GRILLED CHICKEN SANDWICH



Grilled Chicken Sandwich image

These Grilled Chicken Sandwiches are perfect for a hot summer day, served with a fresh salad or grilled veggies!

Number Of Ingredients 10

1 ½ pounds chicken breasts (4 small)
4 sesame seed buns
¼ cup honey mustard sauce* (or mayonnaise)
lettuce, tomatoes, onions (optional)
3 tablespoons vegetable oil
2 tablespoons cider vinegar
1 tablespoon dijon mustard
1 teaspoon garlic powder
1 tablespoon brown sugar
½ teaspoon salt & pepper (each )

Steps:

  • Pound chicken breasts to ½" thickness.
  • Combine all marinade ingredients in a bowl or freezer bag. Add chicken and toss well to combine. Marinade for 30 minutes (or up to 4 hours).
  • Preheat grill to medium-high heat.
  • Place chicken on the grill for 5-6 minutes per side until no pink remains and chicken reaches 165°F.
  • While chicken is grilling, brush buns with olive oil and place face down on the grill. Lightly toast.
  • Spread each bun with honey mustard and add lettuce, tomatoes and onions if desired. Top with chicken and serve.

4 (4 ounce) chicken breast fillets
1 teaspoon ground chili powder
4 slices monterey jack cheese
4 corn tortillas
4 slices avocados
1/2 cup salsa
1 cup chopped tomato
1 cup shredded lettuce

Steps:

  • Sprinkle both sides chicken with chili powder.
  • Grill over medium coals 5 to 6 minutes per side or until tender. Top with Monterey Jack cheese slices; continue grilling until cheese is melted.
  • For each serving, top corn tortillas with chicken, avocado slices, salsa, shredded lettuce and chopped tomatoes.

Tequila and lime seasoned chicken breast topped with Tex-Mex bean salad. Quite tasty. This is great for a summer BBQ. I serve this with grilled corn-on-the-cob.

1 (15 ounce) can black beans, rinsed and drained
1 (15 1/4 ounce) can sweet whole kernel corn, drained
1 (15 ounce) can black-eyed peas
1 small red onion, chopped
1/2 cup chopped green bell pepper
1 (4 1/2 ounce) can diced green chilies
2 tomatoes, diced and drained
1 cup Italian salad dressing
1 1/2 tablespoons chopped fresh cilantro
2 cloves garlic, minced
1/2 teaspoon garlic salt
6 (6 ounce) boneless skinless chicken breasts
3 fresh whole limes
1/3 cup tequila or 1/3 cup apple juice
3 teaspoons paprika
2 teaspoons salt
1 teaspoon pepper
6 romaine lettuce leaves

Steps:

  • Combine all ingredients for Texas Bean Salsa. Cover, and refrigerate 6 hours or overnight.
  • About 45 minutes before serving, place chicken breasts in baking dish. Squeeze lime juice over chicken. Drizzle with tequilla or apple juice. Sprinkle with paprika, salt and black pepper. Cover and marinate 10-60 minutes. Remove from marinade and grill or broil 10-12 minutes, until cooked, turning once.
  • Lay a lettuce leaf on each plate. Place a chicken breast on top of the lettuce leaf, and top each chicken breast with 1/6 of the Texas Bean Salsa. Garnish with additional cilantro leaves and/or lime wedges if desired.

  • Pound Chicken: Lay a chicken thigh on your chopping board and cover with cling film (pinch around edges so no moisture escapes). Use a rolling pin or mallet to pound until even thickness, but not so thin it starts breaking apart. Repeat with remaining thighs.
  • Marinade: In a shallow bowl or the base of a zip lock bag, use a fork to whisk together smoked paprika, onion powder, garlic powder, salt, black pepper, cayenne pepper, lime juice and olive oil. Add in chicken thighs and combine until they're all completely covered with the marinade. Marinate for as long as you have time for (up to overnight). If you're in a rush just rest at room temp as you prep the other ingredients.
  • Grill Chicken: Bring chicken to room temp if marinated in the fridge, then add to a griddle pan over medium high heat. Fry until it begins to char (4-5mins), then flip and continue frying until charred on the second side and piping hot through the centre. Place to one side to rest.
  • Sandwich: Stack the sandwich in the following order - bottom bun, chipotle mayo, lettuce, tomato, bacon, chicken, crispy onions, top bun with more chipotle mayo spread on it. Enjoy!
