handle, remove 4 cloves for the dip and reserve the rest for another use.
  • Put the cannellini beans, garbanzo beans, roasted peppers, cumin, tahini, lemon juice, granulated garlic, granulated onion, cayenne and the 4 roasted garlic cloves in a food processor and pulse until chunky. While pulsing, slowly add the chicken stock and mix until smooth,
  • Transfer the mixture into a large nonstick skillet over medium-high heat. Cook, stirring, until the mixture begins to bubble, about 5 minutes. Season with salt and pepper. Serve warm or at room temperature with tortilla chips for dipping.

1/4 teaspoon crushed red pepper flakes

Steps:

  • In a food processor add roasted red peppers, cream cheese, garlic, basil, olive oil, paprika, salt, pepper, and crushed red pepper.
  • Blend it all together until it's smooth and creamy.
  • Serve immediately with pita, crackers, tomatoes, snap peas, or carrots.

3/4 c mayonnaise
3 oz roasted red pepper in jar - what i used would be equivalent to 1 whole pepper.
2 clove garlic
1/2 tsp each - salt & pepper or to taste
1/4 tsp thyme, dried
1 Tbsp dried parsley

Steps:

  • 1. Place everything into a food processor and pulse until peppers are finely chopped and garlic is minced. Place in an enclosed container and refrigerate for at least 2 hours before using.

3 red bell peppers, roasted, peeled and seeded
1 teaspoon ground cumin
1 tablespoon fresh cilantro
1/4 cup lemon juice (juice from one lemon)
1 (8 ounce) package cream cheese
1/4 cup sour cream
1/4 teaspoon salt
1/4 teaspoon pepper

Steps:

  • Place the garlic on aluminum foil, coat with the olive oil and wrap tightly.
  • Bake at 400°F for 45 minutes.
  • Remove the skin from the garlic cloves and place garlic in a blender.
  • Add the roasted red peppers and lemon juice and puree.
  • Add the cumin, cilantro, cream cheese, sour cream and blend until well mixed.
  • Add the salt and pepper and mix thoroughly.
  • Pour into a container and refrigerate for at least 1 hour.

2 tablespoons mayonnaise
1 tablespoon sour cream

Steps:

  • Preheat oven to broil.
  • Place the bell peppers on a baking sheet and broil on the top rack of the oven, using tongs to turn them as each side blackens. Place the blackened peppers in a plastic bag, tied loosely with some air inside, for 15 minutes. Remove the stems and peel the peppers. Discard the cores and seeds. Cut peppers into wide strips.

  • Preheat oven to 450°F. Toss peppers with 1/4 cup olive oil in bowl. Transfer peppers to large rimmed baking sheet. Roast peppers until partially charred, turning every 10 minutes, about 50 minutes.
  • Transfer peppers to reserved bowl; cover tightly with plastic wrap. Cool 15 minutes. Peel and seed peppers over bowl. Tear each pepper lengthwise into 6 strips. Transfer pepper strips to heavy large skillet. Strain liquid from bowl into skillet. Add garlic, vinegar, and 2 tablespoons extra-virgin olive oil to skillet. Simmer over medium heat until liquid becomes syrupy, stirring frequently, about 25 minutes. Cool. (Can be made 4 hours ahead. Cover; let stand at room temperature.)
  • Transfer pepper mixture to platter. Sprinkle with parsley and serve.
