1 cup rolled oats
2 cups Rice Krispies
2 1/4 cups Fiber One cereal
2 tablespoons flax seeds
1/4 cup oat bran
1/4 cup wheat bran
1/4 teaspoon salt
1/2 teaspoon cinnamon
2 tablespoons peanut butter
1/2 cup corn syrup
15 marshmallows

Steps:

  • Toast rolled oats in a 350°F oven for 15 minutes.
  • Combine peanut butter and corn syrup in a small bowl and warm in a microwave; stir until smooth.
  • When the oats are toasted put all the dry ingredients in a large bowl and stir well.
  • Add the corn syrup and peanut butter mixture, stirring well again.
  • Add the marshmallows, and microwave for one minute.
  • Stir the mixture to combine.
  • Turn out onto a greased 9x13 pan.
  • With greased hands, press the mixture into pan.
  • Allow to cool and cut into bars.

This is a very popular recipe among the Weight Watcher's ranks. Canned pumpkin makes these brownies very moist and high in fiber.

1 box(es) low fat brownie mix
1 can(s) pumpkin

Steps:

  • Use a hand mixer to mix the brownie mix and canned pumpkin together thoroughly in large bowl.
  • Mixture willl be thick. Resist the urge to add water. Spread mixture in a greased 9X13 cake pan. If you desire thicker brownies, spread mixture in a smaller cake pan. I use a rare 7X11 cake pan and cut brownies 3 across and 5 down for a total of 15 brownies.
  • Bake according to pkg directions. Use a toothpick inserted in middle of brownies to test doneness. Toothpick should still be damp, but not caked with wet brownie. If brownies have pulled away from edge of cake pan, they are overdone.
