Since my mother went to college in California, she introduced the family to artichokes and we all became fans. My baby sister developed this recipe so we could enjoy artichokes out of season. This recipe pairs well with Gallo® Family Vineyards Barrellli Creek Cabernet Sauvignon.-Taste of Home Cooking School

Number Of Ingredients 10

2 tablespoons all-purpose flour, divided
1-1/2 teaspoons salt
1/2 teaspoon paprika
1/4 teaspoon pepper
1 broiler/fryer chicken (3 to 4 pounds), cut-up
6 tablespoons butter, divided
1/4 pound sliced fresh mushrooms
2/3 cup chicken broth
3 tablespoons sherry
1 can (14 ounces) water-packed artichoke hearts, rinsed, drained and quartered

Steps:

  • Combine 1 tablespoon flour, salt, paprika and pepper; sprinkle over chicken. In a large skillet, heat 4 tablespoons butter over medium heat; brown chicken on all sides. Remove chicken to a large baking dish., Melt remaining butter in the same skillet; saute mushrooms until tender. Sprinkle remaining flour over mushrooms; cook and stir until blended. Gradually stir in broth and sherry. Bring to a boil; cook and stir for 2 minutes or until thickened., Arrange artichoke hearts over chicken and top with mushroom sauce. Cover and bake at 375° for 40 minutes or until chicken is tender and juices run clear.

4 boneless skinless chicken breasts
1 teaspoon olive oil
1/2 teaspoon onion powder
1 pinch salt
1 pinch ground black pepper
2 avocados, peeled, pitted and sliced
2 tomatoes, sliced
1 (8 ounce) package monterey jack cheese, cut into 10 slices

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Warm oil in skillet and add chicken and onion.
  • Cook 15 minutes or until chicken is browned and just about done.
  • Add salt and pepper to taste.
  • Place chicken on cookie sheet and top each breast with 1 to 2 slices of tomato and 2 to 3 slices of cheese.
  • Place in oven for 10 to 15 minutes, until cheese melts.
  • Remove from oven, add 2 to 3 slices of avocado on top of each breast, and serve immediately.

1 can (10-3/4 ounces) condensed cream of mushroom soup, undiluted
1/3 cup 2% milk
1 package (16 ounces) frozen California-blend vegetables, thawed
1-1/2 cups cubed cooked chicken
1-1/2 cups shredded Swiss cheese, divided
1 jar (2 ounces) diced pimientos, drained
Salt and pepper to taste
Hot cooked rice

Steps:

  • In a large bowl, combine soup and milk. Stir in the vegetables, chicken, 1-1/4 cups cheese, pimientos, salt and pepper. Transfer to a greased 9-in. square baking dish. , Cover and bake at 350° for 40 minutes. Uncover; top with remaining cheese. Bake 5-10 minutes longer or until bubbly. Let stand for 5 minutes. Serve with rice.

In a pinch, substitute a drained can of diced tomatoes for fresh and any kind of wine for the dry sherry. For light and fluffy couscous, fluff it with a fork and let sit for a few minutes before eating. An easy way to peel an avocado is to halve it lengthwise and remove the pit by striking it firmly with the blade of a knife and twisting slightly to loosen. Then, make a few lengthwise cuts and a few cuts across, making sure not to pierce the skin. Push the avocado inside out and effortlessly knock the cubes of flesh from the skin.

Number Of Ingredients 14

Olive or canola oil spray
1/2 cup couscous
1/2 to 3/4 pound chicken breasts or thighs
1/4 teaspoon freshly ground black pepper
1/2 green bell pepper, cored, seeded, and cut into strips
2 tomatoes, cut into wedges
1/2 cup small pitted ripe olives, sliced
1 firm-ripe avocado, sliced or cubed
1/2 medium onion, chopped
1 teaspoon celery salt
1/4 teaspoon dried marjoram
1/4 teaspoon dried basil
1 tablespoon dry sherry
1 tablespoon fresh lemon juice

Steps:

  • Preheat the oven to 450°F.
  • Spray the inside and lid of a cast-iron Dutch oven with olive or canola oil.
  • Pour the couscous into the pot. Add 1/2 cup water and stir to make an even layer of the grains.
  • Arrange the chicken on top of the couscous and season lightly with pepper.
  • Add the bell pepper, tomatoes, and olives in separate layers, and again season lightly with pepper. Layer the avocado on top of everything.
  • In a small bowl, combine the onion, celery salt, marjoram, basil, sherry, and lemon juice and distribute over the ingredients in the pot.
  • Cover and bake for 45 minutes, or until 3 minutes after the aroma of a fully cooked meal escapes the oven. Serve immediately.

1 large lemon
3 jalapeno peppers (fresh or canned)
1 tablespoon olive oil
1/2 teaspoon salt
1/2 teaspoon white pepper
2 scallions, including green tops,finely chopped
6 tablespoons butter, divided
1 cup blanched slivered almond
1/2 cup dry white wine
1 ripe avocado, cut into 1/2 inch cubes

Steps:

  • Cut chicken into 1/2" strips Peel yellow layer off rind of lemon and chop finely Roll lemon w/ palm of hand and cut in half crosswise Remove pulp and seeds from jalapeno peppers and chop finely Place chicken, lemond rind, juice from lemon, jalapeno peppers, olive oil, salt, pepper and scallions in a bowl Marinate chicken in refrigerator for at least 2 hours Melt 4 tablespoons butter in a skillet over medium heat Increase heat to medium high and add marinated chicken When chicken is done (about 5 minutes), remove to a warm platter Melt remaining 2 tablespoons butter in the same skillet Add almonds to melted butter and saute until golden brown Add white wine to loosen the particles on bottom of pan, heat throughly Pour wine sauce over chicken and garnish with avocado.

2 chicken breasts, split (1 3/4 to 2 lb)
2 teaspoons lemon juice
1 teaspoon dried onion flakes
basil
pepper
2/3 cup shredded cheddar cheese
1/2 small avocado, thinly sliced
4 slices thin tomatoes

Steps:

  • Arrange chicken in square baking dish, sprinkle with lemon juice, onion flakes, basil and pepper.
  • Cook on high in microwave, covered with waxed paper, for 8 1/2 to 9 1/2 minutes or till tender.
  • Top chicken with 1/2 of cheese, avocado, tomato, and remaining cheese.
  • Cook on high 2 1/2 to 3 minutes.
  • Let stand 5 minutes before serving.

CALIFORNIA CHICKEN POCKETS

I found this recipe in a cookbook 25 years ago and have been using it ever since. Everyone in my family loves it and it keeps for several days. It contains avacado, which I leave out. To make the pita pockets easy to fill I microwave them 5 - 10 seconds so they are pliable. Instead of buying a whole package of cheese, I use 2 stick of string cheese. Hope you enjoy.

1 cup cooked chicken breast, chopped
1 cup frozen chopped broccoli
1 avocado, peeled and chopped
1/2 cup rice, cooked
1/2 cup tomatoes, seeded and chopped
1/2 cup mozzarella cheese, shredded (2 oz)
1 egg, hard-cooked and chopped
1/2 cup mayonnaise
1 tablespoon Dijon mustard
1/4 teaspoon celery seed
4 (6 inch) pita pockets, halved

Steps:

  • Cook and drain broccoli.
  • In medium bowl, combine chicken, broccoli, avocado, rice, tomatoes, cheese and egg.
  • In small bowl, stir together mayonnaise, mustard and celery seed. Pour over mixture and toss to coat.
  • Refrigerate for at least 1 hour to blend.
  • To serve, spoon approx 1/2 cup mixture into each pock bread half.
