FIESTA CORN SALAD
We first had this salad at our daughter's home in California. It's wonderful with a meat-and-potatoes dinner, or served for lunch with chunks of French bread.

FIESTA CORN & AVOCADO SALAD
Steps:
- Cook the corn in a large pot of boiling salted water for 5 to 7 minutes, until just tender. Cool for 5 minutes and cut the kernels off the cob, cutting close to the cob with a sharp knife. Place the kernels in a large bowl with the tomatoes, bell pepper, onion, and jalapeno peppers.
- In a small bowl or glass measuring cup, whisk together the lime zest, lime juice, olive oil, garlic, chile powder, 1 teaspoon salt, and 1/2 teaspoon black pepper. Pour the dressing over the vegetables and toss.
- In a separate bowl, gently toss the avocados and lemon juice together, making sure the avocado is coated in lemon juice. Add to the vegetables, sprinkle with 1 teaspoon salt and 1/2 teaspoon black pepper, and carefully fold together without breaking up the avocados. Sprinkle with salt and serve cold or at room temperature.
FIESTA CORNBREAD SALAD
Everytime I serve this its a hit, I have used regular pinto beans and added my own chilies, and I used blacked eyed peas/with jalapeno instead of the pinto beans.

Steps:
- Prepare and bake the cornbread using package directions. Let stand until cool.
- Combine the mayonnaise, sour cream, and dressing mix in a bowl; mix well.
- Toss the tomatoes, bell pepper, and green onions in a bowl.
- Crumble 1/2 of the cornbread into a large salad bowl or rectangular cake pan. Layer with 1 can of the pinto beans, 1/2 of the tomato mixture, 1 cup of the cheese and 1 can of the corn. Spread with 1/2 of the mayonnaise mixture. Repeat the layers with the remaining ingredients. Chill, covered for two hours.

CORNBREAD SALAD
This salad has an amazing flavor. My most requested recipe hands down! The Greek Seasoning add a fantastic flavor. This will be a big hit anytime you serve it. Great for church pot luck! Easily doubles (I've had to quadrouple before)

Steps:
- Prepare Cornbread according to package directions, adding Ranch seasoning and Cavendar's to mix.
- I usually add 3 tablespoon of Cavendar's, but love the flavor and have been known to add more.
- Bake according to package directions, cool.
- (Can be prepared a day ahead) Crumble Cornbread in a large bowl.
- Add bacon, onions, and peppers.
- Stir well.
- Add mayo 1/4 cup at a time until cornbread begins to bind.
- Usually takes 1 cup, may take less.
- Taste and season with salt and pepper.
- Add tomatoes and stir again.
- Taste again adjust for dryness by adding more mayo tablespoons at a time.

- Prepare cornbread batter according to package directions; stir in one can of Mexicorn. Bake according to package directions. Cool and crumble., In a large bowl, combine the crumbled cornbread, tomatoes, green pepper, onion and remaining corn. Add mayonnaise; toss to coat. Sprinkle with bacon. Serve or refrigerate.

- Prepare corn bread mix according to package directions, adding green chiles. Set aside, allow to cool, and crumble.
- Place half of cornbread in bottom of large bowl. Evenly layer with 1 can of beans, 1 cup salad dressing, 1/2 chopped bell pepper, 1 can corn, 1 chopped tomato, 1/2 jar bacon bits, 1/2 package cheese and 1/2 green onions. Repeat layers in same order using remaining ingredients, beginning with crumbled cornbread.

- Mix first 8 ingredients, set aside.
- Heat oil in an 8 or 10 inch cast iron skillet.
- Pour in half the batter.
- Sprinkle with half the cheese.
- Pour in remaining batter.
