2 cloves garlic (minced)
3 tbsp fresh lime juice
1 tbsp extra virgin olive
1 tsp cumin
pinch crushed red pepper flakes
1/2 teaspoon salt
15 oz can black beans (rinsed and drained)
1 cup canned chickpeas (rinsed and drained)
1 cup cherry tomatoes (halved)
1/4 cup minced red onion (finely diced)
1/4 cup cilantro (chopped)
1 medium avocado (diced)

Steps:

  • In a large bowl, combine the garlic, lime juice, oil, cumin, crushed red pepper, and salt.
  • Add the black beans, chickpeas, tomato, onion and cilantro; mix well.
  • When ready to eat, gently mix in avocado and serve right away.

1 (15 ounce) can black beans, rinsed and drained
1 (15 ounce) can garbanzo beans, drained and rinsed
1 cup corn kernels
3 roma (plum) tomatoes, seeded and chopped
½ green bell pepper, chopped
½ cup salsa
⅓ cup chopped fresh cilantro
¼ cup lime juice
1 jalapeno pepper, seeded and minced
1 teaspoon salt
½ teaspoon garlic powder
½ teaspoon ground black pepper
¼ teaspoon ground cumin
¼ teaspoon onion powder

Steps:

  • Mix black beans, garbanzo beans, corn, tomatoes, bell pepper, salsa, cilantro, lime juice, jalapeno pepper, salt, garlic powder, black pepper, cumin, and onion powder together in a bowl.
  • Cover bowl with plastic wrap and refrigerate for 30 minutes.

FRIJOLES DE FIESTA (FIESTA REFRIED BEANS)



Frijoles de Fiesta (Fiesta Refried Beans) image

Fiesta refried beans are a must for quinceañera celebrations in the state of Sonora, and variations can be found in just about every carne asada gathering, taqueria and home. They belong to the category of frijoles maneados, a name that comes from having to constantly use your hands, manos, to stir the pot to get the texture right. Maneados are made with creamy pintos or buttery mayocoba beans that are cooked, mashed and cooked again in lard or oil. As they thicken, melty cheese is added. Fiesta refried beans go a step further by including fresh, dried or pickled chiles, and meats like chorizo. This version gets its peppy flavor from Colorado chiles and its smoke and spice from chipotles in adobo sauce. Salty crumbled Cotija crowns the dish. Aside from being fundamental to Sonoran carne asada tacos, these beans can also be slathered on flour tortillas for burritos, dipped with chips, filled in quesadillas, layered on tortas, scooped next to grilled meats or have eggs sitting over them. They are so accommodating that they end up in almost every Sonoran meal, becoming essential.

1 pound dried pinto beans, rinsed (see Note)
1/2 large white onion
1 tablespoon kosher or sea salt, plus more as needed
4 dried Colorado chiles (also known as California or New Mexico chiles), or guajillo chiles, stemmed and seeded
1 to 2 whole canned chipotles in adobo, plus 1 tablespoon adobo sauce
3 tablespoons vegetable oil or lard
8 ounces asadero, quesadilla, Monterey Jack or Oaxaca cheese, grated (about 2 cups)
1 ounce crumbled Cotija (about 1/4 cup), for garnish

Steps:

  • Place pinto beans in a large pot and cover with 14 cups water. Add the onion and set over high heat. Once it comes to a boil, reduce the heat to medium, skim off any foam that may have risen to the top, partly cover with a lid and cook for 1 hour.
  • Remove the lid, stir in salt, partly cover with the lid, and cook for another 15 to 30 more minutes, until beans are completely cooked through and tender and the liquid is tinted from the pinto beans.
  • Meanwhile, place the dried chiles in a small saucepan, cover with water and set over high heat. Once the liquid comes to a boil, reduce heat to medium and simmer, uncovered, for 10 minutes, until chiles have rehydrated, softened and plumped up.
  • Remove the lid on the beans, and, using a slotted spoon or a pair of tongs, discard the onion.
  • Working in batches if needed, add the cooked beans along with 2 cups of their cooking liquid, the dried chiles, the chipotle chiles and the adobo sauce to a blender or food processor, and pulse until the mixture forms a coarse purée.
  • Heat the oil in a large, heavy casserole or sauté pan set over medium. Once hot but not smoking, carefully add the bean purée, as it will strongly sizzle and splatter. Stir well, incorporating the hot oil into the bean mixture. Cook for 10 to 12 minutes, stirring often and scraping the bottom and sides of the pan as the refried beans continuously attempt to create a crust, until the mixture thickens.
  • Stir in the grated cheese, and continue to cook for another 10 to 15 minutes, stirring frequently and scraping the bottom and the sides, until the mixture thickens to a thick purée that holds its shape, and a clear trail can be traced in the bottom of the pan.
  • When ready to serve, scrape into a bowl and garnish with the crumbled Cotija. Beans will last up to 5 days in the refrigerator. Reheat them in a saucepan or skillet with a couple tablespoons of water over medium and mash as they warm up, since they have a tendency to thicken once chilled.

