BUTTERMILK BISCUITS
Keep this classic recipe for fluffy biscuits: You'll use it over and over.

Steps:
- Preheat the oven to 450 degrees. Line a baking sheet with parchment.
- Whisk the flour, baking powder, baking soda, sugar and salt together in a medium bowl. Rub 2 tablespoons of the cold butter into the flour with your fingertips until completely absorbed. Work the remaining 5 tablespoons of cold butter into the flour with your fingertips until pea-sized bits of butter remain. Use a rubber spatula to stir the buttermilk into the flour until the mixture comes together into a shaggy dough.
- Dust a cutting board or work surface with flour and turn the dough out onto it. Pat the dough into a 1/2-inch thick rectangle. Fold dough in thirds, like a letter, and then pat into a 3/4-inch thick rectangle. Cut biscuits out using a 2 1/2-inch round biscuit cutter and put on the prepared baking sheet. Press together the remaining scraps of dough and cut out more biscuits. Brush the biscuit tops with buttermilk.
- Bake until the tops are lightly browned, about 15 minutes. Cool on the pan at least 5 minutes. Serve warm or at room temperature.
CAROLINA'S BUTTERMILK BISCUITS
This recipe is from an old friend, Carolina, who makes a fabulous biscuit. This is different than my other recipe for buttermilk biscuits because it has the addition of an egg. It has a different taste and texture, but it is equally as good.

Steps:
- Sift dry ingredients together.
- With a pastry blender, cut cold butter into dry ingredients until mixture resembles very coarse breadcrumbs (sort of like fresh bread crumbs).
- Stir buttermilk into beaten egg and add mixture to flour mixture.
- Stir quickly, until dough forms a soft ball.
- Turn onto a lightly floured surface and knead 5 or 6 times.
- Let dough rest for a minute, then roll out to 1/2 inch thickness.
- Cut out biscuits using a 2 1/2-inch biscuit cutter.
- Place biscuits, 1 inch apart, on baking sheet that has been sprayed with Pam.
- Bake at 400°F for 8 to 10 minutes or until golden brown.

- Preheat oven to 450F degrees.
- Sift together first 6 ingredients into large bowl.
- Add butter and rub in with fingertips until mixture resembles coarse meal.
- Add buttermilk and stir until dough forms.
- Turn dough out onto floured surface; knead until smooth, about 8 turns.
- Roll out the dough to 1 inch thickness.
- Using 2 inch diameter biscuit cutter, cut out biscuits.
- Gather scraps and roll out to 1 inch thickness and cut out additional biscuits.
- Transfer biscuits to large ungreased baking sheet.
- Bake until golden, about 12 minutes.
- Serve warm.

SHARON'S FLAKY BUTTERMILK BISCUITS
Recipe courtesy of The Oregonian, haven't tried this yet but the biscuits look good! If you want to give the biscuits a sweet touch, add 1 tablespoon granulated sugar when you combine the dry ingredients. Would be great with sausage gravy.

- Preheat oven to 450 degrees. Melt 4 tbl butter in a 8 or 9-inch square baking pan. Set aside.
- Mix together flour, baking powder, baking soda and salt. Cut in remaining butter until mixture resembles coarse cornmeal.
- Make a hole in the dry ingredients and add buttermilk all at once. Stir only to moisten and until dough is free from sides of the bowl.
- Knead gently 10 to 12 times. Do not overknead or biscuits will be tough.
- Roll out to be about 1 inch thick. Cut with a 2-3 inch round "cookie" cutter that has been dipped in flour. Place biscuits in pan over melted butter, and turn so both sides are coated. Bake 12-15 minutes, serve immediately.

Steps:
- Preheat oven to 450.
- In a mixing bowl, combine flour, baking powder, salt, cream of tartar, and sugar.
- Cut butter into pieces, then cut into flour mixture. Real butter is very hard, and I found that it was much easier to use my fingers to squeeze the butter into the flour.
- When the mixture is well combined and crumbly, make a well in the center and pour in buttermilk.
- Using a fork, stir, starting at the outside of the bowl and blending inward.
- Turn dough out onto a floured surface and knead a few times, just until the dough is completely combined and holds together well.
- With a rolling pin, roll dough out to about 1/2 inch thick. Cut with a biscuit cutter or round cookie cutter.
- Grease a cookie sheet with crisco and place the biscuits 1-2 inches apart on the sheet and bake at 450 degrees for 10 - 12 minutes.
