I used to peel the fruits when making this sauce, but not anymore. The skins help hold the juicy summer fruit together when they are left on.

1 tablespoon cornstarch
1 cup orange juice
1/3 cup honey
1 cup sliced fresh peaches
1 cup sliced fresh plums
Vanilla ice cream

Steps:

  • In a small saucepan, mix cornstarch and orange juice until smooth; stir in honey. Bring to a boil over medium heat; cook and stir until thickened, about 1 minute., Remove from heat; stir in fruit. Serve warm over ice cream. ,

2 tablespoons confectioners' sugar, plus extra for dusting
1 to 2 tablespoons lemon juice
1/2 teaspoon vanilla extract
1/4 teaspoon ground Chinese 5-spice powder
2 ripe mangoes, papayas or pineapple, peeled and cut into 1/2-inch dice
1/2 pint raspberries
4 to 6 kiwis, peeled and cut into thin rounds
2 bananas, peeled and cut into thin rounds
Mint leaves

Steps:

  • Whisk sugar, lemon juice, vanilla, and Chinese 5-spice powder; adjust to taste, adding more or less ingredients. Add mangoes and raspberries and toss together.
  • Just before serving arrange kiwis in a circle on outside edge of each of 4 dessert plates, arrange an inside circle of banana slices overlapping kiwis, leaving a space in center of dessert plate. Spoon macerated raspberries and mangoes in the middle; dust with confectioners' sugar and garnish with mint leaves.

2 cups water
1/4 cup honey
1 star anise
1 cinnamon stick
1 vanilla bean, split
Zest of 1/2 lime
Zest of 1/2 orange
1 stalk lemongrass, trimmed and roughly chopped
2 tablespoons mint leaves, chopped
1/4 cup mango, diced
1/4 cup pineapple, diced
1/4 cup blood (or navel) orange fillets
1/4 cup mamey sapote, diced
1/4 cup Charentais (or other favorite) melon, diced
4 lychees, peeled (substitute as desired)
6 grapes, sliced in half
1/4 cup coconut meat, thinly sliced, toasted and broken into bitesized pieces
2 passion fruit, cut in half crosswise
2 very ripe finger bananas, (or quartered regular bananas), sliced in half, lengthwise
1 star fruit, sliced into 1/4-inch thick slices

Steps:

  • Put all of the above in a saucepan and bring to a simmer. Turn off the heat and set aside 30 minutes. Now strain through a fine mesh strainer and chill the liquid
  • Note: All fruit should be very cool in temperature.
  • Divide all of the prepared fruit except the coconut, passion fruit, banana and star fruit between four chilled bowls. Pour the infusion over the fruit. Now garnish with the passion fruit, banana and star fruit. Serve;

1/2 cup fresh mango cubes
1/2 cup fresh pineapple cubes
1/4 cup Greek yogurt
1 tablespoon shredded unsweetened coconut, plus more for garnish
1 tablespoon orange juice
1 teaspoon maple syrup

Steps:

  • Divide the mango and pineapple into three servings, then place on three of the skewers, alternating the fruit on each. Store in the refrigerator until ready to serve.
  • Mix the yogurt with the coconut, orange juice and maple syrup. Store in the refrigerator until ready to serve. Serve the kebabs garnished with coconut and the yogurt sauce for dipping.

1 tablespoon poppy seed
1 large mango, peeled, cut into 3/4-inch cubes (about 2 cups)
1 medium papaya, skin and seeds removed, cut into 3/4-inch cubes (about 2 cups)
1 medium pineapple, skin, hard eyes, and central core removed, cut into 3/4-inch cubes (about 4 cups)
Flaked coconut or chopped nuts, for garnish
1 (11-ounce can) mandarin oranges, undrained
1/2 cup flat Champagne
1/4 cup sour cream
2 tablespoons honey

Steps:

  • Place the mandarin oranges, with their syrup, in a medium-size saucepan. Add the Champagne and bring to a boil. Reduce the heat and simmer until the mixture has reduced to about 1 cup. Remove from the heat and let cool.
  • Place the cooled mixture in a blender, and process until smooth. Stir in the sour cream, honey, and poppy seeds.
  • Toss the prepared fruit together in a large bowl, and pour the dressing over the fruit. Refrigerate for 1 hour. Decorate the fruit salad with flaked coconut or chopped nuts, and serve.

