PORTOBELLO MUSHROOM BURGER WITH SPICY AVOCADO SAUCE



Portobello Mushroom Burger with Spicy Avocado Sauce image

Even carnivores will give this hearty burger the thumbs up.

4 large portobello mushrooms, stems removed
1 tablespoon olive oil
Coarse salt and ground pepper
1 ripe avocado, pitted, peeled, roughly chopped
1 tablespoon spicy brown mustard
1 tablespoon horseradish
1 tablespoon fresh lime juice
1 jalapeno chile, finely chopped (ribs and seeds removed, for less heat), if desired
4 soft rolls, split horizontally
1 beefsteak tomato, cored and thinly sliced

Steps:

  • Preheat oven to 425 degrees. On a large rimmed baking sheet, toss mushrooms with oil and 2/3 cup water; season with salt and pepper. Arrange stemmed side down; cover loosely with foil. Roast until tender, 30 to 45 minutes.
  • Meanwhile, in a medium mixing bowl, mash avocado with a fork. Stir in mustard, horseradish, and lime juice. Fold in jalapeno season with salt and pepper.
  • Toast rolls. Dividing evenly, layer each bottom half with tomato and portobello, and each top half with avocado mixture.

4 portobello mushrooms, gills removed
2 Tbsp. KRAFT Mango Chipotle Vinaigrette Dressing, divided
4 KRAFT Big Slice Hot Habanero Cheese Slices
4 sourdough sandwich rolls, split
1/4 cup MIRACLE WHIP Light Dressing or KRAFT Light Mayo Reduced Fat Mayonnaise
1 Tbsp. HEINZ Hot & Spicy Ketchup
1/8 tsp. ground red pepper (cayenne)
1 small avocado, thinly sliced
2 plum tomatoes, thinly sliced

Steps:

  • Heat grill to medium-high heat.
  • Brush mushrooms with half the dressing. Grill 4 to 6 min. or until tender, turning and brushing with remaining dressing occasionally.
  • Top mushrooms with cheese and place rolls, cut sides down, on grill grate. Grill 1 min. or until cheese is melted and buns are lightly toasted.
  • Mix MIRACLE WHIP, ketchup and pepper; spread onto bottom halves of rolls. Fill rolls with mushrooms and remaining ingredients.

4 portobello mushroom caps
¼ cup balsamic vinegar
2 tablespoons olive oil
1 teaspoon dried basil
1 teaspoon dried oregano
1 tablespoon minced garlic
salt and pepper to taste
4 (1 ounce) slices provolone cheese

Steps:

  • Place the mushroom caps, smooth side up, in a shallow dish. In a small bowl, whisk together vinegar, oil, basil, oregano, garlic, salt, and pepper. Pour over the mushrooms. Let stand at room temperature for 15 minutes or so, turning twice.
  • Preheat grill for medium-high heat.
  • Brush grate with oil. Place mushrooms on the grill, reserving marinade for basting. Grill for 5 to 8 minutes on each side, or until tender. Brush with marinade frequently. Top with cheese during the last 2 minutes of grilling.
