BOURBON SYRUP
This bourbon syrup, made with sugar, water, and a splash of bourbon, is simple to make and perfect for drizzling atop waffles, pancakes, French toast, even ice cream.

Steps:
- In a medium saucepan over medium heat, stir together the sugar and water, and cook until the liquid just begins to boil. Immediately reduce the heat to medium-low and cook at a very low simmer, stirring constantly, for 2 minutes.
- Remove the saucepan from the heat and slowly pour in the bourbon, stirring carefully so that the mixture doesn't bubble over.
- Return the saucepan to medium-low heat and cook, stirring occasionally, for 3 minutes more. Remove from the heat and let the syrup cool slightly.☞TESTER TIP: Don't expect the syrup to thicken much as it cools. It will stay relatively thin-but delectable!
- Use the syrup immediately or pour into a sealable jar and refrigerate for up to a month. (To reheat, warm in the microwave for 30 to 40 seconds, but watch very closely to prevent an overspill!)

- In a small saucepan, bring sugar and 1/2 cup water to a boil. Cook 5 minutes. Add butter, vanilla, and bourbon. Cook until syrupy, about 5 minutes.
BOURBON SYRUP
This bourbon syrup allows you to sweeten whiskey-based drinks with even more whiskey, or to inject a bit of pure bourbon flavor without adding the straight spirit.

- Pour bourbon into a large sauce pot. Add sugar and a squeeze of lemon juice.
- Bring it up to a simmer and stir until sugar is dissolved.
- Let simmer until most alcohol is cooked out and mixture is reduced by about half.
- Strain out any sediment and let cool to room temperature.
BUTTERED-PECAN FRENCH TOAST WITH BOURBON MAPLE SYRUP
French toast is a very different thing when made with fresh, buttery, eggy brioche-Southern-inspired buttered pecans and bourbon maple syrup take it over the top.

- For the buttered pecans:
- Place a rack in the upper third of the oven and preheat to 350°F.
- Place the pecan pieces on a rimmed baking sheet and toast for 10 to 14 minutes, until fragrant and golden brown. Remove from the oven and reduce the oven temperature to 200°F.
- In a medium sauté pan set over medium heat, melt the butter. Stir in the sugar and salt. Add the pecans and cook, stirring, for 3 to 4 minutes, until the butter is lightly browned. Remove the pan from the heat.
- For the french toast:
- In a medium bowl, whisk together the eggs and milk.
- In a small saucepan set over medium heat, warm the heavy cream for about 3 minutes, until just steaming and remove from the heat.
- In a small bowl, combine the brown sugar, cinnamon, and salt. Add the sugar mixture to the cream and stir just until the sugar is dissolved. Add the cream mixture to the egg and milk mixture. Stir in the vanilla.
- Working with one slice of bread at a time, put a slice into the egg mixture and let it soak for about 15 seconds on each side. Place on a rimmed baking sheet to rest while all the bread is dipped and the pan is heated.
- In a medium nonstick skillet or griddle pan set over medium heat, melt the clarified butter. Place 2 or 3 bread slices into the pan and cook for about 2 minutes per side, until golden brown on each side. Add a bit more butter to the pan after you flip the bread, if needed. Transfer to a heatproof plate or rimmed baking sheet with a wire cooling rack set inside. Cover with a kitchen towel and keep warm in the oven while you cook the rest of the toast. Repeat the cooking process with the remaining bread.
- For the bourbon maple syrup:
- In a small saucepan set over low heat, gently stir together the maple syrup, bourbon, and vanilla until just warmed and well combined.
- To serve, place 2 slices of French toast on each plate. Generously sprinkle with buttered pecans, drizzle with syrup, and dust with confectioners' sugar. Serve immediately.
BOURBON BALSAMIC SYRUP
Consider this a recipe for a classic steak sauce, updated; that's bourbon syrup, made with real ingredients in a flash. Sure, you could buy a sauce at the grocery store, but making it yourself is quicker and tastier. Serve it alongside a grilled rib-eye.

- Put the balsamic vinegar and bourbon in a small nonreactive pan over medium-high heat. Bring to a boil, then immediately lower the heat so the mixture bubbles gently.
- Cook, stirring occasionally, until the liquid reduces to about 1/2 cup, 15 to 20 minutes; it should coat the back of a spoon and will thicken a little more as it cools. Salt to taste, and serve warm or at room temperature.