3 large eggs

2 tablespoons sugar

1 teaspoon vanilla extract
1/4 teaspoon coarse kosher salt
Rum butter sauce:
1/2 cup sugar
6 tablespoons (3/4 stick) unsalted butter, room temperature
1/4 teaspoon coarse kosher salt
3 tablespoons dark rum
Tropical fruit:
2 tablespoons (1/4 stick) unsalted butter
1 cup 3/4-inch cubes peeled fresh pineapple
1/2 vanilla bean, split lengthwise
1/4 cup sugar
1/4 teaspoon coarse kosher salt
2 tablespoons fresh lime juice
1 cup 3/4-inch cubes peeled seeded papaya (from about 1 large)
1 cup 3/4-inch cubes peeled pitted mango (from about 1 large)

Steps:

  • For crepes:
  • Combine all ingredients in blender. Blend until smooth. DO AHEAD: Crepe batter can be made 4 hours ahead. Cover and refrigerate. Reblend before using.
  • Line plate with paper towel or parchment paper. Heat 9-inch-diameter nonstick skillet with 7-inch-diameter bottom over medium heat. Add 2 tablespoons crepe batter to skillet; tilt and swirl skillet to spread batter evenly over bottom. Cook until center of crepe is cooked through and edges are lightly browned, about 1 minute. Run spatula around crepe and invert onto prepared paper-towel-lined plate. Repeat with remaining batter, placing paper towels or parchment paper between crepes. DO AHEAD: Can be made 1 day ahead. Cover and refrigerate.
  • For rum butter sauce:
  • Using electric mixer, beat sugar, butter, and salt in medium bowl until fluffy, about 2 minutes. Gradually add rum and beat until well blended. DO AHEAD: Can be made 1 day ahead. Cover and refrigerate.
  • For tropical fruit:
  • Melt butter in large nonstick skillet over medium-high heat. Add pineapple to skillet and scrape in seeds from vanilla bean; add bean. Add sugar and salt; stir until sugar dissolves and pineapple and pan juices are lightly browned, about 4 minutes. Stir in lime juice. Remove from heat. DO AHEAD: Can be made 2 hours ahead. Let stand at room temperature.
  • Preheat oven to 300°F. Place crepe stack (with paper towels between crepes) on rimmed baking sheet. Cover baking sheet with foil; warm crepes in oven until heated through, about 15 minutes. Place rum butter sauce mixture in small saucepan; heat over medium heat until melted and smooth, stirring occasionally. Rewarm tropical fruit mixture over medium heat, stirring occasionally, about 3 minutes. Stir in papaya and mango.
  • Place 1 crepe on plate, browned side down. Spoon 2 teaspoons rum butter sauce over crepe, then fold crepe into quarters. Repeat with 2 more crepes on same plate. Spoon tropical fruit over. Repeat with remaining crepes, rum butter sauce, and tropical fruit, placing 3 crepes on each of 6 plates. Spoon any remaining rum butter sauce over crepes and serve.

CHICKEN IN TROPICAL FRUIT SAUCE

I found this recipe many years ago and adapted it to what we had on had and honestly, what I could find fairly cheaply. Every single person I have served it to loves it, and I do too! Add different fruits if you wish, just make sure you add softer fruits at the end and just heat through to avoid a broken up mess. Bananas should be just yellow so that they are sweet but hold their shape. The applesauce is supposed to be the chunky type, but I haven't been able to find that in the market in years, so use your own or just use the regular as listed. Boneless chicken thighs taste good here too, no need to use the more expensive boneless breasts. Mangos are good in here too, and any sort of berry is good. Frozen even works, but they are more fragile, so you have to be more careful about how you add them.

1 large banana, sliced
4 boneless chicken breast halves
3/4 cup seedless grapes
1/2 teaspoon garlic powder
1/2 cup berries
2 tablespoons flour
2 tablespoons brown sugar
1 cup unsweetened applesauce
1 teaspoon cinnamon
8 ounces pineapple chunks, undrained

Steps:

  • In a 10 inch skillet, heat 2 Tbls. Butter.
  • Sprinkle chicken with garlic powder and cook in pan until done over medium heat. Remove chicken to plate.
  • In same skillet, melt remaining butter. Stir in flour and cook for 1 minute.
  • Add all other ingredients (if using frozen berries they will add more juices when thawed). Heat to boiling, reduce heat and simmer 1-2 minutes.
  • Serve over chicken that was set aside with cooked rice.
