BUTTERMILK BISCUITS

Buttermilk Biscuits image

Keep this classic recipe for fluffy biscuits: You'll use it over and over.

Provided by Food Network Kitchen

Time 40m

Yield about 8 biscuits

Number Of Ingredients 7

2 cups all-purpose flour, plus more, for dusting
2 teaspoons baking powder
1/4 teaspoon baking soda
1 teaspoon sugar
1 teaspoon fine salt
7 tablespoons cold unsalted butter, sliced
3/4 cup buttermilk, plus more, for brushing

Steps:

  • Preheat the oven to 450 degrees. Line a baking sheet with parchment.
  • Whisk the flour, baking powder, baking soda, sugar and salt together in a medium bowl. Rub 2 tablespoons of the cold butter into the flour with your fingertips until completely absorbed. Work the remaining 5 tablespoons of cold butter into the flour with your fingertips until pea-sized bits of butter remain. Use a rubber spatula to stir the buttermilk into the flour until the mixture comes together into a shaggy dough.
  • Dust a cutting board or work surface with flour and turn the dough out onto it. Pat the dough into a 1/2-inch thick rectangle. Fold dough in thirds, like a letter, and then pat into a 3/4-inch thick rectangle. Cut biscuits out using a 2 1/2-inch round biscuit cutter and put on the prepared baking sheet. Press together the remaining scraps of dough and cut out more biscuits. Brush the biscuit tops with buttermilk.
  • Bake until the tops are lightly browned, about 15 minutes. Cool on the pan at least 5 minutes. Serve warm or at room temperature.

CAROLINA'S BUTTERMILK BISCUITS

Carolina's Buttermilk Biscuits image

This recipe is from an old friend, Carolina, who makes a fabulous biscuit. This is different than my other recipe for buttermilk biscuits because it has the addition of an egg. It has a different taste and texture, but it is equally as good.

Time 20m

Yield 10 biscuits

SHARON'S FLAKY BUTTERMILK BISCUITS

Sharon's Flaky Buttermilk Biscuits image

Recipe courtesy of The Oregonian, haven't tried this yet but the biscuits look good! If you want to give the biscuits a sweet touch, add 1 tablespoon granulated sugar when you combine the dry ingredients. Would be great with sausage gravy.

Categories     Breakfast

Time 35m

Yield 9-12 serving(s)

Number Of Ingredients 6

1/2 cup butter (8 tablespoons, divided) or 1/2 cup margarine (8 tablespoons, divided)
2 cups all-purpose flour
2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
3/4 cup buttermilk

Steps:

  • Preheat oven to 450 degrees. Melt 4 tbl butter in a 8 or 9-inch square baking pan. Set aside.
  • Mix together flour, baking powder, baking soda and salt. Cut in remaining butter until mixture resembles coarse cornmeal.
  • Make a hole in the dry ingredients and add buttermilk all at once. Stir only to moisten and until dough is free from sides of the bowl.
  • Knead gently 10 to 12 times. Do not overknead or biscuits will be tough.
  • Roll out to be about 1 inch thick. Cut with a 2-3 inch round "cookie" cutter that has been dipped in flour. Place biscuits in pan over melted butter, and turn so both sides are coated. Bake 12-15 minutes, serve immediately.

Time 10m

Yield 10-15 biscuits

Number Of Ingredients 7

3 1/2 cups all-purpose flour
4 teaspoons baking powder
3/4 teaspoon salt
1 teaspoon cream of tartar
3 tablespoons sugar
3/4 cup real butter (margarine will work, too, but the taste and texture will be different)
1 1/4 cups buttermilk

Steps:

  • Preheat oven to 450.
  • In a mixing bowl, combine flour, baking powder, salt, cream of tartar, and sugar.
  • Cut butter into pieces, then cut into flour mixture. Real butter is very hard, and I found that it was much easier to use my fingers to squeeze the butter into the flour.
  • When the mixture is well combined and crumbly, make a well in the center and pour in buttermilk.
  • Using a fork, stir, starting at the outside of the bowl and blending inward.
  • Turn dough out onto a floured surface and knead a few times, just until the dough is completely combined and holds together well.
  • With a rolling pin, roll dough out to about 1/2 inch thick. Cut with a biscuit cutter or round cookie cutter.
  • Grease a cookie sheet with crisco and place the biscuits 1-2 inches apart on the sheet and bake at 450 degrees for 10 - 12 minutes.
