HOMEMADE FRENCH ONION DIP

Recipe video above. Classic French Onion Dip - made at home! The key to the amazing flavour base is to cook the onions slowly because they sweeten and caramelise.

3 tbsp butter
2 1/2 cups diced onions ((2 to 3 onions) (brown, yellow or white))
3/4 tsp salt
1/2 tsp black pepper
1/2 tsp onion powder
1/4 tsp cayenne pepper
4 oz / 120 g cream cheese ((cold), cut into cubes)
1/4 cup whole egg mayonnaise
1/2 cup sour cream ((full fat is best, but you can use low fat or even yoghurt))

Steps:

  • Melt the butter in a fry pan over medium heat.
  • Add the onions, salt, pepper, onion powder and cayenne pepper. Cook for 5 minutes, stirring. Then reduce the heat to medium low and cook for 20 to 25 minutes, stirring occasionally. The onions should be sweet and golden. Remove from stove and allow to cool.
  • Place the cream cheese, sour cream and mayo in a bowl, mix until smooth (use microwave in 10 sec bursts if needed to assist)
  • Add the caramelised onions. Mix until just combined. Refrigerate at least 2 hours to allow flavours to develope, overnight is better!
  • Serve at room temperature, garnished with chopped chives if desired. Best served with crinkle cut plain potato chips!

1 can (10 oz each) Ro*Tel® Original Diced Tomatoes & Green Chilies, drained, liquid reserved
1 can (16 oz each) Rosarita® Traditional Refried Beans
1 container (12 oz each) refrigerated guacamole
1 container (16 oz each) sour cream
1 pkg (1.25 oz each) taco seasoning mix
1 cup shredded Cheddar and Monterey Jack cheese blend
1 can (2.25 oz each) sliced ripe olives, drained
1/4 cup sliced green onions
Tortilla chips, optional

Steps:

  • 1. Reserve 1/2 cup drained tomatoes; set aside. Blend remaining tomatoes and reserved liquid with beans in medium bowl.
  • 2. Spread bean mixture in 8x8-inch glass baking dish or round casserole dish. Top with guacamole.
  • 3. Blend together sour cream and seasoning mix in small bowl. Spread over guacamole. Top evenly with layers of cheese, olives, green onions and reserved tomatoes. Chill 2 hours prior to serving. Serve with tortilla chips, if desired.

  • In a small saucepan heat soup mix, tomatoes and chili powder. Bring to a boil.
  • Turn heat down and simmer for 20 minutes, stirring occasionally.
  • To serve, pour into a serving bowl and sprinkle with the cheese. Stir before serving. Serve with chips.

1 can (4 ounces) chopped green chilies or jalapenos
1 envelope fiesta ranch dip mix
2 cups shredded Mexican cheese blend, divided
Sliced ripe olives, chopped, tomatoes, sliced green onions and shredded lettuce, optional
Tortilla chips

Steps:

  • In a shallow 1-1/2-qt. microwave-safe dish, combine the sour cream, beans, chilies and dip mix. Stir in 1 cup cheese. Cover and microwave on high for 2 minutes; stir. , Cover and microwave 1-1/2 minutes longer or until heated through; stir until blended. Sprinkle with remaining cheese. ½ cup water
¾ cup white sugar
6 Spanish onions, thinly sliced
¾ cup mayonnaise
1 tablespoon celery seed
salt and ground black pepper to taste

1 package (8 ounces) cream cheese, softened
1 can (10-3/4 ounces) condensed cream of chicken soup, undiluted
1 can (10 ounces) diced tomatoes and green chilies, undrained
1 jalapeno pepper, finely chopped
4 cups shredded rotisserie chicken
2 cups shredded Mexican cheese blend, divided
1 green onion, thinly sliced
Tortilla or corn chips

Steps:

  • In a large skillet, saute green pepper and onion in oil until tender. Add the chili powder, salt, pepper and cumin; cook 1 minute longer. Remove from the heat and set aside., In a large bowl, beat cream cheese until smooth. Add the soup, tomatoes and jalapeno. Stir in the chicken, 1 cup cheese blend and green pepper mixture.