1/4 cup chopped onion
1/4 cup chopped green chilies, drained
1/4 teaspoon ground cumin
16 Triscuits or other crackers
3/4 cup shredded cheddar cheese
1/2 cup 2% milk
1/3 cup mayonnaise
2 tablespoons beaten egg
Optional: sour cream and sliced ripe olives

Steps:

  • Preheat oven to 350°. In a small bowl, combine the beans, onion, green chilies and cumin. Place eight crackers in an 8x4-in. loaf pan coated with cooking spray. Top with half of the bean mixture; layer with remaining crackers and bean mixture. Sprinkle with cheese., In a small bowl, combine the milk, mayonnaise and egg; pour over cheese. Bake, uncovered, until a thermometer reads 160°, 20-25 minutes. If desired, serve with sour cream and olives.

1 tablespoon onion flakes

1 (15 ounce) can pinto beans, drained and rinsed
1/2 cup chunky salsa
2/3 cup sharp cheddar cheese, grated
2 green onions, thinly sliced

Steps:

  • Position oven rack in upper third of oven.
  • Preheat broiler.
  • Combine refried beans, pinto beans, salsa and 1/3 cup cheese in a medium saucepan.
  • Cook over medium heat, stirring until hot and the cheese is melted.
  • Spoon the hot mixture into a 2 qt baking dish and sprinkle with remaining cheese and top with green onions.
  • Broil until the cheese is melted and lightly browned, about 2 minutes.

2 cans Bush's Grilling Beans-Black Bean Fiesta
1 15 oz. can tomato sauce
2 15 oz. cans Rotel
1 15 oz. can corn (drained)
1/4 cup taco seasoning
3 boneless chicken breasts (uncooked)

Steps:

  • Mix beans, tomato sauce, Rotel, drained corn and taco seasoning in crock pot. Place 3 boneless chicken breasts (uncooked) on top. Cook on low (6-7 hours) or high (3-4 hours). Take chicken breasts out of stew and shred chicken. Place shredded chicken back into stew and allow to soak in the stew for 30 mins. Serve with sour cream & shredded cheese over white rice or mix with rice and use as a filling for burritos.

  • Choose one or two proteins, then sides of choice. See linked recipes for directions (except tortilla chips and grilled corn, see below).
  • Main Taco Filling Selection: The most convenient big batch protein is Pork Carnitas because it freezes great and only requires a quick pan fry to freshen up, and stays good for several hours (tips are in Carnitas recipe notes). The Shredded Chicken and Beef are almost as good (pork is slightly juicier) and stored similarly. The next simplest is Fish Tacos because it's very quick to cook, then just put them in a serving dish and break into chunks with fork. If you want to use one of the chicken recipes to make ahead, use boneless thigh fillets, cook, then keep whole, cover and cool, reserve every drop of leached juice. Before serving, chop/slice, cover and microwave reheat.
  • Taco Fixings: I like to have at least one fresh thing to stuff in tacos (pickled cabbage is my choice in this Fiesta), + a sauce (the Restaurant Style Salsa,) + avocado in some form (guac or slices or in Pico de Gallo) + coriander/cilantro. Chopped white onion is very common in Mexico, and Tex Mex fans such as myself will almost always have sour cream and shredded cheese too!
  • Other Sides: Tortillas + things to stuff in tortillas usually makes for a satisfying meal in itself, but to round things out I usually provide a salad or vegetables of some form. Plain grilled corn is very on theme!
