Steps:
- Heat oven 375.
- Spray 6 muffin tins with cooking spray.
- Combine milk, brown sugar blend, sugar substitute and yogurt.
- In seperate bowl combine the dry ingredients
- Add to wet mixture and mix till just combined.
- Divide into muffin tin.
- Bake 20-25 minutes.
- Cool in pan 10 mins and remove to wire rack.
- Store uncovered.

Here's another bread recipe I've played around with while I was dieting. These make great snacks and the kids love 'em, too! Enjoy!

- Preheat oven to 400 degrees.
- Lightly spray muffin tin with non-stick spray (I've found that paper muffin holders do not peel away from these muffins easily).
- Wash and drain blueberries. Set aside. If using frozen blueberries, thaw before using.
- In large bowl, sift flour. Add baking powder and the 1/3 cup Splenda. Mix together.
- In another bowl, mix the Egg Beater egg substitute, apple sauce and milk.
- Combine the wet mixture into the flour mixture. Stir just enough to blend (electric mixers aren't really necessary). Gently fold in the blueberries.
- Pour batter into the prepared muffin tin, filling each cup about 2/3 full. Use the last tablespoon of Splenda to sprinkle on top of each muffin (this adds zero calories and has zero fat) and bake for 17 minutes, or until tops are light brown.
- After baking, allow muffins to cool before removing them from the tin. Please note: 1 serving = 1 muffin. Enjoy!

FAT-FREE/CHOLESTEROL-FREE BRAN MUFFINS
These muffins have no fat but you would never know it, they are extremely moist with lots of flavor --- I have not tryed it as yet but I'm quite sure that Splenda may be used in place of sugar --- you may bake in 6 jumbo muffin tins but baking time will need to be increased.

- Set oven to 350 degrees F (set oven rack to second-lowest position).
- Line 12 regular size muffin tins with paper liners.
- In a medium bowl combine the buttermilk with wheat bran; allow to sit for 10 minutes.
- In a small bowl whisk together the egg whites with molasses, applesauce, mashed banana and vanilla; mix until well combined.
- In a medium bowl combine the flour with sugar, baking powder, salt and cinnamon.
- After the 10 minutes of sitting time add the egg mixture to the bran/buttermilk mixture; mix very well to combine, then add to the flour mixture; mix until just combined.
- Mix in raisins (if using).
- Divide into the muffin tins filling just over threee-quarters full.
- Bake for about 20-22 minutes or until muffins test done.

KITTENCAL'S FAT-FREE BRAN MUFFINS
You won't even be able to tell these are fat free! ---1 cup fresh blueberries or 3/4 cup light raisins may mixed in with the flour mixture and you may reduce the flour 2 tablespoons and add in 2 tablespoons flax --- with the addition of blueberries you will yield 12 muffins

- Preheat oven to 350 degrees F.
- Set oven rack to second-lowest position.
- Generously coat 10 regular-size muffin tins with cooking spray or line with paper liners.
- In a small bowl mix the wheat bran with milk and yogurt; allow to stand for 12-15 minutes, stirring a few times.
- In a large bowl whisk the applesauce with egg, brown sugar and vanilla; mix in the bran mixture until thoroughly combined.
- In a small bowl combine the flour with baking soda, baking powder, salt and cinnamon (then if using mix in the blueberries) add the bran mixture to the dry mixture; using a small spatula fold gently just until combined (fold gently).
- Scoop into muffin tins filling almost full.
- Bake for 20-22 minutes or until muffins test done (these won't take long to bake so watch closely).

These are delicious, healthy and very moist to not have any added fat. i found the graham flour at Wal-Mart, recipe is on the back of the box.

- Preheat oven to 375. Use either paper liners or grease muffin pan with no-stick cooking spray. In first bowl, combine dry ingredients, spices, and brown sugar (break lumps). In 2nd bowl, combine egg whites, yogurt, applesauce and mix. Add wet mixture to flour mixture, stir until moistened. In 3rd bowl, toss blueberries lightly with 2 tablespoons graham flour (helps keep them from sinking to the bottom). Fold blueberries into mix. Pour into prepared muffin tin, bake 20-25 minutes.

FAT-FREE BANANA-PUMPKIN MUFFINS
This is a recipe I made up to make muffins that were fat-free, so just a little more wholesome. Basically, it's a mix of pumpkin bread and banana bread, but without butter or oil. This recipe is good for adapting to those that do not care about it being fat-free. Adding mini chocolate chips makes the muffins sweeter, but still not too unhealthy.

- Preheat the oven to 350 degrees F (175 degrees C). Grease a 12-cup muffin tin with cooking spray.
- Mash bananas in a large bowl. Mix in brown sugar, pumpkin, and egg whites.
- Mix allspice, cinnamon, ginger, cloves, and orange zest together in a small bowl. Set aside 1/2 teaspoon of mixture.
- Combine whole wheat flour, baking soda, salt, and remaining spice mixture in another large bowl. Slowly add banana-pumpkin mixture and mix until completely moistened. Fold in chocolate chips.
- Spoon batter evenly into the prepared muffin tin. Place a pinch of reserved 1/2 teaspoon spice mixture on top of each muffin.
- Bake in the preheated oven until a toothpick inserted into the center of a muffin comes out clean, 35 to 40 minutes. Leave muffins in their tin for 5 minutes before transferring to a wire rack for further cooling.
