SAUSAGE BALLS
Sausage balls are a classic party appetizer for a crowd and they couldn't be simpler--just mix, shape and bake. We've included thinly sliced scallions in our version for subtle onion flavor and a touch of color.

Steps:
- Preheat the oven to 350 degrees F and line 2 baking sheets with parchment.
- Combine the sausage, baking mix and scallions if using in a large bowl and gently knead with your hands until the baking mix is fully incorporated. Add the Cheddar and continue to mix until the cheese is evenly distributed.
- Using a tablespoon to scoop, divide the mixture into walnut-size pieces and shape into balls with your hands. Arrange on the lined baking sheets about 2 inches apart, about 20 balls per baking sheet.
- Bake until the sausage balls are golden brown and cooked through, about 26 minutes. Serve warm or at room temperature.

- In a large bowl, combine sausage, biscuit baking mix and cheese. Form into walnut size balls and place on baking sheets.

AUNT MARJORIE'S SAUSAGE BALLS
I'm posting this for my relatives. Aunt Marjorie was married to my father's brother, Luther. She was an Army nurse during WWII, and boy, could she cook! Her granddaughter Jessica compiled all her recipes into a book, which is where I got this one. These are not good if overcooked. So watch them - don't let them get too...

Steps:
- 1. Preheat oven to 375°. Break sausage up into very small pices before beginning this. Combine all ingredients (have them at room temperature) in a large bowl with your hands. Shape into balls about the size of a large grape - should make about 48 balls. Don't make the balls too big, because they swell a bit when cooking.
- 2. Place the sausage balls on an ungreased baking sheet. Bake at 375° until slightly browned, about 18-20 minutes. Remove from oven and cool. The last time I made them it took 23 minutes. Don't let them get too brown because they will dry out. Store leftovers (if any!) airtight.
AUNT PATS CHEESE BALLS
Steps:
- Cream butter with cheese. Add flour, salt and paprika. Place cut up sausage (cooked) in the middle of cheese balls. Bake at 400° for 12 minutes.
SAUSAGE STUFFING BALLS
This baked sausage ball recipe was given to me by my cousin. They are appetizers, but they also make great meatballs.

Steps:
- Preheat oven to 325 degrees F (165 degrees C).
- In a medium bowl, mix herb-seasoned dry bread stuffing mix with hot water. Gradually mix in pork until blended with the stuffing mix. Stir in onion, celery, egg and baking powder.
- Shape the mixture into 1 inch balls. Place the balls on a large baking sheet, cover with foil and bake in the preheated oven 15 minutes.
- Remove foil. Raise oven temperature to 350 degrees F (175 degrees C). Continue baking 25 minutes, until golden brown.

AUNT POLLY'S SAUSAGE BALLS
I have to make these once or twice during the holidays. I don't know why only during the holidays, because they are good any time of year. They are great cold, but I love to pop a few into the microwave for a few seconds and eat them hot.

Steps:
- 1. Preheat oven to 350*
- 2. Place all ingredients into large mixing bowl. Mix by hand. I use latex gloves and just keep mashing it until I get everything mixed in well. It will be stiff, but you can add a little more milk if you feel you need it to get it all mixed together.
- 3. Roll into 1 inch balls (I wear the gloves for this too. Keeps it from sticking to your hands). Place onto non-stick cookie sheet. They can be placed close together, but not touching because they don't get a lot bigger than the original size.
- 4. Bake for 20 minutes until they start to become brown. Sometimes the bottoms will brown quicker because of the sausage and cheese, but they are just dark, not burnt.
- 5. I usually double this recipe so I can take some to work and leave some for home. Enjoy!
