ORANGE MARMALADE GLAZED HAM

- Let the ham sit at room temperature for 30 minutes to 1 hour. Preheat the oven to 325 degrees F. Trim off any skin from the ham. Score the ham in a diagonal crosshatch pattern (about 1-inch apart) without cutting through into the meat. Place the ham, flat-side down, fattier side up, on a rack in a roasting pan. Pour a 1/2-inch of water in the bottom of the pan. Cover with aluminum foil and roast, about 1 hour. Remove the foil, add more water if the water has dried up and recover loosely with the foil. Continue to bake until the ham reaches 130 degrees F, adding more water if needed to keep the roasting pan from burning, 1 hour to 1 1/2 hours more (about 15 minutes per pound).
- Increase the oven temperature to 400 degrees F. Whisk the marmalade, mustard, brown sugar, vinegar, coriander, ginger, allspice and a generous amount of black pepper in a liquid measuring cup. Spoon off about 1/4 cup of the pan juices from the ham and whisk into the glaze mixture. Brush about half of the glaze all over the ham. Continue to bake, brushing the ham with the glaze twice more until the surface of the ham is caramelized and the internal temperature in the center of the ham reads 140 degrees F on an instant read thermometer, adding more water if the bottom of the pan dries out and begins to burn, 40 to 45 minutes. Transfer the ham to a cutting board or platter and let rest for 20 minutes before slicing. Serve with the rosemary, oranges and any additional glaze on the side.
FESTIVE HAM GLAZE
As long as I can remember, my favorite room's been the kitchen. My glaze dates back to shortly after my husband (of 23 years now) and I were married. My parents were visiting, I cooked a Sunday ham with this glaze-and I've done it that same way from then on. Since my husband made his career in the Air Force, we spent years in the city or living in close quarters. When he retired, we decided to plant roots here where we could experience the daily wonder of God's creation. (The rise and set of the sun, silhouetting the mountains in the distance, is breathtaking.) Our children are 17 and 11.

Wonderful, from Houston Jr. League Stop and Smell the Rosemary. Cooking time will vary, so time given is approximate. You can modify cooking heat/time and use a spiral-sliced ham - save the glaze packet that comes with it for another time.

Steps:
- Preheat oven to 425°F.
- Line a large roasting pan with foil.
- If necessary, trim the rind and fat from the ham, leaving only 1/4" layer of fat.
- Place the ham in the roasting pan.
- Score the ham in a diamond pattern, with a sharp knife.
- Stick one whole clove into the center of each diamond.
- Combine water, sherry and ginger in a small bowl, then pour over ham.
- Bake 5 minutes per pound.
- Combine the marmalade, bourbon and mustard in a small saucepan and cook over medium heat until warm, about 5 minutes.
- Stir occasionally.
- Increase oven temp to 450°F.
- Brush the glaze over the cooked ham, then sprinkle with the brown sugar.
- Bake until ham reaches a rich brown color, about 20 minutes.
- Spoon off the fat from the pan juices.
- Transfer the pan juices to a saucepan, and boil until thick, about 10 minutes or so.
- Serve the ham with the pan juices.

- Preheat the oven to 200°C (180°C fan/400°F/gas mark 6).
- Rinse the gammon in cold water. Pour the cider into a roasting pan, then top up with boiling water to a depth of about 3cm (1in). Place the gammon on a rack that sits above the surface of the liquid, making sure the liquid isn't touching the meat. Wrap a large piece of foil loosely over the meat like a tent, ensuring there is an airtight seal around the edges of the pan but that it doesn't touch the meat (creating a sort of steam balloon around the gammon).
- Bake in the middle of the oven for 50-55 minutes per 1kg (2lb 4oz) of meat. Remove from the oven, remove the foil and rest until cool enough to handle. Snip off the string and use a very sharp knife to slice off the tougher skin without removing any of the fat. Score a criss-cross pattern into the fat at 2cm (¾in) intervals. In a small bowl, mix together the marmalade, honey, mustard and orange juice and generously cover the scored fat with the mixture. Push the cloves, if using, into the scored fat in an intermittent fashion.
- Return the gammon to the oven and bake uncovered for a further 25 minutes or until the glaze is golden. Rest the meat for at least 1 hour before slicing. You can make this a few days ahead of Christmas to lighten the cooking prep on the day-it will keep in the fridge for up to 1-2 weeks.

- Let the ham rest at room temperature for at least 30 to 40 minutes before cooking.
- Preheat the oven to 350 degrees F. Place vegetables in the bottom of a roasting pan.
- Score top of ham into 1'' diamond patterns. Place the ham on a rack in the roasting pan, over the vegetables. Add water to the pan to cover the vegetables. Cover with a lid or a piece of heavy duty aluminum foil.
- Place the pan on the bottom third of the oven and roast until the center of the ham is lukewarm, about 2 hours depending on size. Overall cooking time should take about 15 minutes per pound.
- In the meantime, combine the ingredients for the glaze in a medium saucepan. Whisk constantly over medium low-heat and cook until the mixture becomes syrupy, about 20 minutes. Do not leave the stove as the sweet mixture can easily boil and overflow. Remove from heat.
- When the center of the ham is lukewarm, take the ham out of the oven and baste with juice from the bottom of the pan. Put back in the oven and bake, uncovered, for another 20 minutes.
- Brush the glaze evenly over the ham every 10 minutes for the remaining cooking time, about 40 minutes total.
- Take the ham out of the oven and let rest for 15 minutes. Carve and serve immediately.
