Time 45m

Number Of Ingredients 9

1 cup whole wheat pastry flour
½ cup old-fashioned rolled oats
2 teaspoons baking powder
½ teaspoon salt
¼ cup canola oil

  • Whisk flour, oats, baking powder, and salt together in a bowl. Whisk oil and egg together in a separate bowl until smooth; add honey and mix well. Mix oil mixture into flour mixture just until batter is moistened. Sprinkle sugar over figs in a bowl and toss to coat; fold into batter.
  • Transfer batter to the middle of the prepared baking sheet and form into a 7-inch circle.
  • Bake in the preheated oven for 10 minutes. Score the batter into 8 sections and continue baking until scones are cooked through and lightly browned on top, about 20 minutes more. Cut into 8 scones and slide every other scone back from the circle to allow cooling.

CHICKEN WITH BALSAMIC FIG SAUCE

Chicken With Balsamic Fig Sauce image

This is a Cooking Light recipe with slight changes. I love figs for a snack, and was thrilled to find this fabulous chicken recipe using figs. It is also quick compared to cooking chicken in the oven. I'll definitely make this one again. Fancy enough for a dinner party, easy enough for everyday.

  • Sprinkle pork with rosemary, garlic, salt and pepper. Heat a large, oven-safe skillet (I used a cast iron) with olive oil over medium heat. Add pork. Cook pork for 10 minutes, turning halfway to brown each side. Place the skillet in the oven and bake pork in the preheated oven for 30 - 50 minutes or until a meat thermometer registers 145 degrees. Remove pork. Let pork stand for a few minutes before cutting.
  • Meanwhile, add jam to the same skillet. Add vinegar and salt, stir frequently and cook on low heat for 5-8 minutes or until jam has thinned out or until desired consistency.
